  • This recipe produces a beautiful bread loaf that can be baked with a crusty or soft exterior. Cut into it and you will reveal tender, slightly chewy bread with a wonderfully tight crumb. It has the delightful weightiness of a rustic round loaf.

    ✨Ingredients✨
    2 + 2/3 cups (375 g) buckwheat flour
    1 ⅓ cups (160 g) corn starch
    ¼ cups (41 g) powdered psyllium husk
    4 tbsp (60 g) cane sugar
    1 ½ tsp (10 g) salt
    2 ¼ tsp (7 g) Instant Yeast
    2 tablespoons olive oil + more for oiling the bowl
    2 ¼ cups (550 g) warm water
    1/3 cup sunflower seeds (pumpkin seeds, walnuts)
    👩‍🍳Instructions:
    ✅Combine well the buckwheat flour, corn starch, powdered psyllium husk, instant yeast, cane sugar, and salt. Whisk about 2 minutes.
    ✅Add the warm water. Stir with a spatula until everything is mixed. All dry ingredients absorb water, and the mixture becomes thick
    ✅Pour 2 tbsp olive oil on top of the dough and knead to combine oil and dough.
    ✅Add sunflower seeds.
    ✅Remove the dough from the mixing bowl and onto a floured surface and form the dough into a round loaf.
    ✅ Place on to parchment lined baking sheet.
    ✅Cover with a clean kitchen towel and rise for 1 hour.
    ✅Then make three or four 1/2” deep slashes in loaf; these slashes will help the bread rise evenly as it bakes.
    🔥 Preheat oven to 205 C (400 F). When the loaf is finished rising, bake for 40-50 minutes, or until the internal temperature of the loaf reaches over 202 degrees (F) OR the crust is brown and a loaf sounds hollow to the touch when you tap it on the top.
    ✅ Allow to cool completely.
    ❗️Measurements Note: All recipes have been developed using weight measurements. Although US volume measurements have been included for your convenience, it is highly encouraged that you weigh your ingredients using a kitchen scale to get the best possible results. Due to the sensitive nature of baking, kitchen scales are proven to yield more accurate and consistent results than measuring cups. Enjoy!

    btw: I used a a bread maker in the "bread without gluten" program 1kg., I've just add al the ingredients and wait. No problems at all. Myabe I'll add little more of salt. But that depends on each one taste. It's a beautiful starting point for start/learning cooking home made free gluten bread 🙂. Greetings from Canary Islands.

    Can we use potatoes starch instead of corn starch
    I also started using Arrowroot starch even healthier
    I want to experiment today on adding Xanthan gum + 1 egg

    Making this at the moment and I am going by weights. I noticed that a measured 1/4 cup of my psyllium weighed only 24g, so I added more to equal the given psyllium quantity's weight of 41g, which turns out was equivalent to a scant half cup of psyllium husk.
    I know that the recipe recommended using ingredient weights for best results, and if I had only measured 1/4 cup of psyllium, husk, perhaps the dough wouldn't have been cohesive enough to hold a nice round shape.
    Anyway, I will proceed with the recipe again and let you know how it turns out.

      Yes, the bread turned out great. It must be super high in fiber. I followed all the ingredients by weight, except for the water and buckwheat flour. Those two I just went by volume measurement.
      Next time I will weigh the flour just to see how close the weight is to the volume.
      Great balanced flavor exactly as written. The raw sunflower seeds get nice and toasty even on the inside and compliment the buckwheat so much!

    Hi, I really love this bread and I want to bake it for my mother. I would have to send it by mail though which would take two days. If I put it in a plastic bread and seal that airtight, how long can I leave it like this before it becomes too hard?
    Edit: also, could I cook it in a pot for extra crunchy crust?

      The sugar feeds the yeast. I just found this recipe and plan to make this. I will experiment with using less sugar myself after the first time I try it the way it is listed here. Good luck!

    This was the most disappointing loaf of bread I have ever made! It had no flavor and the worst thing about it was it turned green! I followed the directions perfectly. Save yourself some disappointment and pass this one up
