I have enormous respect for a mother who can feed five children on a shoestring budget. She used what she had, and made it the best she could; that's a mom for you. Rest in Paradise to your mother.

My ex-husband said he didn't like spinach, when our children were small I wanted them to experience a variety of vegetable, so I use to remove the stems of spinach then add it to the lettuce for a salad. My ex-husband never knew there was spinach in his salad. I noticed when I didn't add the spinach, our children would say the salad wasn't as good.

If there is a recipe from the Chef I haven't tied, I sure can't think of it. I always, always follow the recipes step by step (as I do with almost any new recipe). This one as well, and I can tell you it's just spectacular. It's always gratifying when you cook for loved ones and they so enjoy the food that there's little or nothing left over. Once again this recipe is no exception. I can't say enough. Just do it :)

I made this last night for my friends, I tweaked one thing being the spicey_italian that i am :-) I added a mix of Italian Panko with garlic seasoning and blackening seasoning, and put a nice layer on the top then covered it with the extra cheese. I made it in the little serving ceramic bowls like you did and they looked at it and said "Oh no, this is too much, we can't eat all this!!...." Once they tasted it the practically licked the plates clean.
They both said they loved the Crunch the panko on top made, they thought it was a great balance of creaminess and the texture of the crunch.

Thank you for doing recipes I can eat on my diabetes plan. I haven't made creamed spinach in ages. My Dad creamed and buttered everything he cooked. He made creamed onions once and we stuck our noses up! Had never even tried them...lol. Dad went to the kitchen for something and by the time he got back the whole bowl was empty....yum. I'm 75 and love almost every vegetable including wild ones thanks to my dad, we didn't ever go hungry. He taught me to cook by watching him cooking for the family. Not so much on baking, but, biy could he cook. Neighbors would show him and my oldest sister how to do a recipe and next thing you know Dad was bringing home the ingredients to make what they showed him. Someone brought Dad some fancy canned brandied peaches...Dad tasted them and took them out to the dump! He knew that the tingly feel on his tongue meant they were spoiled. The neighbor rescued his peaches before we could dump them and clean his jars...lol. So funny when Dad tried to politely tell him they were spoiled.😮😁❤

That is some really fancy creamed spinach! Bravo! I make a basic creamed spinach with frozen spinach. I cook it, add salt and butter and when it is warm I add half-n-half and grate a lil nutmeg. There isn't any cheese in mine but this is quick and easy for a weeknight steak dinner. Another version is frozen peas with butter, half-n-half, and nutmeg.
I love the story about your mother! I grew up poor, too. There were four girls and we rarely ate out. I didn't realize my mother didn't know how to make a roux! She hated making gravy and would shake water and flour in a jar when she made stew. She hated lumpy gravy!
There were some days she would make Welsh Rarebit using Campbell's cheese soup warmed up and poured over toast. We never went hungry. But the good thing about being poor is I grew up drinking milk, water, and hot or cold tea and I never acquired a taste for drinking soda. We had well water filtered through coal seams in the area so it was sweet and clean and pure (near Black Diamond, Washington state). Black Diamond was named for the coal seams.

Unbelievable texture when he cuts into it. Perfection! Spinach is full of folates and just what you want to reduce blood pressure naturally. I cam looking for spinach recipes and this one is on my list. WE are KETO and the cheese does not bother our levels but the lack of folic acid indicates even more complexity in our veggies - we are not fruit eaters. Spinach and kale, brussels sprouts and broccoli. BUT we love them all. Thank you Chef!!!

Back in the 60's at the age of seven, I lived with my dad and grandparents. My grandmother made creamed spinach at least once a week usually with Sauerbraten and spaetzles - my favorite. One day in third grade I went to the school nurses office with a stomach ache. She asked what I had for breakfast. Her expression was priceless when I told her I had leftover sauerbraten, fried spaetzles w/eggs and a side of creamed spinach. Aghast she asked what I had to drink which of course was a cup of😢 coffee with sugar and goats milk.

One of my favorite ways to eat spinach. Thank you, Chef Jean-Pierre, for sharing your recipe. And, thank you for sharing your ingenious technique with the ricer to quickly drain the water from spinach. Now, I can think of other ways to use a ricer. Like pressing roasted tomatoes in my ricer to separate the skins from the seeds to make sauce. Yay!

You know he’s a cook, because right around 914, while he’s stirring one pot, his other arm, naturally, and instinctively touches the other pan where the milk was. Now what this means is he’s used to cooking many dishes at once and when you do that, for so long, you naturally, and instinctively check the other pans to make sure they’re not burning or. at what stage they’re cooking. ❤❤
