  • Come along with me on another experiment in shelf-stable egg preservation! Today we're going to make pickled eggs, but not the kind you need to keep in your refrigerator.     Over time the strong vinegar will eat the lids that come with the jars, either put wax paper to protect the lid or use the plastic lids

    My Mom always kept a gallon jar of pickled eggs sitting on the counter. She never refrigerated hers. I grew up eating them. Delicious!

      Well, to be honest, they could have been those "zombie eggs" people are talking about on Facebook. I'm sure there's some kind of conspiracy theory surrounding them, too. Maybe they're "caravan eggs" or something hidden in the non-existent basement of a Washington, D.C. pizza shop. There could be some kind of zombie conspiracy going on, though. If I remember right, Twinkies were a long-term food-ish item that showed up in a zombie movie. But, on the more realistic side, the old bars around my rural community always had these large (seemed like more than a gallon) clear glass jars stuffed with beet-pickled eggs that the boozers could snack on for "ten-cents apiece or two for a quarter." Believe it or not, they sold many of the "two for a quarter' specials there.@@analarson2920

    My fave kinda of eggs! I pickle them with apple cider vinegar, pickling spice, celery seeds and salt... These and pickled onions with a pint of dark beer... Heaven!! Love 💖

    I have for years used my rice cooker and steamed them. Works really good especially on Easter eggs.

    Those eggs looked so good. My mom used to make them for my dad's neighborhood bar. I think she heated the vinegar. She would add a little beet juice for color, hot pep ppl or and garlic clove or two. I've made them before and enjoyed having them available for a quick snack. I'll be watching to see how they are in 3 weeks.

    These are on the counter of every other pub in the UK, sold to the public. No processing needed, easy peasy! Try adding chipotle! Delicious!

    Once we started using our Instapot to hard boiled egg we have never looked back! They peel so beautifully every. single. time. Looking forward to how your eggs turn out. I like to put eggs in leftover cowboy candy brine or dilly bean brine and leave them in the refrigerator. Delicious!

      Same! Even if I never used it for anything, but for eggs, I'd keep it. Lol I use it for lots of other things too though, so even better. Lol

      It's the same way for us! Honestly, I'm not super big on the instapot but I absolutely love it for hardboiled eggs.

    Looks good! But I’ve noticed a lot of recipes cook the brine to dissolve sugars/salts and put equal amounts of vinegar and water. Some will go a little more vinegar than water. But I bet the best brines are heated on the stove! Thanks for the video.

    I learned this trick from an old timer. Just crack the wide end of the egg with the back of a spoon and place in water boil 10 minutes. The shell slides right off!

      Leaving the eggs out for the day to bring them to room temperature works for easy peeling, too. They won't go bad. The Japanese don't refrigerate their eggs. Funny to see eggs sitting out on a shelf in a Japanese grocery atore.

      @@trailbadger2345 Most of Europe doesn't refrigerate eggs either. American ones have to be as they have their protective coating washed off before they end up in the store.

    Now pickled eggs is someting i have made for many, many years unlike most canning. Pickling and chuckneys are very common in the UK. My biggest problem is I boil a bunch of eggs and my boys all see them and go oh can we have egg majo and then there isnt enough left to be worth pickling :)
    I've never ever known them go bad, the vineger makes it very safe to be honest as long as the eggs are under it of course. They are shelf stable though I would say they do get more vinegary and softer the longer you leave them so I would say months rather than years. Eventually they almost start to desolve and the vinegar goes cloudy. I love adding beetroot to them which dyes the outsides pink, the longer you leave the the deeper the colour goes.

    My instant pot is my best friend for boiled eggs. My Mom made this for the local bar when I was a kid about 50 years ago. We used a large can of pickled jalapenos and top it off with vinegar. They might last 2 days at most. Can't wait to see how yours turn out. TFS 👍

    I like the beet pickled eggs. Unfortunately I can't eat high fructose corn syrup. I have lupus and it triggers skin outbreaks. I make them with plain beets which introduces water and reduces the acid needed for shelf stable. I am single and retired so I just make them in quarts but refrigerate. They are stable that way, with 100% organic cane sugar and a two to one ratio of vinegar to beet juice or water. Also apple cider vinegar adds another depth of flavor. Just a tip for other folks like me.

      I actually owned a pub and had shelf stable pickled eggs on the bar. I kept my purple eggs in the fridge and customers tried them and liked them better but my bartenders complained about the hassle 😂

    Hands down the best pickled recipe is from TH-cam channel Living Traditions Homestead. Try their spicy pickled eggs recipe! So delicious! Plus makes great egg salad!

      I was saying to myself "I don't have those ingredients. But, I do have everything to make them like Sarah does." I never tried making egg salad with them, but did use them in green salads. Now I have to find that recipe (it is around here somewhere) and make more and then try the egg salad.

      Pickled eggs are so versatile. I've put red pepper paste, tumeric paste, fresh dill, bay leaf. Try different things. Best way to preserve.

    The 5-5-5 method for boiled eggs in the Intapot is awesome. Five minutes cook time - Five minutes resting (in the instapot) - Five minutes in an ice water bath.
    How much was your "touch of sugar" that you added to the vinegar? You didn't mention the amount or show it being added. Thanks

    One of the best features of the Instant Pot is how great the hard boiled eggs are! I never boil eggs on the stove. So easy to make deviled eggs now also.

    Put 1 tbls of baking soda in the insta pot b4 you boil your eggs & the eggshell slips right off. This is especially true for those fresh farm eggs where the shell seems to be glued to the egg! 5 minutes high pressure, then 5 mins in the pot b4 releasing the pressure. Place the eggs quickly in an ice bath to stop the cooking process & you're good to go.

    I put hard-boiled eggs in the empty pickle jars with the brine left in it in the garlic and put them in the refrigerator within three or four days you got yourself some pickled eggs to eat just recycle the pickle juice from your pickles

      I’ve heard that canning pickled eggs can make them rubbery. How do you prevent that or do you use the eggs in recipes instead?

    as long as you are using vinegar you're fine with sanitation. Wash your hands and keep your fingers wet with vinegar, you can use your hands just fine. been doing that for years and no issues ever with food borne illness

      If you are nervous whether they will be shelf stable or not, refrigerate them. They keep a long time.

      Try egg water glassing. All over tube on how to do it. Do not wash your eggs.

    Ive got to try this, Rachel! I’ll have quail soon and I’m certain it’ll be a similar preservation method. I have the same Pyrex yellow bowl. And yes to the instant pot!!

      Pickled quail eggs are delicious! A little tip, use vinegar water to dissolve the shells. Then you can just pop them out of the membrane. 👍🏻

    Yes! I will ONLY do my eggs in the instant pot. Makes the IP worth every penny to not shred the eggs when I try to peel them! I’m curious what you’ll think of the eggs. My husband loves pickled eggs.

    Love them, do them several times a year. Also turmeric eggs and mustard eggs. Last as long as no one eats them all.

    You don't need to spend the money for an Instant pot. A plain old and cheap pressure cooker works exactly the same on your stove top. Six minutes once the jiggler is rocking. Cool down with a little cold tap water so you can handle the eggs. Quick crack and the eggs fall out of the shell.
    I like to add jalapeno and onions to my pickled eggs..

      Peel the warm eggs in a basin of bicarb water and the peel slides off! And removes sulfur tastes🙂

      In general, a quart jar holds about 1 dozen eggs. so a 1/2 gallon should hold 24.

    I am planning to try these and glad They turned out great. Your son was the final authority on it and he said you did it correctly and he liked them. Looks fairly easy to make. I have never pickled anything. Except I just made fire water from Doug and Stacy channel and it has only been about a week.
    Watch Doug and Stacy off grid, if you don’t already. They have been talking about the chickens not laying eggs and why.

    Saw the "reveal" with your son. I can't wait to try these. Just wondering how long you think they are shelf stable for and do you put the pickle pebble back in or do they stay below the liquid once they've been pickled. Oh, yes, how much sugar did you add?       Leftovers from the summer. I mixed the spices together myself. But any pre-mixed will work.

    I haven't made them myself, but I got some a friend made. She used beet juice and cinnamon or cloves. The eggs were delicious, but my stomach didn't like them too much.

    So you dont have to boil the jars to seal the lids?Just tighten them by hand?I want to try this and don't want to screw it up.Thanks.

    If you put salt in your water while you're blowing your eggs they show really easy

    I did my pickled eggs with 50/50 vinegar and water and then water bath canned them. You can them the same time as any other pickle.

    Did you use a plastic lid or the metal lid? Just wondering if the vinegar would rust the metal one.

    When you say 100% vinegar, do you mean just regular distilled vinegar from the grocery store? Thank you for all your videos!! I love your channel so much!!

    confused when you said 100% vinegar. Do you mean pickling in pure vinegar with no water added? I ask because at the local building supply store, they sell 35% vinegar, and most vinegar we get at the store is more like 5% (??? correct me if I'm mistaken). Love this recipe. going to try it in my pressure cooker/instant pot!! Thanks. New sub.

    I make pickeled eggs I put in my eggs an 1 jalapeno basic brine taste very good try it do it just like you did.
