Former Royal Chef's Culinary Tribute to Prince Philip, Duke of Edinburgh

  • From the first time I met him and mistook him for the gardener to the last time I cooked for him and he stole my lamb chops I loved cooking for Prince Philip. He was a master chef on the grill, always keeping the palace chefs on their toes and even teaching me how to peel fruit, the correct way, his way.
    One of his favorite dishes was Crepes Islandaise, a recipe that he gave to the royal chefs and requested many times at his private dinner parties. In this video I share the recipe and how to prepare this simple dish.

    Crepes Islandaise
    Makes 6 portions
    1 cup flour
    1/4 tsp baking powder
    1/4 tsp salt
    1/2 tsp baking soda (bicarb of soda)
    1 tsp vanilla
    3 eggs
    4 TBS melted butter
    2 cups milk
    1/4 cup vegetable oil (for cooking the crepes)
    1 cup jam (your choice of fruit)
    2 cups heavy cream, whipped
    1/4 cup powdered sugar
    In a large bowl add the flour, baking powder, salt and baking soda and whisk until combined. In a separate large bowl add the eggs, melted butter, vanilla and milk and whisk together. Add the liquids to the dry ingredients and whisk until there are no lumps.
    Add a teaspoon of vegetable oil to a frying pan and heat until smoking hot. Carefully pour enough batter into the pan and swirl the pan until the batter coats the bottom of the pan (it only needs to be 1/4 inch thick) Cook until golden brown on the bottom and then flip the crepe and cook until golden brown on both sides. Slide the crepe onto a plate while you make more and then allow all to cool.
    Lay out the cold crepes and spread the jam onto half a side of each. Top with the whipped cream and fold over the top of the crepe onto the cream. Dust with powdered sugar before serving.

    This man's a legend. First time he sees the Queen he runs away from her corgis and makes her laugh.. and first time he met Philip mistook him for the gardner 🤣🤣🤣

    It's crazy to me how he was already an "old man" in the 1990's. Sometimes it's hard to forget the length of time between someones 70th birthday and their 100th birthday.

      The Prince had respect for people. I remember he was quite incensed when he heard the term "Human Resource" . He said Human Beings are not a resource. They are the raisin d'etre for corporations to exist.

    I honestly thought Prince Philip would outlive Charles. He made it to 99 though! 1 year away from a full century of being alive. Still amazing. May he rest in peace.

    You might not be good at cutting mangos, but you've done an excellent job at this tribute video!
    Not too many people know that Prince Philip was actively involved in running the royal estates, and the fact that you as a former member of staff have wonderful memories of working there speaks well of him. How many people can speak fondly of their old bosses these days?

    He was a gentleman of the old British Empire. Stately and dignified. As an American, I always felt like he was so refined and cultured. He also saw a lot of life. Think about how much the world changed from the time he was born until his death.

      In almost 100 years- you're talking about the Harlem Renaissance of the 1920s' The Great Depression of the 1930s', WWII (1939-1945), The Cold War (1948-1991), Korea (1950-1953), Vietnam (1959-1975), The Watergate Scandal (1974), The Bicentennial (1976), Disco (70s'-80s). A few more months and Prince Phillip would have been a centenarian!!

      Justin, I agree with and appreciate, the fine compliments that you pay Prince Philip. However, he was not a gentleman of the old British Empire. The British Empire ceased to exist in 1945 and Philip didn't marry the Queen until 1947. The Empire was replaced with the Commonwealth and like the Queen, Prince Philip dedicated himself to its cause. The Empire was gone before Philip was on the scene. The days of colonialism ended and were replaced by voluntary membership in the Commonwealth of Nations.

    I made this dish this morning in honour of His Royal Highness The Duke of Edinburgh Prince Philip. Broke down crying watching the funeral, esp seeing Her Majesty Queen Elizabeth and Prince Charles . All my love, thoughts and prayers to Her Majesty and her family. He will be truly missed.

    A lot of people on social media had all sorts of opinions about a man they didn't even know existed until that god-forsaken interview a few weeks ago but the only opinions that matter are the ones coming from the ones who actually knew him. Darren, your tribute echoes all the beautiful sentiments we've gotten from world leaders to palace staff and reveals the true warm and wonderful man that was beyond the stoic facade of a war veteran. Through this you've shown your viewers what tabloids, drama series and books never could. You've done well by him.

      Gates." This common guy, had died, and
      was walking down the dirt road, towards
      the gate. It was AWESOME! Looked like
      the entrance to Buckingham Palace. He
      walked past, and found a gate, like going
      into a pasture. His dog, from his youth
      was there, as well as a guy with a notepad.
      The deceased guy asked, what was that,
      up the road? Oh, that is to lure in the treasure
      seekers. Why is my dog here? She has been
      waiting, for 55 years.
      Something tells me, The Prince found the

    When I was in The Life Guards, the Queen and Prince Philip came for lunch at the officers mess and I was on duty. It was my job to look after the Prince. When they were all seated, the Prince asked me for a beer, in a proper pint glass, all the rest had wine. The Queen was very nice as well, I had to pull her chair away at the end of the meal, she said thank you and she slipped the after mint into her handbag.

    What a really nice memory of Prince Phillip. How great that he loved a good BBQ like we do here in the U.S. and the love of food and cooking! He seemed like a fun-loving and down to earth man. He seems truly missed. God bless his soul.

    You can tell he isn't comfortable yet referring to Philip in the past tense. A couple times he slips up and uses present tense purely out of habit.

    The tale about you thinking that the Duke was the gardener made me laugh ! HRH.The Prince Phillip, will be sadly missed. He was one of the stronger generation and his motto, " Get on with it". A rock to our Queen, Long Live Our Noble Queen.

    I have seen a number of tributes to Prince Phillip since his passing, and they all come down to the same thing, he was a kind down-to-earth man. Being an outdoor guy, doing BBQ is not a surprise, going down to the kitchen not a surprise either, liked to eat the game he shot not a surprise. A well-lived life. Walking around the home looking like a gardener reminds me of a story that Luciel Ball use to tell, she had a new housekeeper and a tatty man came by with some tomatoes for lucy and she turned him away. Lucy had to explain to the new housekeeper that tatty man was Jimmy Stewart, at the time he was not only an actor at the top of the game then, but also a Serving Brigadier General in the USAF reserves. HRH a gardener, well in a way he was very much so.

    No wonder why he worked out so much, he obviously loved food and so very unusual ingredients. I am sure you have some great memories. I loved his sense of humor , his observations meant he was listening and his jokes, even the naughty ones, were what made him unforgettable. May he rest in peace, he will be missed.

    My parents sent me away to a New England boarding school, and the first day I was there I confused the headmaster for a maintenance guy because he had on work boots and clothes, and was fixing some old push mower...Guy was a legend... George Bartlett was his name.

    A respectful and heartfelt tribute. From the many documentaries and interviews I have seen over the years, there have been so many comments about how the staff enjoyed working for the Royal Family and no hint that there was any problems or difficult Royals. Darren's anecdotes were lovely to hear.
