I use corn meal in my Salmon patties. Panco is better but Too light for something like Salmon. I do use fresh green onions and parsley. I would never use anything in a jar when it comes to the onions and parsley.

I have tried your recipe using steamed fresh tuna instead, it was amazing. I got all fresh ingredients here in Indonesia. It was amazing, moist inside and crispy outside. My son just loved it. Big thanks Gordon.
Yogi Tjiptosari: I don't think tuna is a fish local to Indonesia. In Malaysia, where I live, not so far away from you, tuna is pretty expensive and (as far as I know) only available frozen or canned. Maybe we should try Ikan Tenggiri - I think that translates as Spanish Mackerel, caught fresh here. However, I haven't tried it yet.

If you have a cat, save the water from the tuna can in a large measuring cup, rinse the can with water afterwards and pour into the cup, add a bit more water, stir it up and pour into an ice tray and freeze. They're like little popsicles for cats. My Siamese loves them. One can makes about 1 tray of ice cubes without being too diluted.

Nah, scallops are done even shorter on a seriously high heat (smoking hot), in my family we refer to it as pin-pan. You need that for it, otherwise they just go chewy. But yeah, those fishcakes didn't look they were taking very long either.
Tip....if you don't like fresh coriander...just use parsley instead (personally i don't like fresh coriander)... for more crispness use pizza rice flour before frying (Greek variation)

I didn't make this tonight but it did inspire me to make tuna fish cakes with what I had in the house. I used ground coriander instead of fresh and I put some sweet chili sauce into it as I had that in stock. I did not have water chestnuts but I always have fishsauce. Well the point is that I made tuna fish cakes with what I had in stock and what I thought might taste well. It was kind of a proof of concept to me. I had no idea you could make something this good from a can. But if a 3 star chef is allowed to cook from a can then so am I :-) After tonights good food I'll defintely try and replicate the chefs version.

I have cooked every single of the 100 Recipes of his Ultimate Cookery course, and let me tell you, this was one of the best. These fishcakes are SO packed with flavor and different textures, it is just incredible. You should make them if you can, it is absolutely worth it

In Mexico it was difficult to find Water Chestnuts so we substituted the Water Chestnut with Jicama. Later, after some searching, we found a tin of Water Chestnuts. I have to say, I preferred the taste of the fresh Jicama. Otherwise a fantastic recipe. Maked again for the second time with the Water Chestnuts. Definitely a keeper recipe, but next time to be made with Jicama.

I didn't make this tonight but it did inspire me to make tuna fish cakes with what I had in the house. I used ground coriander instead of fresh and I put some sweet chili sauce into it as I had that in stock. I did not have water chestnuts but I always have fishsauce. Well the point is that I made tuna fish cakes with what I had in stock and what I thought might taste well. It was kind of a proof of concept to me. I had no idea you could make something this good from a can. But if a 3 star chef is allowed to cook from a can then so am I :-) After tonights good food I'll defintely try and replicate the chefs version.

I have cooked every single of the 100 Recipes of his Ultimate Cookery course, and let me tell you, this was one of the best. These fishcakes are SO packed with flavor and different textures, it is just incredible. You should make them if you can, it is absolutely worth it
When this started I just knew Chef Ramsay was going to say "And now feed this to the cat. We are using fresh tuna" but no. He didnt and turned a 2 dollar can of tuna into a 15 dollar app. Nice.

I use Salmon and make Salmon patties. The key is making sure the oil is hot when cooking fish cakes or patties. Use fresh green onions and fresh parsley. Those look wonderful!

In Mexico it was difficult to find Water Chestnuts so we substituted the Water Chestnut with Jicama. Later, after some searching, we found a tin of Water Chestnuts. I have to say, I preferred the taste of the fresh Jicama. Otherwise a fantastic recipe. Maked again for the second time with the Water Chestnuts. Definitely a keeper recipe, but next time to be made with Jicama.
I like the use of hands while cooking. It just connects you with the process , the journey of food from farm to kitchen.

This isn't baking, so it doesn't have to be ultra precise. Guesstimate, and then next time you can recall "it wasn't salty enough/it was too salty last time. I'll use more/less this time." No complicated recipe to keep track of:
- drain tuna
- mix in flavorings & seasonings
- heat pan. sear briefly
- remove.
