  • How to Make Perfect French Madeleines
    Madeleines are delicious french butter cakes baked in a special madeleine tray which gives them a beautiful scallop shell shape and pattern from one side, and a beautiful hump on the other side. This is going to be a complete guide on how to make perfect madeleines in terms of flavor, texture, and shape.

    INGREDIENTS
    125 g Soft Butter 1/2 cup + 1 tbsp
    130 g White Sugar 2/3 cup
    1 tsp Vanilla Extract or Vanilla Sugar
    3 Eggs
    50 g Milk 1/3 cup
    200 g All-Purpose Flour 1+ 2/3 cup
    8 g Baking Powder 1/2 tbsp
    Garnish
    150 g Chocolate of Choice 1 cup
    Crushed Nuts

    how did you get the chocolate to not stick to the pan? I melted chocolate and then put the Madeleine in and it was stuck!! had to use a spoon to get the cake out :( would appreciate any tips

      Hi! It should nbe frozen, when you add the madeleines over the chocolate place the tray in the freezer, if they are stilll sticking, just give them more time in the freezer until they come out easy.. this happens to me too then I just place the tray back in the freezer for longer time, when the chocolate is properly frozen they will simply come out

      You have to temper the chocolate... temper means crystalize it , many videos and instruction how to temper chocolate the right way , also depends if its white dark or mik x all have different Temperatures , pretty sure youtuber should mention when working with chocolate how important it is to temper it

    If I add other flavour, like orange zest, or lemons zest, do I still need add 50ml milk?or I subside with orange juice

    Hi do we store the madeleine in the fridge after coating with the chocolate immediately ?? Or can we leave them outside in room temperature ?? If can leave out at room temperature, how many days will that be before storing in the fridge ??

      Hi, sorry for the very late reply! it depends if it's a hot summer day I'd store them in thge fridge to avoid the chocolate from melting, they taste better in room temperature though so I'd remove them 5 or 10 minutes from the fridge before serving. In winter I'd simply save them in an airtight container to keep them moist for up to 4 days, no fridge required. I hope this helps 😘❤

    Hello! What brand chocolate do you use? Is it tempered? I'm worried about sending these to loved ones and the chocolate getting all melted hehe

      Hi! I use baking chocolate with 30% cocoa butter. I never really do the whole tempering process, what I I always do when melting chocolate is melting it really slowly. If you melt it in the microwave, do only 30 seconds at the time, take it out give it a stir and keep repeating until it's completely melted. If you melt it in the double boiler, turn of the heat each few seconds until it's melted too.. this helps stabilize the chocolate and it stays shiny and wouldn't melt. I hope this helps 😘

    dont coat chocolate on metal tray. they WILL stick to the tray

      Hi! As I suggested in the video, if you freeze them they will easily come off without sticking. If they don’t come off give them a little bit more time in the freezer. ❤️
