Easy and Delicious Vietnamese Pickled Daikon & Carrots

- Vietnamese pickled daikon and carrots can be used as a great side dish. It is also an awesome addition to your banh mi thit.
Ingredients: 2 medium sizes carrot, 1/2 large daikon, 3 cups warm water, 4 tablespoons sugar, 5 tablespoons rice vinegar or distilled vinegar, and 4 thai chili peppers.
Instruction: Cut the carrots and daikon into matchsticks. Add 1 tablespoons of sugar. Mix the carrots and daikon for 2 minutes. Add 1/2 tablespoon of salt and mix everything for another minute. Allow the vegetables to sit for 5 minutes or until you can easily bend the matchsticks without them snapping apart.
Wash the daikon and carrots in water for 3 minutes. Shake off excess water and press the vegetables down to get rid of more excess water. Put the vegetables into a container.
Add 3 cups of warm water, 4 tablespoons of sugar, and 5 tablespoons of rice vinegar or distilled vinegar in a big bowl. Mix all the ingredients together until the sugar has dissolved. Add 4 sliced thai chili peppers to the mixture if you like your pickled daikon and carrots to have a little kick.
Pour the liquid over the daikon and carrots. Put the container in the fridge for 2-3 days. You can eat the pickled daikon and carrots after one day if you can't resist :]
Store the pickled daikon and carrots in the fridge up to one month. I hope you like this recipe and as always HAPPY EATING!

We have a similar dish for New Year's Day feast in Japan, called Kouhaku-namasu (紅白なます), with a pinch of Dashi powder.
My lord this is why Asian people are always so zen and peaceful... the amount of patience it takes to to cut things up like that by hand.... I gave up before she even made it half way.

Why do you extract the fluids before fermenting? Don't you lose flavor and crunch?
I tried this ingredient. The pickled carrots and daikon were not sweet enough or vinegary enough. it tasted plain/watered down for my taste. i need to add more sugar and vinegar to try to fix it.
Hi, yes you can adjust the recipe to your taste. My husband is not Vietnamese so I toned down the ingredients for him 😁.

Hi, you can use regular vinegar. I didn’t have regular vinegar so I used the rice vinegar instead.
The difference is regular vinegar is 4x cheaper than rice vinegar. 😂😂😂😂

I never try with apple cider vinegar but I don’t think you can try it.

Thraya Zabian Yes. I tried Stevia since it is plant based unlike other sweetner. Fresh stevia leaves works great too but hard to find. To me, 1 stevia leaf (mint sized leaf) is as sweet as 1 tablespoon sugar.

I tried it. The daikon was very smelly after a couple of days. My entire fridge was impregnated with that radioactive odor.

She said that you can store it in the fridge for one month :) Keep it in the jar for 2-3 days for the veggies to absorb the liquid.
I tried for a month and it smelled way to foul... I think 2 weeks at most..
