    2 lbs. ground beef
    1 yellow onion, chopped
    1 green bell pepper, chopped
    1 cup diced tomatoes
    2 tbsp Worcestershire sauce
    1 15 oz can enchilada sauce
    2 cups shredded cheddar cheese
    2-3 cups Frito corn chips

      This was a live stream. She was mainly relaying the messages from the viewers that were watching at the time. You get that with live streams. Shannon is an asset to these videos imo.

    My Cajun great granny ..put a tablespoon of bacon grease in everything she cooked../she also chewed snuff ,until she was 80…..she lived to 96…told her daughter (she outlived 11 of 13 kids) that she was going to the Lord tonight…bathed and went to sleep ,forever…R.I.P. Laura Casprie

    Had my first Frito Pie as an 18-year old kid in 1967 at Shepard Air Force Base in Texas. It was a lot simpler than Cowboy Kent's recipe here - it was simply a paper boat (like they used to serve french fries in) with about 3/4 cup of Fritos, 3/4 cup of spicy chili con carne, and a half cup of cheddar cheese, with that combination baked together until the cheese was melted and chili hot and starting to blend with the Fritos. Served with a generous handful of those diced onions like Kent's sprinkled on top. I'll never forget it!

      Every Texas High School football game right there. Fritos in the boat, dump chili over them, diced raw onions, cheddar cheese, and top it off with jalapenos. I can hear the sounds and smell the smells of the concessions, and brats and meat grilling for the FFA stand.

      lol, I'm the same age, and us kids had take it or leave it dinners too. Mom or Dad weren't short order cooks. Now on fish Friday's I don't recall what my brother ate, he hated fish of any kind. Maybe he had grilled cheese or PB&J lol.

    We never had frito pie growing up in the 50's. My mother wasn't much of a cook. She thought burnt was a spice. In our house we prayed after we ate.

      OH NOO. Never??? I grew up in the '50s and '60s too. When I was in grade school in Oklahoma. Lunchtime was when all the kids ran to the place across the street where we could get hot dogs, Fritos, and yes... soda pop and candy. We would get a hot dog, Fritos with mustard, and a soda. We always went back to class with yellow fingers 🤣😂. Then it was Fritos with mustard and a little bit of chili...in the bag if we couldn't afford the hot dog too. Gosh, those were the days. I am so sorry so many of you missed those times 😭 😭

    My wife and I got married so young that Frito Pie was one of our favs Made with canned chili,Fritos,and onion.We learned recipes together.

    I grew up in the 50s and 60s, there was only one Frito corn chip. The A&W Root Beer Stand made the best Frito Pie for $0.25

      My most fond memories of Frito pie. Was there an A&W root beer in Durango Colorado, thank you for confirming this was not a false memory. Because it’s been 50 years.

      I also grew up in the 50s and 60s, I remember the A&W Root Beer, IIRC the burgers came in sizes, Mama Bear Papa Bear. Don't recall the Frito Pie though. Going there was a special treat, for us it was a fine dining event😁😁😁

    Hey cowboy Kent, love your dancing moves. I can smell that through the TV. I watch you for ideas for our Sunday suppers. I don't think many people have Sundays dinners anymore. Good food, good company around the supper table , all the grandkids, tell us the events of the day. We live on a big farm,so my hubby bought me a huge bell, the grands kids could be out of hollering distance, I just ring that bell,they all come running. Grandma, up in Trinity county,ca..

    In Santa Fe, New Mexico, the Woolworth store on the Plaza started the Frito pie- bag of Fritos, chile red and beans with some cheese on top. They believe they were first. Been there and had some. Awesome quick meal.

    I've been making these for decades, but I've never seen the Fritos put on top before. I've always put the Fritos in bowl, then cheese, chili (or taco) mix, and cheese on top. I will try this method next time.

    Back in the 50s and 60s my mother made her version of Frito pie. On a cold day she would open a can of Wolf brand chili, layer with onions and cheese bake 'til bubbly, and top with Fritos. My dad and I loved it! I am going to try your home made chili for sure for my next Frito pie. And I top with sour cream...yummy!

    I could be wrong, but I believe they used Wolf Brand chili in the Frito pies where I went to high school. The Frito pie and an ice-cold Coke or Dr. Pepper to wash it down were perfect with the Friday Night Lights.

    The very best part of your videos are listening to you and Shannon talk to each other. It's so obvious that you love and respect each other. You enjoy each other's company and instead of getting annoyed when something goes haywire, you two make it cute. It may have taken you a while to find each other but you both saved the best for last.     Wow...the Frito Chili Pie has come a long way since the '50s. And so has mine. I still like mine with chili, homemade of course. Lettuce, tomatoes and lots of cheese. Don't forget the Tabasco sauce..mmm...mmm. Makin' me hungry. I admit I want to try yours now. Thanks for sharing.

    I’ve followed you for the last 4 or 5 years and have never been disappointed in any show you’ve put on. Your recent one with the hatch green chile company was great. I’m in Las Cruces and use young guns chiles in numerous recipes and enjoy them. Today is a butternut squash casserole with cheese croutons and sausage…it will get the green chile treatment. Keep on cooking my friend and keep em coming!;)

    In 1967 I lived in Lancaster California and my Dad was a Little League coach for my little brother. I worked in the concession stand and we would have a little bag of Fritos and would put Chili, cheese and onion oh so good 💯

    From the UK, you've put some love into our food, absolutely love this guy and food. The first time I experienced nachos and melted cheese was at a pittsburg steelers game when visiting my then girlfriend. Nothing I'd ever experienced over here. Stay well all and keep cooking. 🙏 ❤️

    Love Frito pie. Last Halloween 🎃 my daughter made Frito pies to give out. Thay were a big hit. She even had small cans of soda and water for the "spooks and goblins". She passed out well over 100 of them. For whatever reason these things are pretty darn good to say they are so simple and don't involve a lot of work. Thanks for sharing this chili recipe.     Hey Kent, Shannon, and the four-legged man's best friend. Hi from a very wet and cold winters day in South Africa. Just seen this "Frito Pie". Please excuse me, never heard of it or seen it before until now and man oh man, that looks delicious. Can't wait to try it out with my family at home. I'm almost certain we going to love it. I've seen some of your views about variations. However, since it will be my first time making this dish, I will stick to what I've seen on the video. Here in SA, we have 3 variations on Frito's, Tomato, Barbecue, and Sweet Chilli flavour. You and Shannon compliment each other and make an amazing couple.     I'm a want to be Texan. Born in Georgia but raised in TEXAS!!
    I've watched your videos off and on mainly because of cast iron and the chuckwagon. Just picking up tips from you.
    But when it comes to CHILI POBLANO,SORRENTO, JALAPEÑOS AND CHIPOTLE are a must for my CHILI!!!!

    I grew up in a very small Texan town. Every autumn an ice cream truck appeared with Frito pies. We aint had no stoplights but there was always a long line at the frito pie man's truck.

    Looks good! I mix Fritos in the meat mix then add more on the top before I bake it. Plus I’ve got to have diced chilis in mine and it definitely has to have beans in it.😋❤

    I didn't comment during the live, but I am from Alabama too. Alabamians love the food Kent cooks. My husband lived in Texas when he was younger and they served frito pie for lunches.

    Would enjoy a remake on the video. We have always made Frito Pie a couple of different ways. The first was in the Frito bag, you pour some chili over the Frito’s,sprinkle cheese, add some diced onions, tomatoes and a dollop of sour cream (optional)
    The second method was baked in the oven.
    I have never tried it with enchilada sauce and ground beef. My mouth is watering thinking of this new recipe. Definitely cooking this for dinner today. Sounds soooo yummy.

    My grandmother used to make frito pie in her cafe back in the 60’s. Homemade chili that she made and I still make. Fresh tomatoes, longhorn cheese, onions, garlic, lettuce and jalapeños.

    I had my first Frito pie at my elementary school Halloween carnival in the early 60’s. I just make chili and pour over Fritos top with chopped onions and cheese and some chopped jalapeños. Love Cowboy Kent 👍🙏❤️

    Born and raised on Frito Pie in Socorro New Mexico!!
    I used to love that little guy on the Frito package, "Frito Bandito!!" They used to put little Frito Bandito pencil eraser prizes in the lunch size multi-packs.

    Beans go into chili I don't care what any folks say. My mother was a Rancher's daughter and grandma put beans and everything she could find to keep the ranch hands happy and fed

    Woolworth’s in Santa Fe was the birthplace of the Frito pie. Woolworths is no longer on the plaza but they still sell the original at the 5 and dime in the old Woolworth’s building.

    I lived on the Hawaiin version off the "roach coach" food trucks while stationed in Pearl Harbor, 80's. My metabolism was higher back then, but I still love Frito pie!

    New Mexico Frito Pie original recipe from Santa Fe Woolworths on the plaza from when I was a little girl in the 1950’s is so easy and delicious. A small bag of Fritos with the side cut and spread open. Then add a big scoop of chili made with pintos. Next, the diced onions get sprinkled on. Finish up with a handful of cheddar cheese. Stick a white plastic spoon smack dab in the middle of it. Get a few white paper napkins and then walk around there plaza, looking at all the gorgeous Navajo
    and Zuni goods and jewelry.

    They used to serve this at my highschool football games. Fondest childhood memories come back watching you make it. First time I kissed a girl was over a steaming bag of Frito Pie in a bag.

    Kent, that looks delicious! I love the HEB lightly salted corn chips(generic Fritos), because I can't handle all of the salt on my tongue. Plus, my husband has health issues, so I cut back on the salt whenever possible. ❤Love to Shannon, the pups and you. We really enjoy watching your videos on TH-cam. Thank you for all you do, Sir.
