    I watching this and am amazed. My sister in law is an older lady who lives in a small Mexican village. Her house is out in the countryside. This is exactly how she cooks. The same fire stove. The same clay pots. The same grinding stone. Oposite sides of the world using practically the same old world techniques and equipment.

    I have made this chicken curry twice now and it has come out spectacularly. My husband loves it too and that is a big deal as some other recipes I tried didn't really work out or made the chicken too dry. Now, I've saved this recipe that ammachi made and follow the video every time I want to make it. Love it. Thank you ammachi and the Village Cooking team!

    Been waiting for the most scientific chicken curry 👌
    Cooking enthuciasts, plz take note. She made the curry base first, added the last installment of water, brought it to boil, added the meat at the last stage and completed the procedure without adding anything, even water further. This technique creates the most succulent and juicy pieces. Cook breast pieces this way and compare with other curries, you'll agree with me.
    NB: If you find liver and prawn too tough, rubbery and chewy, try this technique.

      Normally we fry the onion, ginger and garlic first , then add the meat, fry for some time more and then add water after the oil is separated from the masalas.
      Frying the meat first caramelises the outer portion of the meat, adding to the taste.
      But your words have given me new idea, I have to try cooking that way and see the result.

    Awesome ammachi 🙏....you remind me of my paati. She was from pollachi but she is no more. When i was a kid she used to make one mutton curry. The tastiest mutton curry i ever had in my life. That curry was a dry gravy with grated coconut sprinkled as final touch. I have been searching for that recipe for so many years.

    I was scared for her with the way she's holding the knife and cutting up her vegetables. But as I continue to watch her technique. I then Told myself to relax lol this aunty's been cutting with this knife way before I even knew what a knife is and used for. I said maybe her hands have been so strong and planted for so long. That now She has to hold the knife like this. But I must say. I ran to my kitchen and took out some chicken to thaw out so I can replicate this amazingly well cooked recipe. So thank you Aunty for all that you do. Because you've inspired me too😍

    Love this video .we use the griding stone like yours in our place (N E India) we use the griding stone to grind spices and chutney and the taste of the chutney is excellent and tastier as compared to the one grinded by electronic grinder..The way you prepare and cook is so fascinating.. ❤️ your cooking pot. 👍🙏

    I am sitting here salivating! This is pure torture.
    There are so many flavorful seasonings and a detailed process to arrive at this deliciousness. I gave up eating meat quite a few years ago, but if I where there, I would definitely have to make a once-in-a-lifetime exception and taste your amazing cooking.

    I was interested to see this method of cooking as I have always marinated meat first for couple of days then cook very groans slowly. This lady has done the opposite so I am definitely going to try this technique

    An excellent video on how to make beautiful, spicy, healthy, and tasty Kerala Style Chicken Curry at home. Very interesting, informative, creative, and easy to follow. Varutharacha Chicken Curry is a great side dish for rice, kappa, chappathi, poori, porotta, appam, etc. Thanks for sharing.

    I have been looking for a chicken recipe for my Sunday's dinner for friends here and finally use the grated coconut I have.. Just came across this recipe and it reminded me of my late maternal Grandma (from Thadiyoor, Kerala )the way she was cooking.
    I have everything except for curry leaves but coriander leaves would do 😊

    • @bharath7528
      @bharath7528 3 หลายเดือนก่อน

      No it won’t, coriander cannot substitute curry leaves in any way. The taste will vary very much.
