I would substitute round teflon non-stick cooking sheets to eliminate the labor of cleaning and oiling dinner plates. They are available for cheap on Ebay, can be reused hundreds of times and for other cooking recipes.

What kind of soy sauce do you use? I always felt like the cheung fun soy sauce in dimsum restaurants was different recipe than their regular table soy sauce

yes, you can fill it with anything you want as long as its thin enough to cook and wrap
