  • What is the best superfood? While it may be unnecessary to rank foods or decide which one may be best, buckwheat is at the top of the list!
    Buckwheat is also one of the best fast-growing cover crops for any kind of soil. It makes nutrients more available to plants, and buckwheat is one of the best plants to grow for pollinators like bees!
    1 cup (168 grams) of buckwheat provides:
    Protein 5.7g (balanced amino acid profile)
    Carbohydrates 33g (less once sprouted!)
    Fat - total 1g
    Dietary Fiber 4.5g
    Calories 154.56
    Manganese 34%
    Copper 12%
    Magnesium 21%
    Iron 7%
    Phosphorus 12%
    Zinc 7%
    Selenium 5%
    Buckwheat is also a good source of B vitamins, lutein, zeaxanthan, and quercetin.
    Be sure to soak your buckwheat overnight before cooking for the best nutrient bio-availibility.
    CAUTION: Buckwheat - primarily the leaves and green shoots - contains a chemical called fagopyrin that can cause photosensitivity if consumed in large amounts.
    If you decide to let your sprouts go longer than overnight or choose to eat buckwheat greens - especially if you are fair skinned - you may want to take a look at this research to make sure you are keeping your skin safe:

    I have been laid so low in my health by not only my Lupus disease processes but from all the medicines prescribed to deal with the symptoms as well. I’m now bedridden and topping 500 pounds! I have begun weening myself off medication and already feel better! I’m even able to move around better, although the sheer lack of strength due to atrophy has limited my ability! I love your vids and your work! It’s inspiring! It gives hard cases like me hope! I keep saying, “I ate my way into this, I’ll eat my way out of it!” I’m not thinking eating buckwheat will cure my Lupus, that’s unrealistic, but it can help me with my Type II diabetes & the extra protein will help burn fat & build muscle!       Look up Dr. Brooke Goldner on here. She not only reversed her own severe Lupus nearly 2 decades ago, but has been helping many others reverse Lupus & heaps of other diseases & ailments with her free programme, just using natural supermarket foods. She has a website & has written books too. She’s very inspiring.

      What really helped me the most with my Lupus was the Weston A Price diet.
      It was so amazingly beneficial. Read the book Eat Fat Lose Fat, by Sally Fallon Morrell.

    We have a buckwheat festival in a small city in the province of Quebec, Canada. You are right. It's definitely not a cereal. I use buckwheat flour to make crepes (we call them galette in French). They are very tasty, and there is no need to put suger in them. But I will definitely use the sprouted format.

    I am from Eastern Europe. We traditionally eat lots of buckwheat. Actually there’s buckwheat diet. You loose weight by eating it plus it is really good for you and quite tasty

    This was very inspirational. I used to sprout buckwheat many years ago and make raw sprouted buckwheat parfaits with layers of sprouted buckwheat and fruits and raw cashew cream and little pieces of dates and soaked pumpkin and sunflower seeds. I'm going to make it and start eating it for breakfast again! Thank you 🙏

    The best thing about Buckwheat is its staying power. It was known to be the food of "peasants" who worked the land because of its staying power. Keeps you going all day especially if you farm or do any kind of labour or hard work . Buckwheat cabbage rolls are wonderful. Just add onions sauteed in butter with a bit of pork, or pork fat for the filling. (no need for tomato sauce as with rice .) Or make it into a casserole with the sauteed onions, add mushrooms and cook with chicken or beef broth . Another way I like it is a version of a 'lazy' perogy or casserole - cook up the buckwheat and add the sauteed onions and mix it with cooked pasta shells. Although google says it is a food from Asia it is well known in the Slavik parts of Eu and is a staple grown on the Cdn prairies as well as US . Buckwheat makes great pancakes - eat with sour cream like potato pancakes. Makes great bread too.

      @@decathlete2000 she soaks it in water first. Remember in the old days, there was a thing called yogi-breakfast? At least when I was young and doing those things 😅. You would soak whole-wheat berries overnight and then add grated apple in the morning for breakfast. I used to add grated coconut to mine too. I figure the soaked buckwheat will taste the same. Haven’t tried it yet tho. I use mine as a rice replacement, both the Russian one (which is pre-roasted) and the ordinary one. Since I’m from Trinidad and we eat lots of ochroes/okra, I rather like the slightly slimy taste, so I often cook it as you would a pilaf, together with the vegetables and maybe some chicken.

    I have just found out I LOVE buckwheat, so I planted some in my yard by tossing seeds before a spring rainstorm. Now there’s lots sprouting up, looking forward to the whole cycle, and I understand it’s easy to harvest. Thanks for such an informative video.

    Thankyou for this great video. I'm a daily buckwheat sprouter and eater myself and appreciate learning a couple of new things. Also if you or anyone is interested there is a very strong anti cancer link with buckwheat consumption pioneered by Dr. Wolf Laskin(russian doctor back in the day I think) based on eating almost exclusively buckwheat which met with a lot of success.
    I thought I would mention that you can also eat this uncooked which is my prefered way. I make a simple porridge everyday with raw sprouted buckwheat, apple, banana blended and then a few grapes a mandarin and pulsed almonds thrown on top.

      @@livefreeallways Hey friend, Exact recipe and instructions are as follows, do it like this and it will taste good. %100 Raw and sprouted for maximum nutrients and health benefits. When you sprout it all the vitamins and minerals increase a lot along with the anti cancer effect compared to unsprouted buckwheat. Any type of buckwheat is good but sprouted buckwheat is KING :)
      Step 1. Soak 1 cup of RAW buckwheat overnight in glass of water and then rinse and let sprout for a day.
      Step 2. Rinse buckwheat and add the 1 cup sprouted buckwheat, 1 banana, 1 apple and 1 or 2 Tablespoons of water to a blender and blend this until its completely smooth(It tastes better if it's not too runny). Put this mixture into your bowl, it's the base porridge.
      Step 3. Pulse 1.5 Tablespoons of Almonds in blender and sprinkle on top of porridge.
      Step 4. Peel and chop 1 mandarin. Add chopped mandarin and 10 whole grapes on top of porridge.
      This is the exact way I do it everyday and it tastes good if you use the measurements and quantities I describe. You can play around with it with other fruit etc. but this works awesome and is very cheap too. I've tweaked this over a long period of time, you need to blend the apple and banana with the buckwheat sprouts to make it into a sweet porridge otherwise the raw buckwheat is just too harsh to eat. The almonds add a kind of crunch to it and the grapes and mandarin are the icing on top. Combined in this way it's delicious. If you do it everyday it just becomes an ongoing system and it's easy.

    The best thing about buckwheat is that you can use for all kind of gluten free baking, bread included. Practically the only gluten free flour that can used as a single source of dry ingredients.

    I'm sending this off to my 3 young women. Daughter I-L is anti gluten, dairy, eggs. I don't know how she eats. One daughter is expecting 2nd baby in the new year. The other wants to stay healthy. I'll put some blueberries in her pancakes. This should "buck" us all up! I'm a Colon cancer survivor of 10 years, and fiber is my wonder friend. Just diagnosed with parkinsons 6 months ago. I know I'm missing a lot of nutrients! My son will hunt down some bw honey. Thank you for this great information.❤

    I discovered buckwheat (mainly in the form of bread) last year when I went gluten free. Initially I wasn't crazy about it but it gradually grew on my and I now cannot do without it. I found several types of bread I love, buckwheat pasta is great, deserts are amazing and the list goes on. I feel nourished after eating it and now after your wonderful explanations I understand why. I didn't realize it was so nutritious but my body knew. Thank you so much for this video. Sprouting it sounds great and fun so will try it out soon!

    Thank you so much, this is very informative. i spent a lot of time with my southern, elder family members. I used to eat buckwheat pancakes with a little molasses. Since I've been cutting starches I have rarely eaten buckwheat in any form because I erroneously associated it with wheat. but I've been CRAVING it like crazy. Now I understand why. It's the nutrition my body is craving.

    Grew up eating buckwheat as my maternal grandparents came from eastern Europe. Let's face it, by itself buckwheat is tasteless. My mother taught me how to cook it. Save your chicken drippings. Fry the buckwheat in a pan with the chicken drippings until it turns a reddish color and absorbs all the chicken drippings. I sometimes throw in a shot of olive oil. Then boil in water until done. I also have substituted bacon fat with good results.

    I was eating buckwheat cereal for some years, and also groats for some years occasionally for all the wonderful reasons mentioned. The problem started to happen in the fall of 2021, when I was getting some intestinal symptoms. Buckwheat is VERY HIGH in oxalates, and not only do oxalates cause kidney stones, but also the crystals from oxalic acid deposit in the whole body, including urinal tract (bladder and intestines). The agony I went through to try and clear this out was something I hope no one ever has to go through, but apparently many do include me. Look into Sally K Norton's videos, she will break it down. BTW, Brown rice is high as well (yes, the "healthy alternative to simple carbs). Almond are VERY HIGH also (I was an almond milk guy).

      I'm wondering if people like you who have this awful experience with oxalates drink/drank a lot of water. I heard someone quote a urologist they'd gone to, saying he'd be out of a job if people drank enough water. In general, I'm wondering if people with these experiences had eaten these same foods every day for a really long time. One answer (along with drinking a lot more water) may be eating more of a variety of foods.

I was looking for a way to revive my front garden at a new house because I had no idea what was in the soil or not and I was going to just throw it all away and start with fresh stuff but it sounds like buckwheat will cure all my negativities about it and I can start growing healthy stuff in a year.

    I watched this video a week ago. I ordered some from amazon, (toasted style) and tried it tonight. Ive never had it. It is really good! I like the texture and the nuttiness in the flavor. its better than quinoa or cous cous or rice in my opinion. Thank you , lady.

    Thank you very much for your video. It was very nice. I usually start my morning with two or three big buckwheat pancakes and after I eat them, I don’t even need to eat lunch all day until later at night. Sometimes I eat buckwheat cereal, Pocono, which is organic and the same thing don’t need to eat lunch you’re right it’s really good for you. Been eating it for a long time now.

    PLEASE tell people if you are serving them buckwheat sprouts or or cooking with the flour or serving multigrain chips, etc. My brother is highly allergic (his throat closes up). Home cooks and chefs enjoy being creative. Just know what you are serving. Companies are adding it to crackers, chips, and breads to brag that they are "multigrain." Some companies are filling pillows with buckwheat. Now he has to be careful about pillows! Thanks for considering this.

    Try roasted buckwheat from Ukrainian or Russian store, it will open your eyes on proper buckwheat. No need to drain no syrups just nice firm buckwheat.

      I am gluten free as well, and grain-like seeds such as quinoa, buckwheat and amaranth are real life savers!

    I've just bought some! It's hard these days to find good foods! Germinated buckwheet sounds relatively perfect! Doesn't take too long to cook, doesn't cost too much and full of nutrients. I need to start a good diet and get healthy like I used to be! Life can be very hard and so it can be hard to stay healthy. I used to glow!!! 😞 and I want to get back to that, but I need to lose about 35lbs and it scares me because it is so hard but I need to start doing it again.

    I love buckwheat, aka kasha, and I even mix some in with my senior dogs food. I get mine from the Eastern European grocery, and prefer the pre portioned serving packs.

    kasha (buckwheat) is a staple in my life for decades. I buy toasted bw because it's delicious. Tp sprout bw, I think it should be untoasted. I'm looking forward to sprouting it, which never occurred to me. Thank you!

    Ahoy!... i periodically grow microgreen sunflower and brocoli for their yummy benifits and taste but never thought of buckwheat ...also sounds like i could replace the cereals i put in my "Bugwig" breakfeast which i make with my own super yogurt with buckwheat soaked overnight in fridge perhaps.....( another experiment to test out Mouhou hahaha) so yes this was a nice randomly recommended video i got this morning and i am thankful and grateful... i see your a musician ...i am a Singer... how cool is that! :)

    Beautiful Carisa, you have motivated me to move on to sprouting grains which I find myself always making excuses and busy, for no reason not sprouting but I do sprout for my chickens sometimes (the wild bird seed mixes that I buy them, lakes makes thick,tall, Hardy greens which is silly, I need to do it for myself and my son to integrate to our diet what a great video for core health keys.       @@CreativeConsciousLiving a lot of cities in America since the covid thing have changed their laws allowing chickens to be in the backyards my little city north of Phoenix which is a prominent wealthy area actually legalized it all across the city after many years of people complaining due to the cost of eggs and obvious inflation in the world so good luck to you maybe you can learn they can even be left in a mud room in the back of a house in a cage to be lit out carefully and manage without a huge muddy dirty farm.

      It's considered a grain-like seed, not an actual cereal grain, if that makes a difference. It feels very different to me in my system than cereals do. I particularly like that it feels so light energetically and perfect for summer salads.

      keep in mind that most of the store buckwheat will not be able to sprout because it was already socked and rosted ... fewer brands produce buckwheat that is not rosted... luckuly rosting buckwhat makes it taste better and is higher in nutrients ... for sprouting rye is best than any..

    You can use those sprouts as-is in a savory salad. If you have a dehydrator you can dehydrated sprouted buckwheat to use as a cereal like Grape Nuts or a topper of smoothie bowls.
