Boiled cauliflower also works. I buy frozen cauliflower at Walmart for about $1 per bag. Even creamier if you add some chunks of peeled potatoes boiled in the same pot along with the cauliflower. High speed blender does the trick after it’s boiled. Super creamy sauce.

That's basically the typical ways it's made with vegan ingredients subbed in. Works just as well. You could also use vegan cream cheese as the base for a sauce. There's a ton of recipes online!

This is hands down the BEST vegan creamy pasta sauce! I sauté the minced garlic prior to adding it to the blender and it adds so much more flavor (you can also roast a bulb of garlic in the oven) I eat this all the time it’s soo good 😫

I'm from the states but am currently living in a small city in Ecuador as an English teacher. Eating vegan is very easy where I live however access to things like beyond meat patties, vegan desserts and other things is really hard to come by. I love pasta and a creamy vegan sauce is something I can never find here. I've made some from scratch using almond milk but it's not the same. I saw someone in the comments say they used 1 cup of pasta water instead of plain water so I did that + used a little more garlic!

Italian seasoning and tumeric I add a table spoon of both into the sauce and it makes it so delicious. Very nice thanks I sometimes make creamy sauce by using gram flour with garlic, soy milk and some tomato paste. It is rich and creamy, tasty and healthy and not very calorific. I sometimes add mushrooms with it.

Made this today cause I've had fettucini laying around forever waiting for me to get the energy to make a sauce. This was so easy. I substituted green onion for the garlic cause I have IBS but it was still amazing. Also used a fodmap-friendly vegan chicken base for the bullion. Even non-veg bf approved.
I do mine with tofu!! Of course a little more expensive than potato but my husband and I are obsessed. Add some spinach and mushrooms and a beyond sausage or two if we have them on hand 10/10

I’m not vegan yet but tried going vegan many times cold turkey only To fail miserably. So I decided since trying to change my diet that has been engrained in me since a kid that taking the long approach would be better so I started a few months ago by switching out my coffee creamer for Soy and milk for almond milk so far I’ve grown to enjoy them and milk itself almost makes me feel sick. I do still eat eggs and cheese, and meat but am trying to slowly switch those out as well My biggest challenge though has been that so many vegan youtubers and recipes always seem so time consuming and have so many different ingredients which is why I love seeing videos like this with only a small handful for ingredients.
It's was a process for me also I did it in stages got rid of meat,fish and was vegetarian before going all in. The hardest part for me was eggs and milk being in so many things that you are not aware of.
I'm too lazy to be a proper vegan. So I just have meat free days. I'm already gluten free and fodmap light and eating out is already a pain in the behind. There are already some places who refuse to serve you if you have allergies.
Omg right now I just made my alfredo pasta udon noodles ! I think you can dress this sauce to ANY pasta/preferrably thick noodles. The FLAVOR is SO FREAKIN DELICIOUS!!! I was thinning sauce with my veggie bouillion soup as I go b/c the sauce thickens up really quick when heating it. I added korean pepper flakes and my saute mushrooms, it is just unbelievable GOOD! Thank you so much for this sauce recipe! I suggest everyone to try this and taste this amazing dish! 👍❤😜

if you use cashew butter, you can actually whisk all of the ingredients together and skip the soaking/needing a blender

Just found this yummmm I also would lightly top it with some freshly roasted tomatoes and pasta sauce with Basil not a lot just a drizzle just for that extra pop of flavor. Oh I know what I'm making for lunch
