  • Madeleines have been loved around the world for decades. There are many different types of madeleines that people make. In this recipe, I made buttery chocolate madeleines coated with dark chocolate. If you follow the recipe, you will be able to easily remove them from the mold and get shiny chocolate madeleines with a chocolate shell.

    How to prevent dew on chocolatw once we take out from the fridge?

      How about storing them in an airtight container? If they have moisture, I cover the madeleines with kitchen paper and gently dab them. Happy Baking🤗

      Thank you for supporting my video🤗😍 By the way, I use a regular digital thermometer by Cooking Plus. It's cheap, maybe around $10 or less, and you can find this type of thermometer at any market.

      It will be easier using a nonstick-coated pan and coating chocolate. I hope you succeed and enjoy your baking🤗😍

    I melted the chocolate and I did the same but it stucked in the pan
    Why that happened?

      I recommend using ‘Compound Coating Chocolate’ and stirring the melted chocolate until it reaches a temperature of 90-95°F. If you could put in more effort, do the 'tempering' process by melting 2/3 of the chocolate first and remove it from the heat source, and then add the remaining chocolate, stirring until 90-95°F.

      It's important to use a non-stick coated madeleine pan for chocolate shell madeleines. I used a silicon coated pan and I think it's good to get shiny chocolate shells. I hope you'd try one more time using coating chocolate with a teflon or silicon coated pan. I hope you succeed and please let me know the result. Enjoy your baking🤓
