- Filipino Chicken Adobo is the national dish of the Philippines and may well become your new favourite Asian chicken dish! Just a few everyday ingredients I can practically guarantee you already have, it's an effortless recipe that yields juicy, tender chicken coated in a sweet savoury glaze with little pops of heat from peppercorns.
This is a chicken thigh recipe and it MUST be made with thighs - no substituting with chicken breast!

I looked at the comments down below and it’s amazing that everyone seemed to like Filipino adobo! I’m Filipino, and I had to google how to make adobo because my mom couldn’t be bothered. She said: “Just google it!” Yours is amazing! Loved it! But, my mom uses sprite instead of water because it tenderizes bone-in chicken. However, if you have boneless, just use sugar and it’s good too.
Does your mom use sprite and sugar? Or replaces the sugar with sprite?
@@Its_kattx with bones, just sprite is fine. However, depends on your soy sauce too. Because you need to balance the saltiness with sugar, vinegar and etc. Tbh, I like using both, but not too much sugar, please!
@@Mary-sh2bp funny you mentioned sprite cuz my bro in laws aunt who is Filipina made a disgusting look when i told her ive made adobo twice and used sprite one time and she said Sprite isn't used but i saw recipes which use it..

Tomorrow: ok, I made this for family and we all agreed on less vinegar. I would cut it by 20% to start. Also add 10% more brown sugar. But it was good 🙂
I don’t know which vinegar you used but in another recipe the host specified that often cane vinegar is used and that it is much milder than white vinegar.
@@kaktusdesiberie7196 oh you can use apple cider vinegar as a perfect substitute. The recipe calls for a more milder tasting vinegar. If you have nothing else white vinegar will work. You just need to use more sugar to balance out the sourness of the white vinegar.

This was very good. I marinated by chicken on the counter for about 30 min before cooking and it had a lot of flavor.

I use 2 to 1 soy to vinegar, a ton of fresh garlic and onion and I just throw it all in a wok and lightly boil till it falls apart then I throw it over some jasmine rice. Then of course, you've GOTTA have that Guamanian finadene to throw on top. Actually watching it cook right now. Wish yall could smell this!

I've tried twice before to cook Filipino food and failed miserably.
One was Kinilaw which I tried once when I was in CDO, but that was a disaster to make. Couldn't get the right fish in England and the other was Bicol Express.

@glor2478 It was outstanding. My filipina gf told me over Facebook video call that 1 table spoon on peppercorns was far too many and that I should only have ten or so instead.
As I like pepper, I opted to follow the recipe given to me.
When I'm back in Dipolog, I'll see if I can slip in a tablespoon of peppercorns unnoticed.

I tried this recipe, it turned out great. But it was a little too acidic for me. So next time, i will reduce the vinegar a bit and increase the sugar by a TBSP
