I made this today exactly as the recipe says and used 2 1/2 cups shredded carrots (not packed). It came out very good!! I baked it for 45 minutes. Will definitely make this again!
I made this today, but I used Sugar free pancake syrup with stevia instead of maple syrup. It was delicious and moist. I used a pound loaf pan ( I was expecting something like banana bread), but next time I’m making muffins or a regular low rise pan because its very moist, like regular carrot cake. 😋
I was curious about using sugar free pancake syrup too! I don’t have pure maple syrup and so many healthy recipes call for it. It’s just so expensive. Did you find it worked well?
@@healthhollow7218 yes, but it was not as sweet, so I added two tablespoons of stevia and mixed it with the syrup. It worked great. I use the same base recipe for banana instead of carrots. With banana I use only one tbsp of butter and another cup of oats. I will be trying other flavors, but it’s a very good recipe. Works better in muffin form, imo.

Small food processors have become very affordable and they don’t need a lot of room. I never get out my big processor because I can use my small one on the counter very conveniently. (Walmart has a 3.5 cup Kitchenaid for ~$35 US; 7 cup ~$70 US). No more cut knuckles! I cook for one so the 3.5 c is adequate for most things like this recipe which I can’t wait to try!
Mine turned out like carrot oat porridge. Edit; was really great after baking it linger. Was more like carrot oat squares. Very delicious and helped the sweet cravings in Ramadhaan

Hmm...maybe no gluten or refined sugar (and very little maple syrup and butter), with nuts, raisins and carrots? It's a really healthy alternative to full fat, heavy on the sugar alternatives.

If she used a sweetener, no butter or just less and maybe some greek yogurt or skyr mixed with low fat cream cheese instead of that marcarpone you could call that a healthy version. Her version is healthier than regular but not healthy

I use allspice instead of cinnamon and instead of using vanilla sugar i use cinnamon sigar and a splash of vanilla too( yummy )😊

I added to have a citrusy taste but yes you can add milk instead.

For healthy cake icing and you're using cheese 😂I prefer cream cheese and using mascarpone cheese wouldn't taste the same on carrot cake icing.
