    Oh yes, an absolute necessity for banh mi!! I normally don't like pickled foods; carrots and daikon are an exception. 😁 LOL your daughter sure learned fast today. 😂

    OMMMMGG! banh mi's are my fav and IM SO HAPPY THAT YOU SHARED THIS!! i've always wondered why mine was so stiff - didn't realize we needed to use that salt AHHAHA liked & sub'ed - sending you love from the SAI comm

    Being that daikon grow like weeds.. the greens are great.... and so to use the root is a real plus.

    Have you ever tried Pickling Vinegar instead of plain white vinegar?
    What adjustment do you have to make when using the pickling vinegar?

    Oh yeah, they make the Banh Mi sandwich, especially juxtaposed with some rich pork and fresh baguette. The daikon and carrot also remind me of the pickled stuff at a Korean place. Very cute Maggie!!!

      @@rackoflam Yes, a great help - have enjoyed looking over some of your recipes - I love how your culture makes PHO - have watched many videos over the years at what can be a very long and tedious process cooking the bones - the end result is incredible - your shortcut video was great, only we cannot get the boxed PHO brand you suggested - will have to settle for a chicken or beef stock, which is still very flavourful - hope your channel grows and grows - have a lovely Xmas 🎄🛷🎄

    You know its doesn't always have to be Daikon. It can be substitute with green papaya also very delicious.

    Nice video!! I added some roasted jalapenos to one jar and only used radish and carrots in the other. I added a little more vinegar and water to the pickling solution but 1:1:1 is a good starting point!

    Hi, in your opinion, can I change the sugar with honey and using apple cider vinegar for the vinegar?

      I have never tried with honey and apple cider vinegar but my guess is the outcome wouldn’t taste like authentic Do Chua, given the different flavors from sugar and white vinegar, but worth a try!

      I think you can! But definitely mix your sliced/julienned cucumber with salt first and leave for 5-10 minutes to get that excess moisture out before pickling. This should give it a nicer crunch.

      It will be more sour but feel free to do that to suit your personal tastes!

      I used natural cane sugar (see description box) in the video but also use white sugar. Hope that helps!

    Without these do chua is not banh' mi` but subway or sub. I do quick way just add salt sugar and appleciding venegar and water theyre to crunchy or hard though not as tasty. Didnt know not put salt together with sigar n venegar. May be i should use regular venegar like yr i guess so taste better. Im vegan so i use brine of pickles of all ingredients make nuoc mam' like garlic onion chilly cabbage 0r napa and lemon and taste very silimiar nuoc ma^m' from fish carcass. Sometime i throw in beansprout apple slices and carrots too taste very good too.

    I don't understand after the rinsing the squeezing it out in a paper towel to get the water out when your putting it in water sugar and vinegar right after?? is there a reason for that step? and I noticed the sugar was not white what kind of sugar did you use in this recipe So I do it right?

      The purpose of squeezing excess water out is to avoid diluting the pickling solution. The sugar I used is raw cane sugar but you may use regular table sugar. Hope that helps!
