Your production and preparation quality has really improved, Nick (not that it wasn't good in the early days). Compared to your other "standard cocktail" videos this one is probably the most well shot/edited, and the recipe variations are also great. Love the continued effort you have made throughout your channel's history to strive for the best quality.

although, I'm not so sure abut beginning of the video. It takes courage to suffer through 22 sec long still shot of empty table and middle part of body...
One of my all time favorite cocktails I admire you for how much effort you put in these next level variations of the cocktails... They are not just cocktails when you touch them they are becoming masterpieces
I saw the big lebowski in theatres for the first time last year and had a White Russian and LOVED the movie and the cocktail Made the cocktail at home with the coffee liqueur and toasted cream like nick did at the end. Thanks for the cocktail recipe nick!
You can partially zip up a zip top bag that contains a liquid or a solid of any kind, leaving a small length un-zipped. Lower the bag down in a big pot or sink full of water, down all the way as close to the zip to as you can get it without letting water in. When the water has pushed all the air out, zip it closed. If the internal liquid has a heavier specific gravity than water, which cream does, it should work fine. YMMV. I think Kenji on Serious Eats also shows this in a video IIRC, but others may have as well.
You should make a restaurant+bar which I'm pretty sure is just a pub actually with you at the bar and Babish in the kitchen though I'm confident I'm not the first to comment this
Not fair man. Please put a warning that says "don't watch at work". Lol. I'm not even close to being able to try this right now. Looks amazing. Well done!
hi! so nice that you are applying the same openness and methodology to cocktails that is being applied to success in cooking by serious eats and others! another cool idea for making the coffee flavor: add coffee grounds to vodka or rum, strain after a few days. it keeps at room temp and you can add simple syrup as needed for whatever sweetness/coffee flavor strength you desire, and you don't risk it ever being too diluted as is possible using the cold-brew technique.
Dude the toasted cream is amazing! Such an awesome facet to the drink. Can't wait to try it in other recipes. Thanks and keep those drinks coming hahaha
I swapped the vodka for scotch (Johnny Walker Red Label, nothing fancy) because i was out of it and I liked it way more than the normal one. I dont know if already exists a variation of the cocktail made this way, but I highly recommend it. Also i think that an irish would pair even better.
A big thanks for those recipes, we did awesome white russian with a friend ! The Big Lebowski was a reference for us as the degustation was awesome too, big up and continue. French fan
The Creme de Cacao version was with Gin (or Brandy) and is called an Alexander. 1 part gin, 1 part creme de cacao (light), 1 part heavy cream. Shake on ice (maybe dry shake the cream for texture first). Garnish with fresh ground nutmeg. That's my favorite. The Brandy version is with cognac instead of gin and dark creme de cacao, and shaved dark chocolate as garnish. Both great drink from the same age as the White Russian, although they didn't have a pop culture movie to make them popular :)
White russian is one of my favorite cocktail ! Your channel is amazing and all details are great, you don't speak to fast and it's better to understand and learn recipe and english. Cheers from France 🇫🇷 ! Don't give up !!
WHAT A CONCIDENCE! I just wanted to look up your channel to see if you did a vid on the white russian and there i see this vid in my abo box. Very nice.
That's awesome. It's great to see you make the original and then an intermediate improvement and an advance level one man. Your last version seems like the best tasting
question: how important is the precision in measuring? Both for these cockails and for all others in general. The dude just pours stuff together? Also, how precise is a normal non-bartender human at "ah about 2cl i guess?"-measuring?
for a white russian, I don't think it really matters, I use a high ball and do 1 part vodka 2 parts vodka and fill to the top with cream. That being said, i've moved on to my favourite drink, a splash of vodka, 1 part amaretto, 2 parts kahlua, 2 parts Bailey's Irish Cream, and fill to the top with heavy cream. All with ice.
P Z This is precisely why mixing your own drinks trends toward trouble. After the first, the ratios aren't as important. After your third, four parts vodka, one part Kalua and a splash of cream is just about as good as the first drink...
Depends on your level of alcoholism. If you make them all the time, you'll be able to do it with your eyes closed. If it's your first time, might as well measure it to get a good idea of where the taste starts. After two or three, it won't matter at all.
I get the kind of appeal of a cream-based White Russian being a kind of "dessert in a glass", but I honestly think it's better when it's made with regular, full-fat milk. It becomes less overpoweringly rich and sweet because of the reduced fat-content, and the vodka is allowed to make it a more clean drink when it's not suffocated by the cream.
Cocktail Chemistry - Love the video. I can only speak for myself, but I originally put this video on the back burner because I thought it was just the simple White Russian from the movie. I know I should’ve known better, but then I thought, are other people doing the same. Idk just a thought, but maybe a qualifier in the title like “improved and homemade...” or something like that would draw more? I’m no youtuber, but I do love your channel and wish to see it grow
I made one today after preparing cold brew coffee yesterday, just without the vanilla extract. It is so vastly superior to Kahlua! Truly cocktail you're not ashamed to drink if you're a guy. Thanks for the recipe, I won't make it any other way from now on.
Pour over a spoon "on top" of the drink, meaning to actually touch the spoon to the surface of the liquid, not above. This way it doesn't start to mix until you stir it.
Espresso (hot) heavy cream (cold), vodka (room temp) 2 drops of vanilla and sugar/sweetener to taste works excellent for a warm white russian. The best cocktail is the one you like to drink, and the best way is the way you like to drink it, so make your proportions, I like mine bitter, you know you're drinking coffee. Lay way - use egg nog as coffee creamer and put equal amount of hot fresh espresso in it. Enjoy. Also works with carolans instead of egg nog.
I've been following the channel here for a while and I really enjoy your content! A couple of things struck me in this video, and some previous ones, that you may find useful to note: The framing on most of your shots kind of makes it look like there's just a bouncing torso in front of the camera. Try framing slightly below/above the waist, or slightly below/above the shoulders. Where we're at now really chops up the body and makes the frame look unnatural. See some videos from Binging with Babish for the type of frame I'm speaking of. Secondly, we've got the really nice 4k video going on, but man, that auto exposure is killing me! One shot is properly exposed and the next is almost as dark as night. Maybe try finding the best exposure setting for the lights you work with ahead of time and burn them in? Hope these notes don't come off as snooty; I'm really just looking to see one of my favorite channels come even further than they already have! Thanks for the content!
I think my lack of an apron makes that framing a challenge. I just did a comparison with his videos and we're both framed right below the shoulders. I totally agree on the auto exposure, it's an issue with the default iphone camera. I've already recorded my next 3 videos but after that I'll be trying out a new app where I can lock in the ISO
Was recently at a very stylish bar in Osaka, they served it in an old fassioned glass, one big icecube, and slightly thickened the heavy gream by wisking it, making a "lid" of cream over the vodka and coffee liqeur. It was amazing! Strong too, not as sweet as I've been served this coctail before. recommend trying it like that too. I will definately try that last one though! experimenting with different coffee beans
As a Russian viewer, I totally approve of your "На здоровье" pronunciation, the "r" sound should've been a bit harsher, but overall - great work. The cocktail is splendid as always
1) Polish Vodka is much better than most Ruskie vodkas anyway. Most polish vodkas use potato, rather than wheat. Imo, The purer the starch the cleaner the taste. 2) ah!, it's like carmelizing white chocolate. I'm woried about scorching the cream in a pressure cooker. Maybe a bain marie would be a safer bet? Or what about straight up mixing brown butter and a lighter cream? 3) Why didn't you use vodka with the coffee grounds? If you're using water then couldn't you get the same result using a pour over coffee?
Dan R. Both countries have good vodka. Poland has Belvedere, Russia has Stolichnaya and Russian standard. Wheat vodka not worse than vodka made of potatoes. For example, Grey goose is wheat-based vodka. But I agree that most of Russian vodka is not good, because it is made for poor people, who can't afford to buy good vodka. It's quality is bad, but it is cheap, and does a good job killing your life, literally and lyrically.
Михаил Беднов grey goose is french though and he said the Dude uses Smirnoff which isn't even being produced in Russia anymore. Many people argue about vodkas but in reality it is just grain and water without flavourants so getting whatever for a reasonable price (which doesn't mean getting soapy barf inducing stuff for 4bucks a bottle) shouldn't be frowned upon.
I knew I would be useful some day. If anyone is wondering, the song at 0:31 is Her eyes are a blue Million Miles by Captain Beefheart and his Magic band
it's not that easy to get ahold of, but almond cream works really well for me. If you can't buy it you can just blend together almonds and water in a 1:1 ratio by volume.
Agreed, wouldn't call Smirnoff a Russian vodka. I've spent quite a lot of time in Russia and never seen anyone drink it there, and in fact I don't think I can even recall ever seeing it for sale.
The guy that started smirnoff was from Moscow, and had to leave russia and started over again. So it does have its roots in Russia. I was sceptical too but I looked it up and well there we have it. Still don't like the the brand.
+handyanqu You're right, and I agree it has it roots in Russia. That said, however, I think it is a stretch to describe Smirnoff as a "Russian Vodka" when it hasn't been made in the country in over 100 years. The link is rather tenuous, especially when you consider there are hundreds of vodkas actually made and bottled in Russia.
i can see the logic, but by that standard Guinness is now Canadian to anyone in the Americas because it's brewed there and Sapporo is now American. I understand sentiment behind it, but if it's the same "style" or intent of the original creation i can give it a pass even if it is no longer made in that exact country.
Fair point and well made Handyandqu, but I think we'll have to agree to disagree here. While Guinness (I don't know anything about Sapporo), is brewed in various location around the world, their head quarters and main brewery is still in Dublin, and can be drunk in basically every single pub in Ireland. Smirnoff on the other hand has had no connection to Russia for over 100 years, and as I said before is something I've never seen on sale in Russia. Fair enough that it is a Russian vodka in origin, but it seems weird to single it out as an example of Russian vodka, especially when there are hundreds of vodkas actually produced in Russia.
Never saw the movie but who cares when you have the mega awesome Cocktail Chemistry magician ;-) Never had a Russian --- white or black --- but somehow a Brandy Alexander came to mind watching your remake.
In the 70's I worked as a bartender in the bay area. A very popular drink at the time was called a Seperator. Made exactly like a white russian exchanging the vodka for brandy. Great drink. I still drink one on occaision. Going to try one with toasted cream. Sounds delicious.
The Dude goes way heavier on his vodka ratio, look at the pours it’s clear as day, that’s where you went wrong and it’s too sweet. He definitely goes 3 parts vodka to one part Kahlua, not 2 to 1.
Wow! Thanks for combining the Serious Eats with the Cocktail Chemistry. That toasted cream caught my eye too - great idea to mix it with a white russian.
You should try including the rum in with the water when you make your cold brew coffee. Coffee has some flavor compounds which extract better in alcohol than in water.
Why does almost EVERYONE get it wrong? The dude uses/buys half and half. Never heavy or whipping cream. And that powdered junk in an alcoholic pinch....?
@@teukufayzal9998 Both Babish and Cocktail released their first video on cooking/mixing in February of 2016. Babish was about a week later but began with the style he would carry onto other videos. While Cocktail used shots that were similar in style they were only to show off the process and the camera cuts often to other perspectives. Neither copied the other but this guy was definitely influenced by Babish in terms of performance.
If anyone's keen on making the toasted cream but don't have a sous vide or pressure cooker, it can be done just as effectively by filling a canning jar with cream and then boiling it for about 4 hours. Make sure the jar remains covered with water for the duration though, otherwise.... it ain't gonna be pretty.
After watching this I took the time to make the coffee liquor and toasted cream at home and let me tell you it’s a skill I wish you hadn’t taught me because I use toasted cream for everything now.
Toasted cream sounds delicious, but sous-videing is a bit of a hassle. A lazy hack would be mixing a tiny bit of dulce de leche to your cream. This will sweeten it lightly, but you decrease the syrup in your liqueur recipe. Or perhaps add some hazelnut butter (beure noisette) to the cream.
Ha. Nice. I used the issi whipper from the Pan Galactic recipe to infuse vodka with coffee and cut with Kahlua to desired sweetness. We even made some weird Egg Nog added Santa Russians? Russian Santas? Love the channel, keep up the great work.
I went through a faze of drinking white Russians after watching The Big Lebowski for the first time. Great film and a tasty beverage. Quality video, talk about taking the drink recipe to the next level. The dude abides.
the kahlua's too sweet?
well thats just like, your opinion, man

I feel like "improving it" goes against The Dude's whole character. Kahlua and milk would be adequate, and "adequate" is plenty for The Dude.
this is just a fucking travesty, man

How did you manage to vacuum seal a liquid?
there are some vacuum seals that can do it, I just sucked some of the air out before sealing it. Doesn't need to be 100% airtight

For example, Grey goose is wheat-based vodka. But I agree that most of Russian vodka is not good, because it is made for poor people, who can't afford to buy good vodka. It's quality is bad, but it is cheap, and does a good job killing your life, literally and lyrically.
"IMO" means in my opinion. Sorry if you didn't catch that.
Dan R. Thanks.
Would using non dairy milk affect the consistency?
I guess I will pop some lactaid pills.... ._.
The dude does use a non daily creamer in one of the scenes I believe. But almond milk might be tasty
I tried it with almond milk and it was delicious :)
I use skimmed milk in mine, still awesome!
it's not that easy to get ahold of, but almond cream works really well for me. If you can't buy it you can just blend together almonds and water in a 1:1 ratio by volume.
As always, you are a true alchemist of the mixologist world. Cheers
I thought it was just milk and vodka this sounds delicious
Senior airline captain here, toasting the cream before mixing in the cockpit not ideal but the fresh flavor is worth it.
Looks sweet, just wondering have you ever thought about making the one or more of the cocktails from the danger 5 running gag?
I don't know why but you make mixology more alluring if that's the right word to use.
"and yes, I'm aware I should be using a Russian vodka, the Dude uses Smirnoff..."
Well Smirnoff is British vodka, so...
Fair enough that it is a Russian vodka in origin, but it seems weird to single it out as an example of Russian vodka, especially when there are hundreds of vodkas actually produced in Russia.
favourite film. Favourite cocktail. And now, favourite recipe!
Not really a cult classic anymore more of just a classic these days
LeiskaKaksSeiska shut up
fair, you can pretty much make out the plot by reading the movie posters in college dorm rooms
LeiskaKaksSeiska Well... that’s just, like, your opinion man.
LeiskaKaksSeiska well that's just like... your opinion man
No. It literally spawned a cult. But it's a cult i would actually join. It's called Dudeism.
Baked/toasted milk is also a traditional dish in many Slavic countries. It's a good fit
Never saw the movie but who cares when you have the mega awesome Cocktail Chemistry magician ;-) Never had a Russian --- white or black --- but somehow a Brandy Alexander came to mind watching your remake.
The Brandy Alexander is the world's greatest breakfast cocktail.
Watch it!
Oh, Nester....that is not a very convincing argument for watching the movie. :-)
Thanks for your enthusiastic recommendation, Mr. Slash Camp :-)
In the 70's I worked as a bartender in the bay area. A very popular drink at the time was called a Seperator. Made exactly like a white russian exchanging the vodka for brandy. Great drink. I still drink one on occaision. Going to try one with toasted cream. Sounds delicious.
Haha great creative video! Loved it incl. the small jokes on various other videos! Keep it up.
What's with the pronounciation of "liqueur?"
xaeromancer that's how you pronounce it
The correct pronunciation is " Lee-kuhr". It's a French word.
The Dude goes way heavier on his vodka ratio, look at the pours it’s clear as day, that’s where you went wrong and it’s too sweet. He definitely goes 3 parts vodka to one part Kahlua, not 2 to 1.
"We can make this White Russian better!"
Yeah....well, that's just like your opinion, man!
Wow! Thanks for combining the Serious Eats with the Cocktail Chemistry. That toasted cream caught my eye too - great idea to mix it with a white russian.
binging with babish’s closeted gay little brother
You should try including the rum in with the water when you make your cold brew coffee. Coffee has some flavor compounds which extract better in alcohol than in water.
binging with babish much?
Yeah. Totally.
Why does almost EVERYONE get it wrong? The dude uses/buys half and half. Never heavy or whipping cream. And that powdered junk in an alcoholic pinch....?
Am I watching a knockoff Binging with Babish
Not a knockoff. Just a different idea with a similar style.
Definitely heavily inspired/borrowed from Babish. Not that I'm complaining though. Love the format
@@teukufayzal9998 jesus christ lmao
@@teukufayzal9998 Both Babish and Cocktail released their first video on cooking/mixing in February of 2016. Babish was about a week later but began with the style he would carry onto other videos. While Cocktail used shots that were similar in style they were only to show off the process and the camera cuts often to other perspectives. Neither copied the other but this guy was definitely influenced by Babish in terms of performance.
💯
If anyone's keen on making the toasted cream but don't have a sous vide or pressure cooker, it can be done just as effectively by filling a canning jar with cream and then boiling it for about 4 hours. Make sure the jar remains covered with water for the duration though, otherwise.... it ain't gonna be pretty.
So, you just Binging with Babish wannabe ?
The toasted cream really went well thank you for the tips too up my game
Complete copy of binging w babish. Damn
Parallel thinking.
Griffin O'Conor oof, this was started before Babish
After watching this I took the time to make the coffee liquor and toasted cream at home and let me tell you it’s a skill I wish you hadn’t taught me because I use toasted cream for everything now.
Your videos are always very detailed and enteresting good job keep up the good work
Thank you!! I was waiting for this since i first found your channel! Simply Awesome!
Well done! Extensive exploration of the white Russian.
yes! I've always wondered about this, I've tried about a dozen white russians and none of them seemed any good.
THIS makes me want to try it again
I made the coffee liqueur but replaced the rum with Fireball whiskey and as I don't use dairy, opted for almond cream.
really enjoying these videos.
Binging with babish, except it's only alcohol. Love it!
