I just cooked this for the second year in a row. I’ve gotten nothing but big compliments on it. Very moist white meat, flavorful throughout. My notes: - Seasoning it ahead of time pays off. I prepared the whole bird the day before and let it sit in the fridge for 24 hours before cooking. That gives the salt time to tenderize the meat and really sink in deep. If you can’t do it a day ahead, get the seasoning on as early as possible. Even an extra hour of time for the salt to act will help. - Like he said - resting it makes a huge difference. It gets soooo flavorful and tender. - Nobody will complain if some bits of the bacon stay stuck on the turkey instead of going into the gravy :-). - If you’re kosher, leave out the bacon and you’ll still have an awesome turkey. Just remember to baste. - I’m in the US and I used Citizen Cider Dry Ale-style Cider I found at my local beer and wine store. It worked great. - Go ahead and start your gravy within an hour after you take the turkey out. You have a lot of liquid to reduce, and you can always turn down the heat and gently simmer if you need it to take longer. - You may want to thicken the gravy just a bit with a bit of a cornstarch or tapioca starch slurry if it’s too runny for you. A little bit goes a long way. Be sure to make the slurry cold and then stir it into the hot gravy. - I had a 20lb bird, and I pulled it out about 30 minutes earlier than Gordon recommended (by his “per kilo” math) and it was already perfectly to temp. Set a timer and check the temp 30 minutes early.
Gordon Ramsay Measurements: When he says: a pinch of salt What he actually means: Massive handful When he says: a knob of butter What he actually means: 2 full bars When he says: a glugg of olive oil What he actually means: Enough to finish the Mediterranean off
Me trying to find the actual written recipe for both Turkey and gravy, it’s like his recipes are top secret? Good food is meant to be shared, not kept secret for themselves.
I look forward to making this turkey every year but I also look forward to just watching this video as well. The holiday visuals and Christmas music really give me a vibe too
I followed Gordon's instructions 100% step by step for our roast in 2018, I think I've watched this video around 100 times - I was afraid to fail on our american guests. They told me they never had a better turkey in their life, including their grandma who was supposed to be the master chef of the family. I was so proud that we'll do the same thing this year and our guests have been already lining up. We will be 12 - so I'll do 2 turkeys again - each will have around 4kg = 8.8lbs. I am using a full bottle of dry ecological cidre from Galicia, Spain, that's enough for the gravy of 2 turkeys. The resting time of 3 hours is exactly right, and the turkey will still be warm, the meat will just fall off the bones. Do yourself a favor and try it - it's a once in a lifetime recipe, because even a wannabe-chef like me was able to do it. Merry Christmas!

@@fademusic1980 Turkey gravy with cider and walnuts. INGREDIENTS Serves 8-10 Bacon, onions, lemon and trimmings from Gordon's classic roast turkey 3 rosemary sprigs 3 tomatoes, chopped 1 ltr good-quality dry cider 600ml good-quality chicken stock 2 tbsp walnut pieces, toasted Sea salt and freshly ground black pepper METHOD Once you've transferred the cooked turkey to a platter to rest, drain off most of the fat from the roasting tray and place on the hob. Roughly chop the bacon, add to the tray and fry for a few minutes. Chop the onions and lemon and add to the tray with 2 rosemary sprigs and the tomatoes. Cook for 1-2 minutes, then add the turkey wings, parson's nose and drumstick tips and fry for a few more minutes. Pour in the cider and boil for a few minutes. Add the juices from the resting turkey and simmer to reduce the liquid by half. Pour in the stock, return to the boil, then reduce the heat slightly. Using a potato masher, crush the vegetables in the tray. Simmer for 15-20 minutes, stirring occasionally, until reduced again by a third. Take off the heat. Strain the gravy through a sieve into a saucepan, pressing down on the solids in the sieve with a ladle to extract as much of the flavourful juice as possible. Add a fresh sprig of rosemary to the pan, then turn off the heat and leave to infuse for a few minutes. Before serving, remove the rosemary and reheat the gravy. Coarsely crush the walnut pieces using a pestle and mortar and then tip into a warmed gravy jug. Pour the piping hot gravy on top and serve at once. www.gordonramsayrestaurants.com/recipes/turkey-gravy-with-cider-and-walnuts/

This will be my second year with this turkey and gravy recipe! It was a huge success last year and I'm excited to prepare it again. I'm also trying Gordon Ramsay's Pork, Apricot, and Pistachio stuffing this year. EXCITED!
Thank you uncle Gordan, followed your recipe & instructions and laid out a complete Christmas dinner the first time ever and it WAS A BIG HIT with my guests and esp my hubby! 5.5kg turkey, rolled stuffing and chutney and honey glazed gammon.
I'm hosting Thanksgiving for the first time in our new home. Got both sides of the family coming out and found gold luckily doing this, this Thanksgiving.
LOL! They don't need to know when it's done. If my family doesn't know the turkey is done, they don't have a chance to act like a pack of wolves. And they're too lazy to check on it themselves; they don't want to accidentally offer to help in the kitchen, so they stay away from checking on stuff. So, my turkey can sit there quietly in the smoker being done, but my family is none-the-wiser.
That’s hilariously accurate around these parts too. That’s why I start my process at 3am. Per Mom’s recipe let the bird rest outside the fridge for 3hrs before prepping (post thawing in fridge; in a fairly cold house - no heat). At 6am I’ll butter & stuff, brown & add bacon blanket, reduce oven temperature and put the bird in the oven to roast. Around 9am I’ll remove it to rest for 3 hours. Dinner is at 1pm so I have wiggle room.
The butter with lemon, parsley, garlic, salt and pepper is amazing! I also mix olive oil, salt, and pepper along with diced onions, carrots, celery, cauliflower, and broccoli then stuff the turkey and surround it the vegetables. I've been doing this for a couple years, the turkey turns out so juicy and flavorful!

Thanks to following this video, my family said it was the best turkey they had ever tasted. The turkey was moist, and an explosion of flavours in your mouth. It was tougher than I thought trying to slightly separate the skin from the flesh, to put the herb butter in, but I got there in the end. Thankyou Gordon for these videos, as they're a great platform for us to learn from. Merry Christmas everyone, and may we have a better 2021 ❤❤❤

There's so much going on already :) it's now been my go-to Christmas turkey recipe (after YEARS of trying brining recipes etc) for the last few years
I have made this turkey several times and yes it comes out perfect!! Don't be afraid to let it rest just like he says, it will not get cold. After I take the turkey out, I set it to the side on an old towel and then cover it with foil then drape and old beach towel over it to keep it warm, it is so juicy and moist!!
@@jeang3258 for the gravy? You don't have to throw any part of the onions or lemons away after they have roasted with the turkey! I promise you it's not unsanitary! Those outside layers have delicious turkey flavor coating them! Just cut them up and fry them off for the gravy!

Turkey cooks at 220C (430F) for 10 to 15 minutes and then when taken out reduce temp to 180C (360F)
The butter mix:
375 g of butter (1 2/3 cups) room temp
1 tablespoon of olive oil
Zest of two lemons and the juice
3 garlic cloves finely chopped
Handful of Parsley chopped
Inside Turkey:
Season with salt and pepper
Add two halved onions and one lemon
Two bay leaves
After add the bacon about half way to cook on top of Turkey (Ramsay puts bacon when he takes it out to cook at lower temp I do it half way because my bacon burned once before)
Gravy :
Drain excess fat from the Turkey tray
Take the onions out of Turkey and chop
Take the bacon and chop
Add to pan
Chop the lemon and add to tray
Two sprigs of Rosemary in tray
3 tomatoes chopped and add
Get Turkey trimmings (wings and butt tip) and add to tray
1 bottle of dry cider (1liter) (I use 750 ml)
As it reduces add the resting juices of your Turkey
Reduce by half
Smash everything with potato smasher
600ml of chicken stock and reduce again
Strain it and add a rosemary for flavor
To serve gravy get a handful of walnuts and crush put at the bottom of gravy tray and add gravy (remove the rosemary if you added it at the end)

Yeah it's a whole turkey, those 7-12 pounds need a lot of salt and pepper.
My husband and I have been making this EVERY Thanksgiving and Christmas for the past 4 years. It's a huge hit. Everyone says the gravy is to die for.
Do you have an ingredient list?

Turkey gravy with cider and walnuts.
INGREDIENTS Serves 8-10
Bacon, onions, lemon and trimmings from Gordon's classic roast turkey
3 rosemary sprigs
3 tomatoes, chopped
1 ltr good-quality dry cider
600ml good-quality chicken stock
2 tbsp walnut pieces, toasted
Sea salt and freshly ground black pepper
METHOD
Once you've transferred the cooked turkey to a platter to rest, drain off most of the fat from the roasting tray and place on the hob.

Your fam will love it bro. It's my 3rd yr and I haven't missed yet. Lol
I really wanna let it rest for the 2 1/2 hours but my family acts like a pack of wolves during thanksgiving
LOL! They don't need to know when it's done. If my family doesn't know the turkey is done, they don't have a chance to act like a pack of wolves. And they're too lazy to check on it themselves; they don't want to accidentally offer to help in the kitchen, so they stay away from checking on stuff. So, my turkey can sit there quietly in the smoker being done, but my family is none-the-wiser.
distract them with booze
Lolololol my thoughts excalty 1hr is enough 4 my family
Lol I know the feeling!
