  • This easy recipe of fluffy buckwheat pancakes takes only 10 minutes to prepare, which makes it a perfect quick healthy breakfast. It's made with buckweat flour and without eggs, so these pancakes are also vegan and gluten-free. Buckwheat flour is extremely nutritious on its own, but if you want to add even more nutrition, you can add any nuts, seeds or dry fruits of your choice. The written recipe is in the description below.

    I followed this recipe, but since I made my own buckwheat flour I ended up with super thick butter for cookies instead pancakes 😖 Was tempted to throw it away but decided to bake instead, cookies came out crispy on the outside and chewy on the inside, I actually liked it! 🤭

    Ingredients (9 pancakes):
    buckwheat flour - 1 cup
    milk (for vegans: can be replaced with any non-diary milk, like banana milk or almond milk) - 1 cup
    1 ripe banana or 1 cup apple sauce
    1 tbsp of melted coconut oil
    1 tsp natural baking soda
    1/2 tsp cinnamon
    any nuts or seeds of choice - a handful

    I just made these for breakfast this morning-
    They are FANTASTIC! They’re the best ones I’ve ever made, completely delicious! I had to halve the quantities (still worked like dream) because I was only cooking for me- a big shame because I’d love to have shared with friends or family! Never mind, next time when this lockdown is over.
    Btw-Lovely presentation and lm looking forward to watching some more of your videos.

    🙂 Well I follow a lot of YT cooking pages. Always think "I will do that this weekend". I never do. This is the first recipe where I made the effort to buy buckwheat flour. Must admit then left it a few weeks (most weekends hangover and cannot be bothered). Finally tried it. It was delicious. I did add more milk to the second batch and that was a mistake in hindsight, and next time I will blend to have a smooth batter (rather than chunks of banana). I feel lighter after eating it, so guessing buckwheat must be better for digestion that wheat. Thank you for a lovely recipe. Edit: I used vanilla almond milk as the liquid.

    • @HappyBellyfish
      @HappyBellyfish  3 ปีที่แล้ว +2

      Thank you so much for your detailed comment! Yes, you are right, buckwheat is much easier for digestino, and is often recommended for athletes and people who are unwell - beacuse it's easy on the stomach, but still gives LOTS of energy ;) Enjoy!

    Nice video. Beautiful presence. Unfortunately these pancakes did not come out well for me. Is it my geographic location? Or perhaps because I used avocado oil instead of coconut because we have to watch our saturated fat-side note, I get very annoyed with all the claims of healthy when there are a lot of coconut ingredients. Coconut is very high in saturated fat.

    Hello, these look delicious! Our buckwheat flour looks very brown in color compared to yours, which looks more like the color of wheat flour. Can we use our brown colored one? Or would that have a different flavor and consistency? Thanks very much!

    • @HappyBellyfish
      @HappyBellyfish  4 ปีที่แล้ว +1

      The color on the video is not 100% accurate because of the camera and the light. Buckwheat flour is always slightly brown, in fact even darker than wheat flour. It can never be white. So I guess you have the right one!
