    Introduction
    Goan Chicken Roce is an amazing infusion of Indian flavors with chicken in Goan style. The recipe, native to Goa, is a popular non-vegetarian dish. Many food joints and regular hotels in Goa serve this delicacy and it is a must-have dish when in Goa. What you don't know is that you can make this simple recipe in the comfort of your home. Chicken cooked into the Red gravy made out of great aromatic spices, chilies, and importantly Coconut Milk impart a wholesome flavor to the whole dish.
    Goan Chicken Roce Ingredients -
    For the Spice-mix
    1 tbsp Coriander Seeds
    10 Byadgi Red Chillies
    1 tsp Cumin Seeds
    1 tbsp Sesame Seeds
    1 tsp Fennel Seeds
    1 inch Cinnamon Stick
    1 Black Cardamom
    1 Star Anise
    1 Mace
    Nutmeg
    4 Cloves
    10 Peppercorns
    1 tbsp Coconut Oil
    1 Onion (sliced)
    1 inch Ginger
    8 cloves Garlic
    1 cup Coconut (grated)
    1 tbsp Tamarind Paste
    Pre-made Spice-mix
    Water (as required)
    For the Curry
    3 tbsp Ghee
    1 Onion (finely chopped)
    1 tsp Garlic Paste
    1 tsp Ginger Paste
    750 gm Chicken
    1 tsp Turmeric Powder
    Pre-made Spice-mix
    1 litre Water
    4-5 Green Chillies (slit)
    Salt (as per taste)
    1 cup Coconut Milk
    Coriander Leaves

      It's better if you grind the dry roasted spices separately. Otherwise the coriander seeds and chilli seeds being hard don't blend properly with the onion-coconut combo. Give it a thought.

    By far the best chicken curry I have cooked. Pro tip: Don't skip the nutmeg and the mace. They give that flowery taste that make this dish divine

    Made this tonight. Chicken curry came out fabulous. One tip i might offer is to salt the chicken separately for 30 mins or so prior to adding it to the kadai so that the chicken is seasoned to the core.

    do not add tamarind paste..
    please add termaric powder and
    half chopped tomato while roasting onion and coconut..
    while roasting masala you need to add one tbs of rice .
    please marinate the chicken with corrienderleafs green chilles ginger and garlic past with some salt..

      A combination of Tamarind paste and sauted tomatoes, gives the perfect taste for this recipe. Also marrinate chicken with lemon juice, gin gar paste & salt.

    Nice. Thanks Smita. Very, very Goan with coconut milk. Roce is actually coconut milk as they call it in Goa. I don't suppose you've heard of this famous Goan street food called Roce omlette. It's a delight and it's made of such left over coconut based chicken curry when the pieces have run out. Just make a regular masala omlette and cut it into nice squares and give it a boil in this left over gravy. Delicious with some Goan pao.

    That looks just amazing. Simple but flavourful! It's very similar to Kerala style chicken curry except for the addition of TAMARIND paste.

    Thank you for the delicious recipe. I tried Goa chicken for the first time in Portugal and fell in love with it. Followed your recipe at home and it was delicious. My curry did not have the red color as yours. Can you please let me know what might be gone wrong? One more thing, in my opinion, we should grind the spices first and then add the onion and count to the grind.

    I am going to try this, but I have a few questions. How do I know that I have roasted the spices long enough? Do I want a changed colour or a smell of the spices? How long dit it take you, approximately, to roast them? Also I have troubles finding green chilies, does it make a big difference if I use red ones instead? Thanks.

      roast the spices at a very low flame.. when the spices starts realising it's aroma that's the best time to switch off the gas.. . roast the spices in half oil and half ghee.. roast the coriander seeds and dry red chills at the end as they take a very less time..

      @@jiquerez Just to give you a bit of context, Goa was colonised by the Portuguese, so there has been a permeation of two different cultures. As a goan myself, I suggest you listen to "Lorna" she is a famous Goan singer, and most of the instruments in her music are very similar to the song choice over here.
      As per the recipe, Smita did the recipe justice, and I made it today; it was pretty much spot on. The only thing different is I remember my dad using freshly squeezed coconut milk, but nobody has the time; I get my coconut milk from a can.

    That's not chicken roce. It is chicken xacuti. You're missing poppy seeds but thats about it. Maybe change the name? Roce is very different.

    Oh and we do not cook our curries in ghee. We use oil.

    A small correction addition of tamarind specially to chicken gravy is not so authentic usually lemon is squeezed before eating to balance the acidity.
    Secondary for roce the coconut mixture is not ground very fine it is slightly coarse. Otherwise nice and genuine attempt.

      @@kunal_221 yes naturally, coconut oil gives you very different smell and taste , ghee gives a different taste.

      @@kunal_221 if you talk about the authenticity of the cuisine then it should be cooked in Coconut oil or just refined oil. Ghee is not at all used as a fat in Goan cuisine.
