Since you broke out the bitters. I don't think this is very well known outside Aus and NZ. But we have a non alcoholic drink called the Lemon Lime and Bitters. Which is literally just a few dashes of bitters, lime cordial and lemonade. Optionally garnished with lemon or lime.
Super refreshing and tasty, and I'd be interested if you could come up with a good alcoholic take on the drink if your interested.

Also, a town or well funded farm could have an ice house where winter ice is collected from frozen surface water in the winter and stored underground until the next fall or winter.
Some ice houses I have seen for a single wealthy family were large enough to fit a modest modern 2 story house in because they always had a lot of impressing rivals and guests to be getting on with in their lives of upward mobility and they had to figure in the losses from melting.

A cowboy walked into a bar, sat down, and asked for a shot.
Across the bar was a Mexican man sitting there glaring at the cowboy.
The cowboy took the shot and slammed the shot glass down on the counter and yelled, *"TGIF!".*
The Mexican ordered a shot, took it and slammed his glass down and yelled *"SPIT!".*
The cowboy looked over at him and noticed the Mexican was still staring at him. The cowboy once again ordered another shot, slammed it down & yelled again *"TGIF!".*
And once again the Mexican ordered another shot, slammed it down and yelled out, *"SPIT!".*
This went on for awhile, and the bartender stood puzzled and annoyed.
Finally, the bartender asked the cowboy, "Jus checkin, but do you know what TGIF means?"
The cowboy replied, "Hell ya I know whut it means, *"Thank God Its Friday!""*
And then the bartender asked the Mexican man, "Ok, so... what does 'SPIT' mean?"
The Mexican replied... *"Stupid Pendejo Its Tuesday"*

so in conclusion: you didn't want to show us how to just make whiskey like they would have in deadwood, so you traveled not to chicago, not to new york, not even to new orleans, but of all places London. Then you show us how to make a drink that no one in deadwood ever asked for or wanted, and then after making this preppy drink, you scoff at preppy glassware? Dude, just show us how to make it and don't connect it with deadwood, the show deserves more and frankly so do you. I love gin, but lets face it, they didn't ask for gin, so don't try and dress it up like whiskey after the fact, we all know you left the flyover america in the dust and just like your city drinks for city people.

Those wood boards look super useful, and I love the idea of using them as a way of simply but elegantly amping up a glass of whiskey... but the fact that Bespoke is so stridently gendered is really offputting. It's just super weird to see them be like "oh yeah, whiskey and wood are for men", like, what? Why? I know I'll get "reee SJW"-ed for saying it, but I wish people could just... enjoy things? And not need to, like, reinforce some weird idea of masculinity?
