    A budget tip: At your local Indian grocery, look for the broken cashew pieces (they are packaged separately) instead of the whole, pretty cashews. You save a LOT.

    I found that making the cream twice increases the creaminess. Allow the original mix to rest for several hours or overnight in the fridge and then re-blend for a few minutes. This virtually eliminates any residual grittiness from unblended nuts.

      If you do it in the small 4 cup food processor it comes out perfect. Better then the vitamix and large food processor.

    I do use a standard blender and it works pretty darn good. I can't afford a vita mix, so a good ole fashioned Oster will work!

      I use an Oster too. I bought a vitamix but it sounds like a jet taking off in your peaceful home, so I took it back

      Blenders are funny and can't be judged by their appearances.
      I have a Blendtec that's 1550 watts with 2 blades and it does so much better at blending than my Ninja that's 1500 watts with 6 blades.

    Just purchased your The Vegan Instant Pot Cookbook and started putting a star by the recipes I wanted to make. At page 60 I discovered I had put stars on every recipe. On page 189 now and going to read the rest of the recipes before I make anything. The photography is awesome. Thanks for the quality of cookbook also.

    Cashew cream is a life saver for me. I didn't develop sensitivity to lactose until my early twenties. I can have "sour cream" on my tacos and spinach/artichoke dip without the discomfort.

    I made the basic cashew cream today, swapping the raw garlic for a head of roasted garlic for a roasted garlic cashew cream. I was eating the dregs straight out of the blender, it was so good. You are a gem, thank you for your recipes!

    I finally tried this and its honestly life changing. I can now make any flavor cream that goes on anything and its so easy.     I've been making cashew sauces for years. With a Vitamix you don't need to presoak the cashews at all, I blend mine on high for 5 min so it gets steaming hot- always as smooth as real cream. If you don't have a Vitamix def soak them.

    Love your videos! I've been making cashew cream for years and I find with a vitamix I don't need to soak the cashews. I used to make it in a regular blender with soaked cashews, It worked, You just need enough liquid and keep scraping it down. Dessert cashew cream is great for strawberry shortcake!

    what i've learned from making hummus is that ice cubes are a secret to creaminess, i can't explain it, but i now made cashew-chickpea-garlic hummus with a standard blender, not super powerful, but added a bunch of icecubes (and a splash of water) and it made it soooo smooth and creamy!

    This is actually great. I’m looking to incorporate more plant based staples in my diet but dislike that some vegan substitutes are monotonous. Can you please make a video on how to diversify substitutes so it’s more than just nuts and coconut?

    I think it will blend quicker and more smoothly if you don’t add all the liquid at once. Use just enough liquid to keep it moving (lubricate the solid particles). If you add too much “lubricant” at once, all the solid particles are just sloshing around instead of mashing up against each other and breaking up. Use the friction to your advantage.

    The Cilantro Cashew cream and Ginger Sriracha are weekly staples. I've shared these cashew creams with friends/family and they love them. I always get the comment that they look for any foods to eat with these creams because they're that good. I need to try the other ones in pdf. Thank you for these recipes!

    I'm vegan since 1 year. bevor I was 36 years vegetarian. Now I have to adjust my food since I'm vegan and thank you for all the tipps and ideas on your canal. Unfortunately here in Switzerland Cashew nuts are very expensive - $ 4 for 100g (no organic). Does anyone know if you can use walnuts as well? We have a big walnut tree and nuts in abundance. Thanks for your feedback and all the best for everyone that has read this.

    I make my cashew cream with the hand blender that u use for soups. Literally comes out the same texture as yours

    I use a cuisinart mini food processor for this and it works just the same , if not better ,because it’s not so deep and easier to scrape out .

      Hi there! Oops, I do mention it in the blog post with the recipes. They should stay good for a minimum of 5 days, but I can usually store them for a week (I just had two of them after one week and they were still good).

    I don't have a blender, but I found out that my local grocery store sells cashew butter so at the moment I just mix that with soy milk until it reaches the desired creaminess and then add other ingredients to taste. Surely more expensive than doing it from scratch, but it works well for the occasional snack.

    Do you think substituting cashews with peeled almonds would work? I can't have cashews due to their high fructans content, but this cream looks so good.

    This is a great video bcuz a really great sauce makes a world of a difference to any dish. My non vegan bf (who loves dairy 😬) is so impressed w/ cashew based sauces bcuz they're full of flavor & (healthy) richness so they're the ideal alternative to traditional dairy sauces/dips.

    All these sauces are making me drool Nisha! I've been looking for new cashew sauce variations and can't wait to try the lemon sriracha and rosemary miso one! I'll probably be adding them to all my veggies now.

    Does it make a difference in taste if you use soaked aka fresh cashews or if you use cashew butter? Just curious. I tried it with cashew butter and it was delicious.

    I loved the idea of this recipe, but had to make so many changes that it hasn't been the best version of itself 😅😅 I hope to achieve such creaminess and a tastier version another time. I mean still, it's quite tasty 😋
    If it may help someone:
    - As cashews are expensive where I live, I tried with almonds, and even though I never tried with cashews, it seems a good substitute.
    - You reaallly need a good food processor for it to be creamy like Nisha's. Otherwise its still good, but it will ve a bit chunky even with the liquid you put it in.
    - Vegeta is a great add on (but be careful about the saltiness, or it will be a bit too salty like mine 😆😅)

    I make a lemon pepper cashew cream that we love. Your sweet one looks good. I wonder if I can use this a replacement for whipped cream to make a fruit salad. It won't be whipped and it will be different, but it might make my husband happy. He misses his fruit salads. I'm going to try it. It could be good for a lot of desserts. We don't have dessert often, but sometimes you need something sweet. Thanks

      @@RainbowPlantLife I got it from a TH-camr. Can't remember his name. I'll watch for him again so I can credit him. It's basically, water, cashews, lemon, garlic pd, lemon juice, salt and lots of pepper. No nutritional yeast. I thicken it with xanthan gum. That way, I can make it less fatty but still rich and creamy tasting. I put it in 1/2 pt jars and freeze. When I make it I start with 400 gms cashews. It's a falafel dip, but it works like sour cream.

    I just make a mess trying some recipes. Big clean up now. I need to find the $$$ to get the right blender. I also need to be more careful about following the recipe measurements exactly. I love what you showed and will try until I get it right. The sauces are a very - very big key to my new vegan effort.

      Hi there! I'm sorry it was a mess, but yes, a high-powered blender is key to making cashew cream. Do you have a good food processor? That would work as well! And you're right about that - good sauces and condiments can take vegan food to another level!
