  • When The Queen sends a note to you in the royal kitchen you know you are in trouble. In this video I share the only time she questioned my food... and it was my fault! But after I explained, she went on to order this dish again and again, especially at Balmoral Castle where the soft berries grow in abundance. Super easy recipe, perfect for breakfast, brunch or lunch.

    Veiled Farmer's Daughter
    (makes 4 portions)
    2 cups strawberries hulled and quartered (or any other soft berries)
    1 orange (zest only)
    1 TBS orange liquor (or orange juice)
    1/4 cup sugar
    4 slices wholewheat bread (pulsed into crumbs)
    1/2 cup Muscovado sugar ( or regular brown sugar)
    1 tsp cinnamon
    1 cup cream (whipped)
    Mix the breadcrumbs with the Muscovado sugar and cinnamon and bake until crisp. Stir and allow to cool.
    Mix together the strawberries, orange liquor, orange zest and sugar and stir well.
    Layer some of the berries into 4 Sundae glasses and top with a little whipped cream followed by the breadcrumb mix.
    Repeat, to create layers ending with the breadcrumb mix

    I am deeply saddened at the passing of Her Majesty the Queen. My deepest condolences to you, Chef McGrady, and all who were close to her. Quite fitting that this last video features a dish that she loved to eat at Balmoral Castle. Thank you for taking such good care of her throughout the years. You truly are a kind and great man. Bless you. God save the King.

    My grandmother used to make «Tilslørte bondepiker» when I was a child. She made it with apples, since they had a big applegarden at their farm. It was my favourite dessert. I have the bowl she always used to serve it in. She passed away in 1994, 93 years old. Good memories 😊❤🇳🇴

    My heart's so heavy as I watch this. I'm American but I believe many girls like me grew up fascinated by the Queen. Who didn't know who Queen Elizabeth was?!? I'm 63 and of course she's been the Queen since before I was born. I loved her too. It's hard to believe that Queen Elizabeth was still with us just a few short weeks ago.
    My heartfelt sympathy to The Royal Family, friends, and all who knew her as Queen. ❤️😔

    I do so love your stories, and I think this is my favorite! (Until the next one, that is!) This dish sounds divine! A while ago I took your advice and ordered vanilla bean paste from Vanilla Bean Kings. I am now a vanilla bean paste "convert" and suspect that I will become a Muscovado sugar convert once I try it!     I have no doubt after she received the recipe The Queen responded, "I see. Oh, yes that sounds very nice. Please include this dish on the menu". How could you go wrong with fresh fruit, whipped cream and a little touch of sweet crunchiness?

      Most of the year it’s good jam (traditionally apple, but other jams work too) rather than fresh fruit, but I get what you mean. I also recommend doing the same with yoghurt and granola instead of whipped cream and breadcrumbs. If you have fresh fruit, sweetened yoghurt is good, but for jam I recommend unsweetened because there’s already quite a lot of sugar in the jam.

      @@ragnkja That is one of my favorite variations. I like yogurt much more than whipped cream. Here in Florida, in season blueberries, or peaches, with yogurt and granola is excellent.

      And it only takes a few extra seconds to make a quick snack look like a pudding fit for royalty (“dessert” is whatever course is served last, so a pudding isn’t necessarily dessert).

      Traditionally it’s made with fresh apples, cut into slices, boiled soft with water and sugar and mashed. Served fresh and warm with sweet crumbs the way he prepared it and whipped cream. This is the summer variation. With apples, it’s a classic and delicious winter/Christmas desert.

    My heart just broke when I heard about HM QE2 passing. She was an absolute icon and I respected her immensely. I am not a British citizen but share in the grief that you and your countrymen must be feeling.     I am an American living in the UK (because I married a lovely British lady). It happens that the mother-in-law of my wife's good friend works/lives at Sandringham House, a royal residence, and has frequent contact with the Queen. Thus, I am only three degrees away from Her Majesty! For that reason, this channel is especially interesting to me.

    I really love easy and simplistic recipes like this where you can keep them as is or dress them up with a few extras. I enjoy the stories of your time spent with the royal family. I'd like to hear about happy accidents or last minute emergency substitutions that turned into rotating menu items or became favorites.

    Chef, we watched your fish & chips episodes and wanted to try salad cream (and HP brown sauce) so we ordered them from U.K. (We live in DC)...wow those are different flavors! But they are delicious- thank you for the awesome videos and suggestions- you broaden our horizons!

      Salad cream is my dressing of choice on a watercress salad. There are some easy recipes for it on TH-cam. I still miss HP. Nothing quite like it, likewise the more fruity Daddies sauce.

      Hey Scott, I’m British and I live in Maryland and you can get salad cream and HP sauce in Baltimore area ( or even Frederick) HMarts, which is an Asian grocery store. My Frederick Costco has haddock which is my choice for fish and chips. Good luck, Maria

    As a swede I know this dish but I’ve never heard it being referred to as veiled farmers daughter. We usually refer to it as änglamat which basically means angel food! 👼

      Interesting, because in Norwegian, Danish and German it’s definitely veiled farmers’ daughters. The German wiki page suggests Holstein as the origin of the dish, which explains why it’s found in both Scandinavia and Frisia.

      Yeah, the pronunciation was definitely way off! Getting the stress/tonality was probably too much to hope for (tone 2, which all compound words use, as well as many simple words, is notoriously difficult for anyone who isn’t used to lexical tonality, which is why people outside of Scandinavia never get my name right), but he didn’t exactly nail the phonemes either.

      As a Norwegian (and therefore as someone who has known this dish since childhood), I’d say her response was exactly how I’d expect someone to respond to seeing the name in an obvious food-context without explanation.

    Darren, THANK YOU! Unlike many, I was not surprised by
    the Queen's passing. She was well into her 90's after all,
    and the love of her life was gone. I grieved, and felt the
    global loss, but I just remembered what she had accomplished
    in all that time. (Like being a truck driver and Mechanic during
    WWII.) I like to think about everything she has done.
    You cooked for Royalty, quite literally! And, your videos portray
    you as a nice quiet skilled Chef. Someone who would prepare
    a meal, for a truck driver.
    This recipe seem to be a bit "trifle" ing, except no sponge cake.

    I'm not a Royalist - as I've said before, but I respect history and love your stories and cooking. Being autistic with consequent sleep problems and a disabled person prone to clinical depression your warmth, kindness and gentle humour brighten up my days and - as now - my small hours. Two small questions please...if you are able to answer and can find time to do so.
    1. How did you resolve the absent recipe gaffe - what means of grovelling was in place to avoid that fateful trip to Traitors' Gate?
    2. When are you going to do that recipe for cawl - pronounced COWL for those who don't know - to satisfy we wild Welsh - who love the fact you have a Welsh forename?

    As soon as I saw "veiled farmer's daughter" I thought it would be a version of tilslørte bondepiker. In Norwegian this is normally translated as "veiled peasant girls" as opposed to farmer's daughter though. A fitting dish for Her Majesty as her first overseas state visit was to Norway in 1955, a country she held dear as she was second cousins with the countries head of state, King Harald V.

      No, “bondepiker” are the daughters of the (self-owning) farmer, whereas “gårdsjenter” are peasant girls in general, or girls working on a farm.

    the way people talk about serving the queen i can only imagine what type of person she was. im sad that i never got to meet her in person but im hoping to greet charles if he decides to visit saint john new brunswick any time soon! i never understood my facination with the royals until the queens passing sadly. an extraordinary woman indeed! This reminds me of a recipe my grandmother makes, death by chocolate! similar idea of layers of complimenting flavours in a cup, but this is interesting! ill be sure to pick some strawberries from the garden and try this out in spring!

    This looks great! I've made something similar, years ago. There were really just 2 differences. Instead of breadcrumbs, the recipe I used called for finely crushed ginger snap cookies and instead of orange liqueur it called for aged balsamic vinegar. I know it sounds odd, but you didn't taste vinegar, it was a hint of balsamic that made the strawberries taste even more like strawberries. I made it again a week later but was out of ginger snaps, so I used crushed Graham crackers with about 1/4tsp dried ginger. Yes, I'm American, I always have Graham crackers in the house! I think any mild flavored cookie, lije digestive, shortbread, butter, vanilla wafers, with a bit of ground spice like ginger, or just cinnamon, would work well!
    I was thinking about that recipe recently and couldn't remember what cookbook I found it in, so thank you for sharing this one!
    I agree with Her Majesty, I wouldn't want to be served strawberries in January either! I've only had good strawberries in January once. I was ill, my wonderful best friend sent me a box of chocolate covered strawberries from Edible Arrangements. They're wrll known in the US for their flower shaped fruit bouquets. They were the best strawberries I've ever eaten! Huge, firm but perfectly ripe, juicy but not mushy, sweet and the most strawberry tasting strawberries I've ever tasted! If anyone know how or why their fruit is so good, even in the dead of winter, can you share why?

    I was heartbroken when we lost our Queen. Even now at the end of September 2022 it's hard to believe we will not be hearing her voice, watching her message live on Christmas Day in our home, here in 🇨🇦 and world wide.

    Darren, new viewer and subscriber, you are my favorite TH-cam channel. I’m from southeastern Massachusetts. Ignore the meanies, you’re brilliant, so enjoyable to watch. You make recipes fun that might appear challenging and off putting as a result, and have got me trying recipes I might never have before. Oh and your Lemon Posset is perfect, the serving sizes make it such a light and refreshing treat. I topped them with fresh blueberries and everyone was amazed by how simple it was. My condolences to you for the loss of your queen.
