    As a French pastry chef, I recommend that you leave your dough in the fridge for at least one night. Then, once your dough is in the mold, put it in the freezer for 10 minutes. it is the thermal shock that will create the perfect bump. and finally, you should cook your madeleines for 6 minutes at 200 ° C then 5 minutes at 150 ° C.

    Madeleines were my childhood desserts. I always liked getting them from Starbucks and bakeries! They’re so good!

    John, i just wanted to thank you. Yesterday I had my very first attempt for making madeleines. It was a failure. I followed a renown person's recepie but I was disappointed. They came out soggy with no crispness at all. I was determined to learn how to make them, and I couldn't wait for next week. I looked up your recepie and decided to start with half a batch. One egg, 50g flower, 50g sugar...It came out wonderful!
    With those measurements I ended up with 9 beautiful golden madeleines, and I offered half of them to my old neighbour. Thank you, thank you, thank you. I will never forget the recepie.

    Imagine how great it is to cook these for the upcoming winter, and whenever snow is falling in a long night having them with a hot mug of coffee.     My mother used to make these all the time. They were her favorite cookie of all time. She would drizzle them with melted chocolate and then powdered sugar. She was a phenomenal baker. Thanks for the memory!

    Another great recipe!
    My mother used to make Madeleines the British way, which is to bake them in dariole moulds. Cover the top and sides of the cooled cakes with raspberry jam, roll them in desicated coconut and to pop half a glace cherry on the top. Voila. (btw, we Brits pronounce the name as 'madelanes', while the French pronounce it as (mad'lenne'.)
    Here is a recipe for Madeleines dating from 1755:
    On a pound of flour, you need a pound of butter, eight egg whites & yolks, three fourths of a pound of fine sugar, a half glass of water, a little grated lime, or preserved lemon rind minced very finely, orange blossom praliné [French praline is a mixture of ground almonds and caramelised sugar, with, in this instance, the addition of distilled orange blossom water]; knead the whole together, & make little cakes, that you will serve iced [i.e. dredged] with sugar.

    I've tried a lot of recipes here on youtube (cinnamon rolls, cakes, buttercream, chocolate ganache) and I can say that Preppy Kitchen's recipes are the best and the ones I always use, thank you so much!

    I love making madeleines! The recipe I used is very similar.
    Sometimes I dissolve granulated sugar in lemon juice and drizzle it on top of them when I feel like having an extra pop of lemon.
    SO GOOD.
    I try not to make them often because you can’t eat just one when they’re fresh out of the oven. Lol

    I don’t know if there’s ever been anyone who’s influenced my baking as much as you, and I’ve been baking for many years. I’ve collected new recipes for a few old favorites and have been really pleased. Who says an old dog can’t learn new tricks. You taught me some! ☺️

    Made these and they are a favorite in the house! 375 for 12 minutes was perfect, I used a silicon pan. Now I can find a new treat to splurge on at Trader Joes and learn to make myself. Thanks John!

    So good. I had Madeleines as dessert after an amazing dinner this summer and they served them with lavender whipped cream. The lemon Madeleine with just a hint of lavender in the cream was the most delicious thing ever. I swear I dream about that dessert.

    These are my favourite little cake to have with afternoon tea. When I met my boyfriends parents I made almond madeleines and dipped the bottoms into chocolate and it was delicious.

    I just followed this recipe, and it is the best madeleine recipe I have tried! They are delicious!! This is the one channel that I can actually use the recipe and it turns out how its supposed to😁

    My grandmother used to make these all by hand, using a fork and then a wooden spoon to mix the eggs! I still have her madeleine tray although I haven't used it in years. Women of my grandmother's generation had incredible upper body strength, what with using coppers and mangles to do the laundry, chopping firewood and mixing, kneading etc. My nan did graduate to one of those hand cranked rotary mixers and, finally, to a hand held electric one but she still, in her sixties and seventies, preferred to do a lot of mixing by hand. By the way, she was a great baker and an excellent pastry cook. She could, however, boil any vegetable into screaming, mushy submission...

    The first time I had madeleines was in France a few years ago. OMG. I think I ate 5 of them for breakfast. Fresh from the oven and soooo good. I will certainly give these a go. Thanks John!

      My first ones were in Morocco when I was 7. Never forgot that special flavor!!! I have made them a few years ago but didn’t have the same flavor. I just found a recipe in a Downton Abbey cookbook and it calls for orange flower water so I ordered some from Amazon!! It’s coming!!

    I made these yesterday and they were perfect! I did replace the vanilla with 1/2 tea lemon extract cuz I wanted them lemon flavored. The bump was perfect too! Thank you John for another great recipe!

      My Mexican grandmother used to whip whites with a fork for chilé relleno. It was amazing to watch her do it. She'd just sit with the bowl and the fork and whisk, whisk, whisk (as John says) while having a conversation. She'd go for around 15 minutes without stopping and when she was done she'd have beautifully fluffy eggs whites. Then she'd peel freshly roasted chiles with her bare hands which is a whole other story.

      @@karolinapupi19977 -- She was an amazing woman. Her life wasn't easy but through hard work and faith she made a good life for herself. I'm thankful for her because her example shaped my dad who taught me to not take things for granted and work hard to achieve my goals.

    I use to make these weekly for 4:00 PM tea. We love them hot out the oven. Our old recipe is different and is like a pancake batter. It still gets the hump. I've read Remembrance Of Things Past by Marcel Proust. He would have tea and eat a Madeline, which would trigger a far off memory and he would delve into relaying the story. It is one of THE MOST beautifully written books I've ever read and Guinness Book says it is the longest book ever written. Some of the stories are about really strange people his mother invited to their house. At least strange to a child. It can take a few hours just to read one page of the book, at least it did me. I read about half the book in French and finished in English. The Moncrieff translation is a stunning use of the English language. It took me a few years to complete and started me in the habit of having Madeleines with tea at 4:00 PM.

    Hi, I love all your videos. Just wanted to mention here that browned butter is how ghee/clarified butter used in Indian cuisine is made. And the aroma is distinctly different from butter.
    I remember the first time I had Madelines in France 9 years ago. I just couldn't stop with one or two. I think I had more than 15 or so.. We had gone on a picnic to some beautiful islands off Brittany, and Madelines were all I ate. That remains a wonderful memory. Now I will make them myself thanks to your video!

    Your madeleines look delicious, but I am wondering why you said Proust invented madeleines ? When he described his memories of them they had already been a French favorite for over a century. (Wikipedia even prints a recipe from 1758 which might be fun to try.) Proust describes them as “one of those squat, plump little cakes called ‘petites madeleines,’ which look as though they had been moulded in the fluted valve of a scallop shell.” Doesn’t sound much like stale, left-over tea-cakes to me lol! But I’m sure he would have loved yours- beautiful work as always! 🇫🇷

    Love your recipes. About the history of the invention I learned: A young kitchen maid, Madeleine Paulmier, delighted the aristocratic society around the Polish exiled king Stanislas Leszczynski in Commercy with it in 1755. As a thank you, he named the (later shell-shaped) treat after her.

    Okay but that butter hack has come in handy with SO many recipes. I’ve taken to browning (or at least melting) butter for so many things and adding a small amount of butter helps add richness AND brings down the temp to prevent cooking any eggs

      I've never made or eaten them either. I never even knew what they were until the Friends episode with Ross and Rachel's male nanny made them and Ross said they were "lighter than air." LOL!! Might have to get me a pan to make this recipe and try them out.

    Medeleins looks similar with Indonesian traditional roti kerang but most Javanese called it roti kuwuk especially in my hometown. But medeleins such a amazing and classic 🙌 love it!!

    Thank you so much for the time and effort you put into making these videos. I love watching them and adore your modern kitchen and all the copper utensils you have. I will try to make this recipe... I had a first attempt using a different recipe and felt that the madeleines were lacking in a buttery taste. I will try caramelizing the butter and see if it works better. I find freezing the pan and using a cold batter to really give it that extra lift. Very nice!

    "A la Recherce du Temps Perdu ", famous novel by 19th Century french writer, Marcel Proust ( 1871-1922), in which he describes his childhood experience eating those famous "madeleines" that he liked so much, with some relatives in France. Proust is an adult as he remembers and share those cherished childhood experiences in his novel-he describes the smell, the taste, the sensations... how those memories come back to us even if long forgotten, and take us back to those times when we were growing up and living up those experiences...French majors study Proust in French Literature. His writing is not easy to read and it's a fairly long novel, but is delightful if you like reading. It is the first novel of a " trilogy " ,(each novel is about or over 500 pages long). " Bon Appétit! " Enjoy those "madeleines" so delicious with morning coffee, or tea in the afternoons, or just anytime for your own pleasure.     While I have never used baking powder to make madeleines, I was reminded of when I was young and poor 40 years ago and actually did make genoise and madeleines with a balloon whisk by hand. And yes it was as tedious as it sounds! One more reason to love my Kitchenaid!

      Those who have ears to hear let them hear In this comment section there is probably one lost sheep that needs to be found there is this whole in your heart you tried many times and many things and many ways to fill it but you couldn’t and it kept getting bigger you would be around multiple people and still feel lonely but let me tell you JESUS is the one who can fill that whole in your heart JESUS is that missing piece you’ve been looking for that peace that’s never ending that true love and joy and happiness it’s in JESUS not if this world but if the kingdom of heaven and if you want to accept him in your heart all you have to do is believe in the gospel A-admit that you’re a sinner and that you need forgiveness, B-Believe that JESUS CHRIST died for your sins and rose again, and C-Confess your faith in JESUS CHRIST and his lordship over your life and you will be saved and this amazing feeling is not a drug it won’t last a couple hours but forever eternally bc it is not of this world but of GOD who sits on the throne of heaven forever and ever HALLELUJAH

    Hi John, greeting from New Zealans. I just want to say ur recipe is work everytime and ur video is so easy to follow. I ve been trying ur recipe, the lemon cake was a hit and my kids love the christmas cookies (sugar cookies n snowflake) recipe , i made it 2 years in a row now. I made this madelaine and its so yummy, remind me of madelaine tht i had at one of the cafe at Paris 🥰.Thank you for sharing your recipe.😊
