I’ve eaten canned sardines all my life. Never thought I could fry them. Just tried this recipe. They were lovely! Easy and great taste. Thank you so much! This will be a staple from now on.
For those people not too familiar with sardines, definitely choose the small ones. In larger sardines, the spine is both larger and more calcified, which makes for a grittiness that I don't like. OTOH if you don't mind that, you will get more calcium in your diet with the bigger ones, and they are usually cheaper. Also, there is a wide range of quality in canned sardines. Some cheap brands use cottonseed oil instead of olive oil. Take your time, read the cans and remember this is a food where cost and quality usually go hand in hand.
I recently bought a case of brisling sardines. They’re quite small compared to normal ones. But I find them harder to eat and they have a stronger, bitter fish taste. My favorite sardines are in water or sunflower oil. Around here it’s usually canola/mix oils, soybean, or olive oils. The most calcified ones I’ve seen are the vertical cans from the Phillipines. Good for budget, but not mouth feels. I can feel the bones and the grit. 😨 I like fish with a cleaner taste.

My parents lived in Spain when my father was stationed there for a while when he was in the Navy. My Mom said they used to fry fresh caught sardines & eat them whole, bones & all! I’ve never tried fried sardines & fresh sardines are hard to find in the southern part of the USA. I will give this recipe with canned sardines a try. Thanks!

I’ve always got a few tins of sardines in the cupboard as they’re so handy - I’ve not made this recipe though so it’ll be my next one to try out. There was a lovely fish restaurant where I used to stay in Mallorca & their fried whitebait was heavenly so this definitely appeals to me.
I just tied this even though I had none of the right ingredients and it still came out great. I only had boneless/skinless sardines. I used italian seasoning, with lime juice, and jarred minced garlic for the aioli. Can’t wait to try it with the right ingredients!

Spanish 🇪🇸 person here. Try this next time. I learnt after a long time that just making a flour and water slurry WITHOUT Egg makes frying things so much crispier. Seriously try it.
From Galicia, northwest of Spain, grilled sardines, in June and July when they are very fatty and with corn bread, are my favorite fish dish. The smaller sardines, which we call "xoubiñas", dipped in flour and fried in olive oil, are also wonderful, they are eaten whole. I have never seen canned sardines fried, I eat canned sardines with bread, baguette type, but I will try to make them fried, as the Spanish saying goes " nunca te acostaras sin saber una cosa mas / you will never go to bed without knowing one new thing"
Made this last night using a tin of sardines. Spanish and Portuguese folks really love their fish. Americans like fish differently. This was Delicious.

I inherited many cans of good quality sardines, and I hate wasting food, but honestly, Sardines have always nauseated me, the smell, the taste, their ugly silver and black skins, nasty little innards, etc. but they’re supposed to be good for you so I hold my nose and choke them down when there’s no other protein in the pantry. Pasta con la sarde is a great pasta dish, You can mash them while with bread crumbs or crackers with a little flour and egg and seasoned how you like and make fried fish Pattie’s with them. Or sauté some onion and garlic and chilis then add tomato sauce or canned chunked tomatoes and season how you like and serve over rice or noodles

Sardines is an excellent treatment for Psoriasis, I would say it cured me. High in omega 3 fatty acids may be the reason
