I made these last night and omg so delish! Gordon might have died with my subsitituons though 😂😂. Skipped chilis, only had dried lemon grass (steeped it like tea) powdered ginger. Had one piece of garlic sourdough i mashed up into crumbs ans mixed with ritz for "breadcrumbs". Had to use veggie boullion for the stock...But dang... it was seriously so good!!! Cant wait to remake when i have all the actual ingredients. We're dairy free due to allergies so this was such a gem of a recipe to find!! Thank you @gordon ramsey!

the best to do that is, once u put the coconut milk let it boil for 8-10 min. then take out the meat balls and let it continue boiling until the coconut milk is a little thick its texture. then put back the meat balls let it simmer for 2 min.
You could add a dash of corn flour to thicken the broth the moment your coconut hits the pan to speed things up a bit. I don't think GR is a big fan of thickeners though.

Or you could use a trick off Julia Child’s recipe for osso bucco - use thinly julienned lime and/or orange skins, but make sure all the white/pith is removed. It’s not quite the same flavor of lemongrass but it does give you an acidic lemony kick that’s tempered nicely by the creamy sweetness of the coconut milk. That’s what I did since I didn’t have any lemongrass on hand. Tamarind concentrate or pomegranate molasses also work too. Just bear in mind that pomegranate molasses may be too sweet for some so add it little by little, cautiously. For the tamarind concentrate add it half teaspoon at a time, in very small increments. Lemon juice will give these a bit of a kick too if it’s needed.
I make Mexican style meatballs 1cup choped onions 4garlic cloves choped 6 large jalepnos seedless choped hand full of choped cillatro 1lb beef 1lb pork 1lb chicken I get a pack of stuffing and grind in food processor add 2 eggs to bind grounded meats make my meatballs you can make a soup formula or eat with pasta or spaghetti vwith meat sauce. I would just use stewed tomatoes choped onions garlic let's stew then put in blender pour back in pan cook add meatballs and let heat put a package of frozen mixed veggies let cook and set and enjoy.
the coconut milk balances the spiciness. There is a system in asian countries where when they prepare barbecues (spicy), they will also prepare fruit slices ('cold'). next time you prepare something spicy, add something to counter it (like coconut milk, yoghurt, etc)
Gonna guess that chicken flavor's smoothness goes much better with the coconut milk to soften the beef taste of the balls themselves, otherwise you might as well skip that whole thought.

How does his broth at the end look bright orange and as smooth as soup? Mine was darker and had bits of spices in it, didn't look quite as appetising lol (although still tasted good).
It looks like he made a 'well' in the middle, maybe by pushing the lemongrass etc. the the side, then just used the sauce near the top. If you want a smoother sauce you can strain it through a sieve, but that's not really homestyle.
I usually make the meatball ready and put it in the fridge if i wanna cook it within 48 hours, this way they hold themselves and when it s cooked they r tender But why not making sauce with tomato for meatball ?
