I was watching the first recipe and thinking that this was my uncle's potato salad recipe! He did exactly the same thing with the yolks and the mustard except he used vinegar. He chopped up pickles and celery and Spanish Olive into it.
If a southern man says the potato salad is good , Thats all I need to know. lol. Can't wait to make the radish one. I've been wanting to do it for so long.
I keep Sharing because it changed my recipes. If you have a decent Asian market nearby, get a korean Mu radish. Easy to slice and more meaty, less peppery. Japanese Daikon will work too.
I only use frozen cauli for my "potato" salad now...it's so much more convenient to just mic the sealed bag, then put the cauli on a paper towel to drain a little. I buy a bunch of 12oz bags from WalMart for a buck each. I've added all kinds of stuff to my p salad...not all together obviously, but...bacon grease, bacon, pickles, boiled eggs, red wine vinegar, white vinegar, olive oil, mayo, mustard, chopped olives, xtra sharp shredded cheddar, diced green pepper, red pepper, celery, onion, green onion...all kinds of seasonings. Whatever I'm in the mood for, or whatever I have on hand...it's all good.
@Patsy Stone On the contrary, the pieces come out of the bag too large, after mic’ing, BUT… I don’t bother cutting them bc they’re tender enough to break down themselves when I stir in the mayo/mustard & stuff…they don’t get too small then either. Well, there’s a few smaller pieces, but the majority are nice chunks.

I’ve never added ALL those things I listed in the same batch. But any combination will work! I literally just made some 3 days ago and I only added mayo, mustard, hard-boiled chopped eggs, salt, pepper, & bacon pieces…it was great!
I've been using radishes as a potato replacement for about 1yr now in everything but mashed potatoes ever since I bought a George Stella low carb instant pot cook book. The recipe at that time was for beef stew. Once I tasted it. I immediately thought of substituting radishes in potato salad. Here in Hawaii Dikon Radishes are more common than the red radishes. They're white & large & more closely potato shaped (maybe even larger) They're a great substitute... They roast well, but I have yet to perfect a French Fries substitute with them...
Hello Wes. I tried an amazing "potato salad" by Low Carb Love and it is amazing!! I served it to my guests and they had absolutely no idea it was made with cauliflower. It was a huge hit! I was floored with how it was as good as a regular potato salad! I plan on trying these recipes but I just can't imagine any better. Excited to find out😋

I love using Daikon radish over American red radish. It's even milder and makes a fantastic potato sub for soups, casseroles, and hash. Can't wait to try these recipes!

I did a combo of the 2 recipes too. I needed the egg in the salad to make it taste correct. I added both parsley and dill because... I could. I mixed radishes and Kohlrabi cubes. My husband loved it and the neighbors, who are not Keto, never knew the difference. I am going to try German potato salad next. Hi Wes! I've never had a rutabega, so I tried boiling the radishes. Mmm...I think they would make great "mashed potatoes", but I thought they were too watery for potato salad. Soooo...I thought what the heck, and tried my Mom's recipe with JICAMA. Oh Boy! It came out AMAZING and tastes just like regular potato salad. You know, celery, onion, hard boiled eggs, mayo, mustard, and dill pickle juice. I peeled and cut the jicama in bite sized chunks and it does take FOREVER to get to the right consistency (steady boil for about an hour/hour 15), but geez, is it spot on for taste and texture! I also used A LOT of salt in the water, but used less in the sauce, so it all worked out in the end, and the jicama lost all of that sweet flavor it has raw. I just had to tell you! You're videos have been a ginormous help so I hope you keep doing what you do! Thanks!!
Wes, you are just the best! Love your videos and can’t wait to try the keto potato salads. If you’re looking for a summer pasta salad substitute I recently discovered a low carb way to do it. I used Palmini Linguine instead of pasta. Then added salami, cheese, cherry tomatoes, green onions, fresh parsley, banana pepper rings and cracked black pepper. For the dressing I used Primal Kitchen’s Greek dressing. It was outstanding!

Do you feel like the cauliflower "fragrance" grows by the day in the fridge, or diminishes? BTW, I tried making potato salad with cooked jicama, it was fairly good, but I think I might like the radish better. My favorite potato replacement for au gratin is kohlrabi, so I think I need to try making a kohlrabi potato salad.
Fun Fact: Cauliflower pretty much has the same fragrance after it's digested too! I'm sorry. I couldn't resist! My husband is always fussing at me whenever I steam it saying, "Ew, did you just hit me with a silent but deadly?" Also, I don't think I've ever eaten warm potato salad. I use radishes or zucchini for German potato salad too. I loved roasted radishes with onions and garlic powder. As a diabetic keto keeps me off meds. A big daikon baked with butter and parmesan cheese. Life is good.

I recently tried radish potato salad but my radishes were pretty watery. Granted I also boiled them a lot because I don't like the radish taste. I'll see if doing that in a shallow pan helps them not be waterlogged. Thanks so much for this video, I appreciate all that you do!
So this particular video inspired me to find a recipe for mashed radishes as a mashed potatoes substitute. (I've eaten mashed cauliflower as a mashed potato substitute and it worked fine... But it just wasn't quite "there" if that makes any sense) I had to do a lot of hunting to find a recipe for mashed radishes. I FINALLY stumbled across this recipe and gave it a shot. The only difference is that I was starting dinner late, so instead of boiling the radishes I cooked them in the microwave. After I drained them really well I added butter, heavy whipping cream, a little pink salt, a little pepper, some cream cheese, some minced garlic, and some shredded parmesan. I used my immersion blender until they were smooth and creamy. Oh my gosh they were so delicious!!! If you've already tried mashed radish I would love to see your recipe and maybe compare it to this one. The only thing I might do different in the future is peel the red skin off the radish because the end product is a lovely shade of pink; which is not bad but if I'm looking for something that is reminiscent of mashed potatoes... Made a hybrid - combined both cauliflower and radishes into the same recipe for a large family gathering. Nobody turned their nose up at it. Turned out pretty good. Boiled them together in the same pot for 10 mins. Mashing up he egg yolks into the dressing was something new to me - loved it.

Hey, Wes. I make “potato” salad with radishes all the time with my own recipe, and my husband, who is not eating low carb, loves it. I steam the radishes in my steamer. I also steam the radishes and then fry them up like home fries....awesome. :)
@@marf14marf14 they do lose a lot of the spicy radishy taste and become pretty neutral tasting. You won't mistake them for potatoes, but my family didn't guess they were radish.
I know a chef and her secret ingredients in potato salad is pickles and pickle juice but she also adds finely chopped water chestnuts. The water chestnuts add crunch without changing the flavor. Loved the fact you blew on both cold salads before tasting. thanks for the video.
I watched this battle when it first came out, and it got my gears going. Tonight for dinner, we smoked some ribs and I made faux-tato salad using JICAMA!!! It is like a rutabaga without the sharp bitterness. The secret is to pressure cook (or boil the snot out of) the cubed jicama for 1 hr and let the pressure release naturally. Drain and cool the cubes. Mix up your dressing and then the cooled jicama cubes. Let the whole salad sit for about 2 days in your fridge. There is a slight texture difference because jicama doesn't soften up the same, but two days later and it tastes like potato salad where maybe I undercooked the potatoes just a little bit. Thank you for this battle! My gears wouldn't have been spinning without your inspiration!
I recently used daikon radishes as a substitute. I made two recipes. Fed them to my family. Only one knew it wasn't potatoes. Both were enjoyed by all. You only need to remember drain to get out the water and pat dry. Will make them again.

I’ve always made a baked potato salad w half mayo and half sour cream then cheese and bacon w seasoning for potatoes usually salad supreme. Or I go the egg pickle route w or without bacon and a salt pepper seasoning w some red pepper. I may try the radish one.

I haven’t tried this recipe, the first one, however I definitely plan to make both! I’d add eggs to it though. These types of recipes you kind of have to experiment until it’s the way you like it I suppose. I have an immersion hand blender and I’m thinking that might be easier to use to blend the sauce? I’ve always used both yellow & Dijon mustard, a mix of both, in potato salad as well as macaroni salad. These are actually a couple of things I’ve really missed on this diet so I’m excited to learn new options! Thanks for doing these videos. I’ve been binge watching them the past few days and I’m not only getting lots of great keto recipe ideas, I’m learning things about how to cook better that I didn’t know I didn’t know lol. Just made the radish and added eggs and pickles and rather than lemon I used the same amount of pickle juice. I tasted the cooked radish and got very excited. It’s chilling at moment. I’ll come back to update.
I've used radishes to replace my potatoes in stew but I never thought to make a faux potato salad with them. First, I halved the recipe because I didn't know if I'd like it or not. You see, I adore potatoes so it takes a lot for me to accept an alternative. Next, I took your suggestion to use the other dressing since I also have a cauliflower recipe that is similar. The difference is adding some creamy horseradish to the mix which gives it a nice little kick. I'm not fond of pickles in my potato salad so instead I use liquid from a jar of pepperoncini. All I have to say is WOW. I love cauliflower but the radishes definitely have a texture which is much closer to a potato. The salad turned out awesome and if you couldn't see the red of the radishes, I highly doubt anyone would even know the difference. Thank you so much for sharing these ideas! ♥♥

I use radishes for lots of things Keto. Cubed in Chili versus beans, fried faux home fries, added to roasts, etc. Most people are shocked to know they are eating radishes.
I like to use radishes fried with onions like potatoes as a side dish. I slice them, microwave on high for 4 minutes, then fry with the chopped onion using bacon grease if I have it or avocado oil till brown and crispy!
Someone may have commented here but mayo is not what makes people sick. It is the other ingredients. Mayo does not need to be refrigerated but we do it because it looks nasty warm. Look this up. I learned this from my culinary school. Love your channel.
I made the cauliflower version today. Pretty good. If you really want to save time, just mash the yolks with the back of a utensial instead of using a whole blender.

I made a turnip potato salad will celery, green onions and using vegan Mayo (veganese), a little bit of avocado and dill pickle mustard . Seasoned with salt and pepper . Family loved it!
My aunt always brought the potato, macaroni and egg salad to any family occasions. It was the best! We would ask her what her secret was to making it so delicious and she’d humbly say that it was just potatoes, mayo and eggs like everyone else’s recipe. It was years later that I happened to be at her house while she was making it and she did just what the first recipe showed. She separated the whites from the yolks and made a sauce that she poured over. So, it wasn’t the recipe but the technique that made the difference. I’ve never just chopped the egg with yolks again.
I appreciate what you do by testing out recipes for us. Saves us time and a heartache lol. Watching you is enjoyable, I never get bored. I was just diagnosed with prediabetes and am struggling here. I miss delicious carbs, hopefully some of these alternatives will help.
Just made the cauliflower potato salad and OMG so good. instead of green onions I cooked a 1/4 of a sweet onion chopped with 3 strips of smoked bacon chopped. After cooking them together, I let the mixture cool and drain on a paper towel, then added it with 3 stalks of chopped celery to the salad. YUM YUM YUM. I don't even miss potato salad, this is much better.
Kohlrabi is a good potato substitute. It’s not only healthy, but is very low in carbs as well! Love it! Scallops potatoes (Kohlrabi) is not on my craving list any more. 😋

I peeled and cut the jicama in bite sized chunks and it does take FOREVER to get to the right consistency (steady boil for about an hour/hour 15), but geez, is it spot on for taste and texture! I also used A LOT of salt in the water, but used less in the sauce, so it all worked out in the end, and the jicama lost all of that sweet flavor it has raw. I just had to tell you! You're videos have been a ginormous help so I hope you keep doing what you do! Thanks!!
Wes, you are just the best! Love your videos and can’t wait to try the keto potato salads. If you’re looking for a summer pasta salad substitute I recently discovered a low carb way to do it. I used Palmini Linguine instead of pasta. Then added salami, cheese, cherry tomatoes, green onions, fresh parsley, banana pepper rings and cracked black pepper. For the dressing I used Primal Kitchen’s Greek dressing. It was outstanding!
I just tried both - combined the dressings + eggs and I love, love, love both! Thank you!

Do you feel like the cauliflower "fragrance" grows by the day in the fridge, or diminishes? BTW, I tried making potato salad with cooked jicama, it was fairly good, but I think I might like the radish better. My favorite potato replacement for au gratin is kohlrabi, so I think I need to try making a kohlrabi potato salad.
Fun Fact: Cauliflower pretty much has the same fragrance after it's digested too! I'm sorry. I couldn't resist! My husband is always fussing at me whenever I steam it saying, "Ew, did you just hit me with a silent but deadly?" Also, I don't think I've ever eaten warm potato salad. Is that even allowed in the south? At any rate, you are spot on about using radishes in your family potato salad recipe. I made my mama's recipe using radishes and it was a hit! Once you cook the radishes, you can squeeze some of the water out using a paper towel. Helps keep the salad from being too "liquidy".

I use radishes or zucchini for German potato salad too. I loved roasted radishes with onions and garlic powder. As a diabetic keto keeps me off meds. A big daikon baked with butter and parmesan cheese. Life is good.

I introduced my family to the cauliflower "potato " salad a few years ago. My version is chunky, with eggs, pickles, celery and green onion. I like the idea of radishes though, reminds me of my grandmother's red potato salad.

After I saw you roast radishes, I tried it. Super yum. My boyfriend (who has lost about 180 pounds with low carb and intermittent fasting) said I had no idea I liked veggies!😃 now he gets zoodles, mashed cauliflower and roasted radishes. Life is good.

I recently tried radish potato salad but my radishes were pretty watery. Granted I also boiled them a lot because I don't like the radish taste. I'll see if doing that in a shallow pan helps them not be waterlogged. Thanks so much for this video, I appreciate all that you do!

So this particular video inspired me to find a recipe for mashed radishes as a mashed potatoes substitute. (I've eaten mashed cauliflower as a mashed potato substitute and it worked fine... But it just wasn't quite "there" if that makes any sense) I had to do a lot of hunting to find a recipe for mashed radishes. I FINALLY stumbled across this recipe and gave it a shot. The only difference is that I was starting dinner late, so instead of boiling the radishes I cooked them in the microwave. After I drained them really well I added butter, heavy whipping cream, a little pink salt, a little pepper, some cream cheese, some minced garlic, and some shredded parmesan. I used my immersion blender until they were smooth and creamy. Oh my gosh they were so delicious!!! If you've already tried mashed radish I would love to see your recipe and maybe compare it to this one.
The only thing I might do different in the future is peel the red skin off the radish because the end product is a lovely shade of pink; which is not bad but if I'm looking for something that is reminiscent of mashed potatoes... I want it to look like mashed potatoes. 😉

Made a hybrid - combined both cauliflower and radishes into the same recipe for a large family gathering. Nobody turned their nose up at it. Turned out pretty good. Boiled them together in the same pot for 10 mins. Mashing up he egg yolks into the dressing was something new to me - loved it.

Hey, Wes. I make “potato” salad with radishes all the time with my own recipe, and my husband, who is not eating low carb, loves it. I steam the radishes in my steamer. I also steam the radishes and then fry them up like home fries....awesome. :)

@@marf14marf14 they do lose a lot of the spicy radishy taste and become pretty neutral tasting. You won't mistake them for potatoes, but my family didn't guess they were radish.
I know a chef and her secret ingredients in potato salad is pickles and pickle juice but she also adds finely chopped water chestnuts. The water chestnuts add crunch without changing the flavor. Loved the fact you blew on both cold salads before tasting. thanks for the video.

I watched this battle when it first came out, and it got my gears going. Tonight for dinner, we smoked some ribs and I made faux-tato salad using JICAMA!!! It is like a rutabaga without the sharp bitterness. The secret is to pressure cook (or boil the snot out of) the cubed jicama for 1 hr and let the pressure release naturally. Drain and cool the cubes. Mix up your dressing and then the cooled jicama cubes. Let the whole salad sit for about 2 days in your fridge. There is a slight texture difference because jicama doesn't soften up the same, but two days later and it tastes like potato salad where maybe I undercooked the potatoes just a little bit. Thank you for this battle! My gears wouldn't have been spinning without your inspiration!
I recently used daikon radishes as a substitute. I made two recipes. Fed them to my family. Only one knew it wasn't potatoes. Both were enjoyed by all. You only need to remember drain to get out the water and pat dry. Will make them again.

I'm looking forward to experimenting with---combining---these two recipes. I'm gonna use the radishes, but use the eggs and make the dressing from the cauliflower recipe, adding in the fresh dill and celery of the radish one. I bet it is gonna be pure magic!

I’ve always made a baked potato salad w half mayo and half sour cream then cheese and bacon w seasoning for potatoes usually salad supreme. Or I go the egg pickle route w or without bacon and a salt pepper seasoning w some red pepper. I may try the radish one.

My local butcher makes some smoked bacon that is actually TOO smokey for my taste as breakfast bacon, but it's amazing in radish fauxtato salad.

I haven’t tried this recipe, the first one, however I definitely plan to make both! I’d add eggs to it though. These types of recipes you kind of have to experiment until it’s the way you like it I suppose. I have an immersion hand blender and I’m thinking that might be easier to use to blend the sauce? I’ve always used both yellow & Dijon mustard, a mix of both, in potato salad as well as macaroni salad. These are actually a couple of things I’ve really missed on this diet so I’m excited to learn new options! Thanks for doing these videos. I’ve been binge watching them the past few days and I’m not only getting lots of great keto recipe ideas, I’m learning things about how to cook better that I didn’t know I didn’t know lol. The way you compare a few different recipes is unique compared to other keto cooking content creators and I find it extremely helpful. You’re definitely worth subscribing to and I plan to eventually watch all your past and future videos.
Just made the radish and added eggs and pickles and rather than lemon I used the same amount of pickle juice. I tasted the cooked radish and got very excited. It’s chilling at moment. I’ll come back to update.

I've used radishes to replace my potatoes in stew but I never thought to make a faux potato salad with them. First, I halved the recipe because I didn't know if I'd like it or not. You see, I adore potatoes so it takes a lot for me to accept an alternative. Next, I took your suggestion to use the other dressing since I also have a cauliflower recipe that is similar. The difference is adding some creamy horseradish to the mix which gives it a nice little kick. I'm not fond of pickles in my potato salad so instead I use liquid from a jar of pepperoncini. All I have to say is WOW. I love cauliflower but the radishes definitely have a texture which is much closer to a potato. The salad turned out awesome and if you couldn't see the red of the radishes, I highly doubt anyone would even know the difference. Thank you so much for sharing these ideas! ♥♥
Going to try radish for my Easter potato salad. Just going to use my usual ingredients (eggs, celery, bacon, small amount of red onion, olives and pickets with lots of vinegar, mayo and mustard) and sub in some radish. Excited to see how it comes out!

I use radishes for lots of things Keto. Cubed in Chili versus beans, fried faux home fries, added to roasts, etc. Most people are shocked to know they are eating radishes.

I like to use radishes fried with onions like potatoes as a side dish. I slice them, microwave on high for 4 minutes, then fry with the chopped onion using bacon grease if I have it or avocado oil till brown and crispy!

Someone may have commented here but mayo is not what makes people sick. It is the other ingredients. Mayo does not need to be refrigerated but we do it because it looks nasty warm. Look this up. I learned this from my culinary school. Love your channel.
I made the cauliflower version today. Pretty good. If you really want to save time, just mash the yolks with the back of a utensial instead of using a whole blender.

I made a turnip potato salad will celery, green onions and using vegan Mayo (veganese), a little bit of avocado and dill pickle mustard . Seasoned with salt and pepper . Family loved it!
My aunt always brought the potato, macaroni and egg salad to any family occasions. It was the best! We would ask her what her secret was to making it so delicious and she’d humbly say that it was just potatoes, mayo and eggs like everyone else’s recipe. It was years later that I happened to be at her house while she was making it and she did just what the first recipe showed. She separated the whites from the yolks and made a sauce that she poured over. So, it wasn’t the recipe but the technique that made the difference. I’ve never just chopped the egg with yolks again.
I appreciate what you do by testing out recipes for us. Saves us time and a heartache lol. Watching you is enjoyable, I never get bored. I was just diagnosed with prediabetes and am struggling here. I miss delicious carbs, hopefully some of these alternatives will help.
Just made the cauliflower potato salad and OMG so good. instead of green onions I cooked a 1/4 of a sweet onion chopped with 3 strips of smoked bacon chopped. After cooking them together, I let the mixture cool and drain on a paper towel, then added it with 3 stalks of chopped celery to the salad. YUM YUM YUM. I don't even miss potato salad, this is much better.
Kohlrabi is a good potato substitute. It’s not only healthy, but is very low in carbs as well! Love it! Scallops potatoes (Kohlrabi) is not on my craving list any more. 😋
