    i water bathed 6 large jars yesterday and did a big gallon jar for the fridge; lets see how it went. Never had them in my life as I always thought it looked like a science experiment in my grandmothers fridge and was terrified as a child. My husband grew up loving them so I made some for him. I may try once they have cured in the fridge for a few weeks.... 61 yrs old and willing to try anything once; on my bucket list of things to do ....lol. Pressure canning was also on that list and got over my fear and now can meats, veggies and sauces. Love preserving foods now

    Our ancestors did it. So why not! I have canned for over 30 years and always wondered if I could water bath other stuff. Thank you for the heads up! I saw the one with the older Ball Canning Book and I will be ordering it! Thanks for the heads up on it!

    For your readers who wish to do smaller batches of brine, based on what you said, "15 cups of vinegar : 0.75 (3/4) cups of salt". And by extension, to every cup of vinegar, add O.05 cups of salt, (1 cups of vinegar : 0.05 cups of salt) - which would be 2.4 tsp. of salt per cup of vinegar. FYI.

      You're better at math than I am! :) I was just going to divide the recipe by 3 and use 5 cups of vinegar and 1/4 cup of salt.

    what i dont get its how do the 5 gallon jug of pickled eggs on the counter in a bar stay good unrefrigerated for what seems like years?

      Because the eggs are preserved in a acidity, the vinegar. Its like pickling unions

    I've often wondered about canning eggs vs. fridge method. Been canning for over 35 years, thanks for proving it can be done!! I know that the brines I use call for water & vinegar, but if it isn't broken - don't fix it!! Great info..

      Unfortunately because it is a non-USDA approved recipe there is no shelf life. However, I have eaten mine up to nine months.

    Thanks for the video. I'll be canning eggs for my 2 month commercial fishing job in AK. Eggs are not that easy to find nor are they inexpensive in Naknek Alaska so I'm going to bring my own.
    Also, I am a huge proponent of keeping our lives in the private domain, leave the public domain for those doing direct commerce with the state. So the alphabet agencies named can take a long walk off a short dock.
    Lastly, my compliments to your husband and the parents that made you, you're insanely gorgeous!!

    Love your videos! I just learned to steam fresh eggs for 18 minutes, cool with water and peel comes off easily. Start at the top of the egg where the membrane is. Magic!!

      I steam my eggs as well. I have a little egg steamer. I pop the eggs in, 14 minutes later the buzzer goes off and the egg is perfectly cooked and the shells come right off perfectly ( most of the time.)

    I googled morton canning and pickling salt.
    It should be sold as pure salt.
    There is absolutely nothing special about this product.
    Use any salt.

    Questions: did you use hot brine & hot jars?
    I just made some for the first time and they turned brown in stripes like they'd been scalded and although they looked safe to eat they were VERY chewy - way overcooked. Thankfully it was a practice run with just 8 eggs (4 didn't pass the peeling stage). They were very fresh farm eggs, day old at the most.

    I made red beet eggs and pickled cabbage just for the fridge and they self sealed without using a water bath. Perhaps I will try your recipe complete with the water bath part and just keep them in the fridge to be on the safe side. I don't think I would be able to not eat them right away anyway. The longest the refrigerator pickled eggs last is maybe a couple weeks because I can't stop eating them...

    Thanks for the video but I got one question so what happened if I use a weird shape egg that has has a few cracks on it. I already made a batch and some of those eggs have cracks on it. I haven’t opened the jar yet and they’re sitting on my pantry for the last seven days should eat it or not.

    Thank you so much for this video. I have done the fridge pickled eggs in full vinegar brine, the vinegar was a little too strong for our liking. I have now tried the canned pickled eggs under your instruction. Now we are waiting for the taste test. So pleased you posted this long term storage video...Jo

    I think the USDA can't even control standards for anything. I trust what my Great Grandmother did. I am still alive..Right? Careful is good. FDA is an unelected entity trying to tell us what they think is safe. It is also more complicated and more expensive. (By Design?) Most the time the FDA drops the ball anyway. Ty for these videos my GGGrandma is dead, so I can't ask her😢😂🎉

      My feeling is how many centuries has the Amish and Mennonites been doing this with no incidents.
      Do you want any? I have no trust for what the FDA says.
      I have a science degree and specialized in sterile, pharmaceuticals, and microbiology, and I do not see anything wrong with this process

      Sorry about the audio. I am a new youtuber and we learn on our own for the most part. I had a camera that had to wait exactly 16 seconds before it would pick up audio. It took sometime to figure this out. But with trial and error I've learned.

    Thank you! Super easy! A the places I looked for canning eggs, led me to here. So thank you! My chickens are laying so many eggs. So I'm greatful to find a way I can store them longer, in case SHTF.
    (Also if you took your garlic cloves and put them in a shaker, like 2 cups together, or a container with lid, and shake them, the outer part of garlic clove comes off super easy) thanks again!

    I dont see any point eating eggs a week later when they keep that long, and taste better when not pickled. Pickling is to me for long term storage

    I make them all the time. I have about 10 different ways. Short term "cause I eat them. How long do they last when canned? They look delicious. And you use no SUGER!!! A plus. Please share. Thanks.:)

      The eggs are very vinegary lol. But I like that kind of taste. They can last about a year. Sometimes I will add hot sauce and a splash of lime when I open them and let them sit in the fridge for a couple of days. Game changer! 😊

    My chickens are over producing.... So, I can all kinds of veggies from my organic farm. I learned that I am not supposed to can pickled eggs... HOWEVER, I am going to do it! Question, are the eggs cold when you are putting them in the jar AND are you pouring in hot pickle brine over the eggs. If I can get away with not having to pack the eggs hot that is great.... and just use hot pickle brine. Thank you for posting this video. I have about 50 dozen eggs in bushels aging right now so they will peel!

      I try to pack the eggs hot if I can with hot brine. You can also water glass eggs as well. That's another really good option if you have an abundance of eggs.

      Do you reheat the eggs once you let them sit in ice? If so how do you reheat them? What temp do you get the water up to?

      @@fmoon3079 They are likely still a bit warm. The ice water especially helps with loosening the shell from the egg so you can peel it perfectly, without nicks like in the video. My eggs never turn out perfect like that.

    Found your channel recently. Really enjoying it - love you, your presentation & style, your recipe (had real problems with your sound in this vid), but "hate" your unbound hair. (You don't need it down for food vids - you're GORGEOUS.)
    Grew up in a household with a father that would refuse to eat the food if he found a hair in it (with 6-7 or us others around, ALL with long hair (it WAS the 70s), we learned early to tie our hair/ long beards back and examine our clothes for stray hairs. Worked for years in the food service industry at 5-star hotels, with the same rules. Had, personally, the unfortunate experience with finding a long, blond hair IN MY MOUTH when I went out for dinner once, and, since I had short DARK hair then, it wasn't mine. UGH.
    Please, fellow vid presenters/ cooks/ chefs/ servers, TIE YOUR HAIR BACK BEFORE you start shift, AND, CHECK EACH OTHERS' CLOTHING FOR STRAY HAIRS AS WELL. ❤

(Nigella Lawson cooks the same way - gorgeous woman, good food, but UGH at the thought of her hair in food.) BTW, I ALSO once found a nail clipping in my forkful of food IN my mouth, when out at a restaurant for dinner - I PRAYED it was from a finger, and not a toe... I almost WRETCHED in public as I fished it out of my mouth & threw it on the floor. I guess YOU have never had this experience - at home, or out, or worked in restaurants/ food service. Such hair-in-mouth, etc. experiences, NOT fun. Agree, though, you do you. Cheers!

    So you don't add any water to your brine? I've seen other cut the vinegar like 1/2 vinegar and 1/2 water. Just double checking.
    Also when you used the APPLE CIDER VINEGAR wirh the white vinegar did you do half and half with that?

    Ok, so Ive never made pickled eggs because they're weird. Hardish & rubbery & waaaay to much vinegar for me. Is there a way to make these without all of that vinegar? Bleh, bleh, bleh. LOL! Love hard boiled eggs & really want to make these, but Im being hard-timed by the amount of vinegar ~

    This is an unsafe technique. According to the Nation Center for Home Food Preservation- There are no home canning directions for pickled eggs. Pickled egg recipes should be stored in the refrigerator. Pickled eggs should never be at room temperature except for serving time, when they should be limited to no more than 2 hours in the temperature danger zone of 40 to 140 degrees F.” Botulism has occurred after making pickled eggs improperly. Furthermore the Manitowoc Extension Service in Wisconsin put out a newsletter in 2022 emphatically stating “Do Not Can Pickled Eggs”. Refrigeration is the ONLY safe method. Do your own research.

    I am thinking of Keto pickling eggs for long term use. I live at 1100 ft elevation.
    How much time do you think I should water bath?
    I live in Texas so we have heat from May to October. Storage would be at 74-78 degrees.

    So why can't we use damaged eggs? Why will it take longer for the flavor to absorb at room temperature?
    Educational videos should have explanations. IMHO. Unless you don't know why... then that should also be stated.

    Thanks! Great tutorial. Not to nit-pick, but the second your jars are exposed to open air, they are no longer sterile. I learned this growing mushroom spawn. Sanitized, yes. But not sterile.

    I could give a hoot, but the FDA or whatever say about canning. I prefer old-school. I think they know more than the government does. I’m Not on you. It’s on them. I Don’t trust them at all. Thank you for the recipe.

    Well, you're so cute and I like how you're doing that, but it's no different than anybody else. That doesn't you water bath that you clean your jars? On the rinch, we hop bathtub and that's itip or charge your steroid. And then we pour our eggs in hot liquid in and memory salad. Then we put it on the shelf.Never, ever ever in my grandmother to her.Grandmother have water bathtub so honey.I think you do grbut.I still can't do it because I have to do the old way.I'm in my 70s.I'm I already told my kids that but I sure think you're cute and I love your little show

    Just a suggestion if you’re going to use apple cider vinegar, don’t use the raw vinegar because you’re wasting your money with the heating and canning process. It kills all of the good stuff, so just buy the cheap apple cider vinegar.. another thing is I did a history search on iodized salt and they actually put iodine and salt in 1920 and people have been canning with it forever. Yes, it will discolor some of your canned goods, but it will not harm the canning.

      Shelf life can be 6 months to a year. The salt helps preserve;other than that I don’t know. How many eggs? 2-3 dozen, maybe more. Thank you so much for watching. Good luck 😊.

    So Im the skeptic that would get gun shy when it comes time to eat them. Is there any reason to not pressure can them for a longer time to make it more "safe". Personally If nothing else I would be willing to put in the extra effort for the piece of mind alone. Unless there is a reason not to?

    Curious, does it have to be in mason jars to pickle them? I have many empty plastic containers large enough to hold a dozen or more eggs into it.
