The last time, I used spaghetti (since we had it on hand), frozen spinach (thawed and dried as suggested), and sour cream (the picky eaters thought the Greek yogurt made it a little sourer than they liked the previous times). Easy, quick, and delicious. Thanks for a good recipe.
Another complete success!!! Had spare spinach and Greek yogurts that needed using, have always got pasta, (I used) red onions, dried herbs and garlic, put it all together as perfectly instructed by Albert, and it was delicious! One we can eat all year round, and yet another beautiful dish to add to my repertoire and my growing cooking confidence!!

My stepson loves spinach and mushrooms on his pizza. And his dad is not into cream colored sauces. So, I’d slice up some mushrooms, sauté with shallot/garlic, add diced Campari tomatoes, add spinach, and sprinkle with mozzarella and Parmesan before serving.

I love this dish, but strangely, the recipe calls for just eight ounces of pasta, yet it supposedly serves four? Impossible. I could eat this by myself. On the other hand, the One-Pan Creamy Salmon Pasta, another great dish, calls for TWO cups of pasta and yet it serves just TWO?? It's backwards. This spinach and garlic pasta dish always ends up with a lot of broth and barely yields leftovers. When I double the amount of pasta he recommends, it's perfect!!
Healthy? I doubt using that much oil will classify it as healthy. It might not be junkfood but if you eat this regularly, I doubt you would lose weight or not gain it.
Many Italian chefs would take exception with the "one pan" method, feeling that the pasta needs to be cooked in a large pot of water, allowing the pasta to "dance" and fully cook properly, for about 2 minutes less than the al dente recommendations on the package, and then added to the sauce. It then continues to cook, absorbing the flavors from the sauce. Adding some of the pasta water with its starch to the pan will help thicken the sauce. Your method obviously works, but I refer you to @VincenzosPlate for his very outspoken opinion.
I´ve always cooked pasta the usual way, but once I tried the one pan method, I honestly find no difference, if you´re using a big enough pan for plenty of "dancing", as you say. The main difference I find is one less pot to clean... :D Moreover, he´s not cooking the pasta using water, but broth, which probably makes the pasta way tastier to begin with, regardless if you´re using a big pot or a pan. Not to mention certain sauces, such as pesto (my favorite pasta sauce), degrade with heat. Anyway, I´m no chef, but that´s just my 2 cents. Cheers!
