Yields: 4 tortillas INGREDIENTS: 1 cup superfine almond flour 1 tbsp xanthan gum ½ tsp baking powder 1 egg, room temperature 1 tbsp water, room temperature ¼ tsp salt DIRECTIONS: Add all of your items in a large mixing bowl and mix until combined. Knead out your dough for 2 minutes, you want to make sure that your dough comes together. Using a tortilla press or rolling pin, flatten your dough as thin as possible. Turn on your flat pan to a medium heat, and cook your tortillas for 1-2 minutes on each side until golden brown. At this point, they should still be pliable! Enjoy with your choice of toppings! YO chica, Ms Low Carb, I had followed another Tuber making some Almond flour mix that is usable for lots of things. No 1 my tortillas under her recipe came out like tostadas, (not flexi). I took her left over almond flour mix to your recipe and BAM!!! I got street taco tortillas! For the same mix I got 8 ST tortillas! and they're soft and flexible, its incredible, I have tortillas pa el desayuno! Thank you time 100 because I was gonna give up on Almond flour. Keep up the great work!!! 🙃

I read beef gelatin can be used as a substitute for xanthan gum, but it should be used in a 2:1 ratio. Im going to try that and see if it works. I would rather use grass fed beef gelatin than xantham gum.

Oh this made me miss living in Arizona. I use to love staying my best friend when her mom and grandmother made tortillas hot of the griddle smothered in butter. Their tamales 🫔 were heavily too.
I’m going to try these. I’ve made some that include lupin flour but no egg, and more xanthan gum. They’re ok but I’d like to try these with not as much xanthan gum.

Use Psyllium husk powder Psyllium husk is made from the husks of Plantago ovata seeds and is sold ground for baking purposes also used for bulking fibre in your diet naturally (Metamucil or macro organic psyllium husk are examples of brand )from supermarket
I made these to make mini tortilla pizzas. Used fried ground beef red peppers onion and Mozzarella, Comte, and Emmenthal cheese topping. Can only eat two...
I'm glad you let us know upfront those are almond flour based. Unfortunately I am allergic to almonds. I might make them for my diabetic boyfriend tho.
Such an approachable recipe, they look great! I'm going to try it this week. Just one thought: If you made them bigger, you'd be able to get a higher filling to tortilla ratio. Assuming these are higher in carbs than the filling, bigger sized tortillas seems like a good way of keeping your carb count down.
Thankfully I have a tortilla press I use them also to make crackers. I just cook them in the oven with a cracker recipe after I make them tortilla size and then break them up I need to avoid Almond anything as much as I can due to Oxalate Toxicity. I will try it with some of my fine ground lupin flour.
Hi, Barbara! I use two silicone mats or parchment papers, brush or spray some oil on each, place one ball between them, and press with a wood cutting board in a circular motion. Don't come out exactly circular, but it's an option to me. May be can help you too.

Here’s a hint if no tortilla press-a 1” dowel works better than rolling pin for getting dough thinner-more pressure per square inch.
Tried it and they were well but the recipe works better for sopes.
