  • Today I am making another batch of our FAVORITE pickled eggs! Below is the recipe and I sure hope yall enjoy them as much as we do!

    Cowboy Candy Pickled Eggs (Makes 1 gallon)
    -Roughly 3-18 packs of eggs (boiled and peeled)
    -2 cups ACV
    -1 cup white sugar
    -1 cup brown sugar
    -1 tsp tumeric
    -1 tsp garlic powder
    -1/2 tsp cayenne pepper
    -1/2-1 cup sliced peppers
    Place peeled eggs in a glass container. Combine all the above ingredients except the eggs, simmer until sugar is melted. Pour over eggs in container, this will not fill the gallon container. Top off the gallon container with white vinegar. Slowly shake to combine. Refrigerate. Pickled eggs are best if you allow them to sit in the brine for at least 1 month, the longer they sit the better they are. Enjoy!

      Tip #1: Always crack the fat bottom of the egg first, trying to push that gas bubble through the membrane.
      Tip #2: Tap all over the egg really well, trying to get small pieces, then rub between your hands lightly, but firmly, to loosen shell all around.
      Tip #3: Peel under water, either running lightly, or in a bowl of tepid water. So much easier.

    As a chef of over 40 years and having cooked and peeled 10’s of thousands of eggs you’ll find if you put the raw eggs into a rolling pot of boiling water they will peel a awful lot more easily. In fact you’ll find the shell with vertically fall off.

      Do you mean get water boiling first then dropem in at room temp or cold ?.

      @@stephencrisci2905 If you put them in cold the shell on at least one or two will crack, they need to be a little warmed up first. You can use warm tap water to speed it up.
      And use an egg basket to lower into and raise them out of the water, they all go in together and you'll save time with better results.

    I promise you this. If you put your eggs in already boiling water, you can peel day old fresh laid eggs. Get your water boiling into rolling boil then add your eggs cook for 20 minutes and then do everything else you just did and I promise you the shells will fall right off them. The trick is putting them in boiling water, not bringing the water up to a boil with the eggs already in it. I’ve had chickens for 30 years and I just learned this.

      Supposedly the trick is to put them in ice water bath to make them easy to peel.

      I do the same thing. bring your water to a boil then add your eggs for 15 min.. then put it under cold water from your tap for about 5 min then add ice to the eggs let sit for 15 min then you have easy peal eggs. Enjoy.

    Just the simple interaction with your daughter makes me smile. Knowing you take the time and make an effort to include your children in your everyday things is something to cherish. I wish my parents did that for me. I will definitely try this recipe. I wish the best for you and your family.

      Not sure how that’s a sign of a southern cook? I’m a northerner and usually have several gallons of each in the pantry. Lol. But then again I may not be a normal northerner. 😂😂😂 Growing up we always stocked surplus items: salt, sugar, vinegar, flour. These were staples that basically went into every thing else. We filled the freezer with fish, venison, apples, berries and rhubarb. All stuff that could be found naturally on our homestead. We bought very few groceries. We even made our own maple syrup and maple sugar. It was a great childhood.

      @@michiganmoto7687 Sounds like a great childhood and way of life. I'm from the north and always have several kinds of vinegar; cider and white always gallon size. Generally southern cooks use much more of it in their dishes and style of cooking greens and such. Homestead living would certainly be beneficial these days. I'm guessing you are high up in "The Mitten" where trapping, hunting and self sufficiency is more prevalent !?

I’ve traveled a lot for work but never got to enjoy any of the places I went. Now I want to do it on my own time and stay as long or as little as I want somewhere. Lol

    I have to thank you for this recipe. I made them when this video came out and just cracked into them today. They’re amazing! I even took a few to the next level by taking the yolks out and deviling them, putting the yolk mixture back in the white, and topped each half with one of the picked jalapeños. Oh my word, they were absolutely delicious!

    Maggie is the cutest little helper, you can tell she loves to help her momma, my mom used to make pickled eggs for Easter every year when I was growing up, she used pickled beets juice and they were purple. Enjoyed the video.

    After the hard boil, I like to bounce the eggs around in the emptied pot to crack the shells before dumping in the ice bath or running cold water; they peel so much easier that way.
    Another thing I do is keep all the eggshells, dehydrate them, then grind to a powder and add that back into the chicken feed for free calcium.
    BTW, your assistant is awesome and I'm sure she'll be making full meals soon but still standing on a chair to do so.
    Great thing about the brine is that it can be made ahead of time and stored in the fridge. I save all of my Cowboy Candy brine to be used in the next batch.

      I have cooked eggshells and crushed them and put under tomato plants. Tomato plants need calcium.

    I just learned about steaming the eggs instead of boiling them the Instant Pot works great for this.. our fresh eggs peel so much easier this way! Wish I had known about this method years ago.

      I put in ketle and bring to boil 2 min and turn off and let sit for at least 10 min or so - then rinse cold water and shake against kettle with water cracking them to get shells loose

      I steam mine, have a large stock pot with a steamer insert, generally do 18 at a time. I steam them for 18 mins, they come out perfect every time, tender whites with good body and soft yolks with no greening at all. Follow that up with a 5 min soak in cold water and they peel very easily.

    Howdy:
    Up here in NE Pa. we make our pickled eggs the Amish way. We boil them like y'all do, but after we peel them, we make a brine of 1 cup White Vinegar, 3/4 cups of sugar, and the juice and pieces of 3 cans of Sliced Red Beets. Everything else is just like you do it. We let them set in the fridge for at least 2 weeks. It sounds crazy to folks who never heard of it, but up here that's the only way we do them. I've seen pickled eggs done without anything BUT the vinegar and sugar, AND I've seen them done with just Vinegar? The ones done in just vinegar get like rubber balls, very tough and chewy. I guess some folks like them that way, we don't.
    Our oldest son makes Cowboy Candy, but not the pickled eggs like yours. I'll have to send him this TH-cam video.

      Red beet eggs that’s what I grew up eating. My mom’s family is Pa Amish. She’d make them every holiday and shoe fly pie. I still carry on the tradition.

    I LOVE pickled eggs. I have always bought the gallon of Penrose Sausages and after we eat them all all you have to do is fill the jar up with hot boiled eggs. And OMG! My kids love it. 😍

    Agree with previous comment about putting the eggs into boiling water and they will all peel easily. Try a quick test with three eggs and you will always do it in boiling water after that. Like the fact that you are teaching your child how to do things, that is awesome.

    Thanks Meagan. The way I peel my eggs is to rap the pointy end on the table, flip it around and rap the rounded end, then gently roll the egg on its side one complete turn. Don't roll it too hard or the egg will split. This method works for me even with fresh eggs. Much Love ❤

    One of my favorites is just using the pepperoncini juice once I'm finished with my jar of pepperoncinis. But I've use lots of different mixtures. This spring I'm going to try and smoke some eggs then pickle them. They're awesome that way!

    I've tried every way in the world to peel eggs. The best way for me is to Crack the shell all over and use a teaspoon and start at the air pocket and go between the egg and membrane and the shell will slide right off. Try it and see if you like it. I love your videos. Very informative.

    Thanks for this. Something that works for me is to slightly crack the round end before dropping them in to boil helps release the egg shells very nicely.

      Yes, snapping the membrane makes peeling the eggs so easy. Lightly tap the round end of the egg with a metal spoon just not hard enough to break the egg through. You will hear a popping sound. ❤

    Google spoon tap for making eggs easier to peel. You basically tap a spoon on the bottom of the egg and you'll hear a snap, what that does is break that membrane under the egg shell, then you boil them. Don't do it too hard, but sometimes there might be a fine crack, but not enough for the egg to come out while they are boiling. When they are cooled off you roll them on the counter to break the shell around the egg and they come off super easy after that. After I saw that, it was a game changer and it works. Makes making hard boiled eggs so much easier. You'll see :-)

    I used to boil old eggs eggs only . Now I do them in my Insta pot in a strainer basket. I use fresh extra large or jumbo eggs . Add 3/4 cup hot water, high for 1-1/2 minutes, off for 10 minutes. Should lose pressure on its own. Then into cold or icy water. Easy Peel-eeezy!

    Your daughter is so cute I have a 4 1/2 year old daughter she loves helping me cook and pretty much doing anything she's always sticking by my side. She always says she wants every day to be Daddy Daughter Day 😊

    In hot weather on road trip I simply put boiled eggs in a jar of dill pickles juice with pickles out ate them for weeks in very hot weather very good and still around thirty years later 😅

    I stumbled onto this idea when making cowboy candy. We made too much brine so we just added boiled eggs to it in a half gallon jar....really good!

    Peeling eggs under running water goes a lot faster. You can place a colander to catch the shells from going down the drain.

    To peel them fast and easy try this...put the egg in a pint Mason jar with a little water and shake it...the shell comes off in about 2 seconds...works like a champ...makes peeling eggs so fast

    Lady you gonna get me kicked out of my house 😂😂😂 When I read the title cowboy candy pickled eggs I thought to myself that sounds delicious. But I know my husband and my kids and they are going to say oh God, who has Mommy been watching on TH-cam😂😂😂😂 I can hear them now. But as soon as I get a chance I am going to be trying this.

    I have been trying different things with my fresh eggs...found the best for all of my eggs...poke a tiny hole in the round end before your normal boiling process and after trying so many other suggestions this is spot on advice

    My wife wont make me pickled eggs anymore. She said they make the house smell bad. You can't even smell them eggs when they are in a jar. I don't see where she gets that idea.

    I've been canning cowboy candy for more than than 12 years and always had leftover broth which I used to make pickled eggs, pickled garlic and (sliced) cucumber pickles. Because of the high amount of sugar, the family wasn't a big fan of the eggs but I love your idea of reducing the sugar and adding white vinegar. Thanks for the idea and I look forward to trying it!

    I use a mix of pickled beet juice apple cider vinegar and sugar it makes pretty good eggs.Thanks for your recipe.

    The way my mom taught us was dip them in a pan of water as you peel em. Worked for us years!! Take care!

    I love pickled eggs! I’m glad I came across this video! I will be making them! And I’m going to go ahead and tell you how I peel my eggs! Put hot egg in a clean drinking glass and shake! The peel comes off very easily!
