It looks good, please use 2 trays, so while you're trying to remove the Cheung Fun out, put the other tray in to steam, after 3 mins, you can pour in the batter and let it steam and you have the time to remove the Cheung Fun out. But I prefer to line it with a piece of cloth, must easier !
If you go to an international or Asian market they should have them there. Be careful of the rice flour... There's different kinds. And I think they cook up different. Some markets have the starches already mixed together for these rice rolls

Hi i asked Gambo and he said if you add the meat during the rolling process, The meat would have to be cooked separately. The other way is you can add baby shrimp or small pieces of pork on one side during the cooking process so that the meat would be cooked.

Wheat Starch 3 Tbsp.
Potato Starch 3 Tbsp.

awkward method...That’s literally water from all the steam enclosed.
I just use a non stick pan and let the heat do it’s job.
I actually think I did better than he did....
