Spanish style SARDINAS al horno - homemade oven-grilled fresh sardines

  • In today's episode let's cook some fresh, in-season sardines Spanish-style, al horno! Fast and easy way to enjoy these flavor-packed fish using just a key ingredients!
    INGREDIENTS:
    Fresh sardines
    Olive oil
    Oregano
    Peppercorns
    Red hot chilis
    Lemon
    Salt and black pepper
    PROCEDURE:
    1. Wash thoroughly and drain the fresh sardines. Rub with salt, crushed black pepper and oregano.
    2. Drizzle olive oil on baking pan or dish. Lay down seasoned sardines. Add crushed garlic, sliced red chili pepper, black peppercorns, squeeze half lemon then put lemon wedges in between the sardines. Cover with plastic wrap and set aside to quickly marinate while waiting for the oven to reach cooking temperature.
    3. Set and pre-heat oven to 250ºC. Remove plastic wrap and put it in the oven and cook for 10-15 minutes but always best to eyeball it. Enjoy it with steamed rice and cold beer!

    Tried this today but did a few tweaks so that I could use what I had on hand. I used galunggong instead of sardines, lemon and pepper seasoning instead of fresh lemons, freshly ground pepper flakes instead of fresh chilis and dried italian herbs instead of oregano. It was delicious!
    One question though: how do I store leftovers? With or without the remaining oil?

      Seperate it... You can always add if u need when reheat. If u need it at all. Depends on what u are doing with leftovers

    How long does it take to properly marinate the fish? I would add some tomatoes to roast together with the fish.
