I love PLANTIFUL KIKI and HIGH CARB HANNAH on TH-cam for plant based recipes also. They make it really easy to eat and live this way.
Replace the eggs with a small block of blitzed silken tofu and use a good quality plant based yoghurt and plant based feta and it’s good for vegans too!

Only coz as I watched I was thinking it sounds like a 3,3,3, type of dish, where every ingredient (almost) is 3 . Looks good though, that’s for sure. Oops, just watched it again. I’m wrong. It is 3 tins tomatoes then fill two tins with water. Otherwise 3 of sweet potato , 3 mushrooms , etc
This works really well just as described and is delicious. One minor point, it is not strictly vegetarian as the tapenade contains anchovies. I substituted basil pesto which worked well.
Came back to say I made this and it’s AMAZING! I’m not vegetarian but I was curious about it and WOW! You don’t miss any meat but you could add chicken if you wanted to, but it really doesn’t need it. I also didn’t add the olive tapenade because I just didn’t have any nor did I add mushrooms because my husband doesn’t like them. Despite, it still turned out amazing!!! A great meal prep idea for lunches too. We also BBQ’d our veggies and it worked out good too. Will definitely make this again!!! Jamie you knocked it out of the park again!
You can probably also leave it as a stew I assume. Also if you don't want to use the white sauce you could serve it with plain yoghurt. Last but not least, you can drizzle olive oil while laying the phyllos in the pan, the phyllo gets crispy and golden. I got to admit, I love this recipe. Being Greek, our pies and bakes are mostly around phyllo pastry, the Greek cuisine is full of either savory or sweet dishes based on phyllo pastry than pough or shortcrust pastry which are more famous in other European countries.

I absolutely love Jamie Oliver such a genuinely nice guy I've never met him but you can just tell. He's got a beautiful family as well and I got to say that little buddy is just like his dad lol I have seen all his vids on his TH-cam channel. Just like to see more New stuff on both of your channels. Just wanted to say you and your wife have amazing kid's and love to you all ❤️❤️

just made this came out great watched the video 10 times basically you scald/toast crisp each vegetable starting with the most dense (sweet potatoes) and so on down the line charring as you go along my tomatoes were from my garden which made this dish extra awesome we skipped the rice and it still came out amazing and yes the white sauce was amazing thank you jamie oliver it really was a joy !!!!

Mmh yummy, love your white sauce. When only 'Lasagne' was made, I didn't eat meat, Good Chicken or Vegetables Lasagne made with meat. With 4 hungry boys/husband & me, size Jamie's dish made one each of Meat & Chicken or Meat & Vegetables, loved all of them. Jamie's would go down a storm 😉☘️I'd have to spoil a little, in between Filo and sauce a little grated cheese, not loads. Wonderful Recipe. If I still had all those mouths to feed, another of Jamie's Books for my collection. All 4 cook and cook well good food makes them want to they did, though this Irish Mammy told them, I'm your Mammy not your Servant! Thank you Jamie!
Cut the recipe in half- I fed 7 people and have more than half left over. I don’t know why- the pans he used look the same size as mine but I had to use two saucepans and two big baking pans. Oddly, though, the ‘white sauce’ topping was just right for one 9”x12” pan. It all tasted great and don’t miss the rice and beans on the bottom, they really help with texture, taste and protein.

@@ghislainecolleau5624 that could work. I read more about tapanade and it consists mainly of olives, capers and anchovies. I'm not a fan of anchovies but some pesto and then using some olives and capers as well sounds like an idea. Maybe just the olives.
@@bearo8 In France you can just buy tapenade (green olives or black olives) in any supermarket. I'm not a great fan of anchovies either but I promise you, you won't notice them in the tapenade. At least I don't! 🙃 Olives and Pesto = Yes. Not sure about pesto & capers though?

Ingredients: 3 onions, 3 garlic, 3 tsp coriander, 3 tsp tapanade, 1 sweet potato, 2 zucchini, 3 peppers, 3 tins of tomatoes, filo, herb(oregano), 500g yoghurt, 3 eggs, 300g basmati rice, 1 tin dried (butter) beans, 100g feta cheese, salt, pepper, olive oil

I don’t eat yogurt but almond yogurt is just as good. I think the cows yogurt might make the sauce taste sour?

I'm curious how the dry rice somehow cooks in the oven, I've never seen that before. Is it from the sauce of the vegetables?
From the 3 tins of tomatoes and 2 tins of water that he added plus the juice of the veggies
I guess it also soaks up the excess liquid as it cooks, so keeping the dish firm and easy to cut into portions, and the base crispy.
There is plenty of liquid in the sauce to cook the rice.
