I used this recipe but I used leeks instead of onions (I had one and not the other.) They were delicious but I couldn't get them to all stay intact as they cooked. I think I may have used too little or too much milk. Maybe I am too rough with my balls (if I didn't say it, someone else would.) Maybe I just need more practice. Regardless, I always wanted to add meatballs to ramen to see how it would taste and it was fantastic. I had plenty of meatballs left so I will try some other combinations. Just made this and I cut a lot of corners. Dried minced onion, powdered garlic, ground up porkrinds for bread crumbs, you do what you gotta do sometimes. Still turned out 10X better than store bought 👌
@@jpshuijb you cooking in the oven? Just lower the temperature and let then cook longer. Take 50 degrees off the oven add 5 ish minutes. Or lose a third of your stovetop heat and when you no longer see pink on the outside they are just about 1 or 2 minutes from being done

Sear meatballs in olive oil for 1 minute 20 seconds stirring so all sides of meatball are slightly crusted. Bake in oven at 400° for 10 min. Take out of oven and sprinkle some marinara sauce, mozzarella cheese and Parmesan on top and bake again for 2 min until cheese is evenly melted
I made these without the breadcrumbs because my mom don’t like breadcrumbs in her meat. It still turned out good. The red chili peppers gave it flavor and I never used them but my husband loved it cuz he loves spicy. But this weekend I’m going to use the breadcrumbs just to see how good it taste.
Try panko bread crumbs as a substitute for traditional bread crumbs. They still give structure without giving the same presence/texture as regular bread crumbs.
These came out amazballs!!! I used my Meatball Maker from Bakenfry and made them perfectly shaped. Also we ate them and I stuck the other half in the freezer. It was a big hit!
I fried them a bit and then put them in the oven for an extra 15 min. AMAZING! I always used to add an egg (mom taught me so) so I put an egg in anyway 😅 just out of habit. They came out great ❤

Get a good steel for sharpening knives and watch Gordon's video on how to do it. I have a set of knives (Taylors Eye) that were a bit dull. My chef's knife from that set is now razor sharp. Every time you use a knife, always sharpen it first. Never use a dull knife, it could slip and give you a nasty cut. A sharp knife, if you do cut yourself will be clean and heal very quickly. Start slow and as you build confidence your slicing will get quicker. Happy cooking.

The only thing I do different with my meatballs is I add egg, I moisten the bread crumbs with water, not milk. I will try milk instead. I don't use chili. I will try that. I do fry mine as well. Thank you Chef ! They look delicious

Mixed all together. She didn't brown the meatballs but simmered them for about an hour. When done they were pinky in the center. Now, my mother and aunts, all from Italy, did everything from memory. After she passed away, it took me years of trial and effort and help from my wife and brother-in-law to get the recipe more or less right.

Just tried this, worked really well, keep the meat balls a good size, 4tbs milk and 2 or 3 cuts of bread for the crumbs, and the jobs and gooden.

I cheat. I throw the garlic & onion into a processor & let it do the mincing for me.
