Please can someone explain 5:36? That looks like burned butter to me, well beyond done. I’m not saying that they’re doing it wrong because it’s obvious that they know their shit, but i really really want to know if that’s really burned butter and if you sift out the solids is still usable as it seems from the video
Yes, it's burnt butter. It gives a nutty taste. Many recipes call for burnt butter.

Cake flour...If you can'tfindor don'thave. You can make it yourself, you can use two tablespoons of Cornstarch by replacing two tablespoons of flour for each cup of flour to make cake-flour.......example. 1 cup of all-purpose flour, take out two tablespoons, and put in two tablespoons of Cornstarch. Make sure you sift all together well.
Pls wash the egg shell ..use the same gloves to divide the egg yolks..egghhh
My madeleines never puff.
Try refrigerating both the dough and the pan, bring the oven to 220C and then set it to 180C when you put the pan in. The puff happens because of the temperature shock
This is not a classic madeleine recipe at all. Why mislead people?
