I went on a low carb diet/ keto when the Atkins Diet was so popular many years ago and I lost 43 lbs. I was telling my hubby just a few days ago that I think I might go back on the low carb diet because I find that when dieting the low carb diet way that it is the only diet that stabilizes my blood sugar . When I try to go on other diets I have terrible blood sugar drops so when I came across your low carb videos on TH-cam I was like yep I’m supposed to get back into the low carb lifestyle. I’m hoping that I will be successful in loosing all the weight I need to loose ..especially for health reasons . I’m in my early 60’s and I think for my latter years I should become more health conscious for my heart , joints, and all over health for my body I’m sure loosing 60 or more pounds will make a big difference in the health of my body and life. I also think that your delicious recipes will help me stay on track so I appreciate all that you are doing to help us live a healthier life while being on a low carb lifestyle.
My potato salad secret: 1. Always add bacon 2. Mix the wet ingredients together first and let the flavors marry together (including salt & pepper, pickles), then you can add as much or as little as you want to your cauliflower for your desired wetness/ dryness.
The middle of the cauliflower is the core or the center which is also edible and can be used to make vegetable stalk. You can add, carrots, celery, onions, and garlic, with salt, pepper, and whatever other seasonings you would like to add to make a flavorful vegetable broth and/or soup.
I made this for myself and my 92 year old dad. He loved it. He said he wouldn’t have known it didn’t have potatoes if I hadn’t told him! This was better for his diabetes Thank You!!
I had weight loss surgery and I maintain a Keto diet. I could not even tell it was not potato!! I am known for my potato salad, people who hate potato salad love mine, I swear people invite me to BBQ’s so they can have it…lol, so this was HUGE!! I just made it exactly like I make mine….Cauliflower, Pickles, Egg, Mayo, Must, Salt and Pepper. So Yummy!! 💚Thank You!!
First time I made the “Potato” salad I boiled it, BUT the second time I made it I steamed the cauliflower and it was WAY better then boiling. Thank you for the recipes!!!
@@carrieb9036 I can't even imagine boiling a veggie...I keep the pieces large...maybe 5-6 pieces for large head. I only use a few Tbsp of water, cover, cook on medium about 5 min...done! I think boiling is why ppl don't like veggies. The remaining water, if there IS a tsp or so left, can be poured back on the veg so no nutrients or flavor are lost.
@spirals 73 Ugh! Steam with just a few Tbsp water for about 4 minutes. If too form, replace lid. allow to stand a minute or 2 more, off burner. Will not release that toxic gas of overcooked cruciferous veggies!.
The core. At the end of the jar of mayo I would have squeezed my mustard and sour cream into the the jar with a little pickle juice with the spices from the bottom of the pickle jar, put the lid back on shake it up to mix then pour onto my salad and mix well.
@DeniseCarter just curious if that pickle juice would create a “wet” potato salad? It is a different take on salad if so... I was taught to try it before knocking it... I hope you record a video of your recipe. Please tag me. I’ll watch.🌺
Thinking about my comment on the pork rinds , add to watch you are going to eat immediately because they might become soggy in the leftover salad in the refrigerator.
If you hold the head of cauliflower in your hands, core side down, and then bang the core into a cutting board, the whole core will just fall off. My mama taught me this.
I made cauliflower "potato salad" once or twice years ago, and I have been known to actually burn water. My wife just passed, so now I`m back on keto for my health...that looks so good. Keep up the great work!
Oooh please save the cauliflower leaves and cores for homemade stock! Or even chopped up fine and sauteed in butter for a delicious side dish. Even better with bacon bits, and you can use the bacon grease. No food waste! :)
I have been told by a farmer not to use the leaves unless you have bought organic otherwise the pesticide load is too high even if you wash it. p.s. ridiculous fingernails.
I use sliced black olives and yes a splash of apple cider vinegar and dash of garlic powder in my potato salad. Will definitely use this keto version. I love potato salad.
This looks good! My mother's secret ingredients to regular potato salad were.....sliced cucumber and sliced green peppers. Everyone loved her potato salad! I'm going to make your recipe adding cucumber and green pepper. Oh yes, she ALWAYS made her potato salad the day before serving, refrigerating overnight. This allowed all the flavours to blend together for the best taste possible.
My family calls it the core. FYI, if you peel the core, that gets rid of the toughness and you can cut it up and cook it with the rest of the cauliflower 🙂

I made this to take to my niece's graduation party. Only changes I made were to use more mayo and more mustard (I like yellow potato salad), no sour cream and I substituted the pickles with sweet relish. It was soooo delicious! I'm so grateful for your channel. You opened my eyes to the fact that I can still eat foods that I love...just in a keto version. Thank you!
I made mine the same as you. I think its more where we're located in the country that determines how we prepare our salads. I'm from Philly and my recipe matches yours. Much more mayo, much less celery, and RELISH! 😍

yes, a cap of vinegar is a must. sometimes I use red wine vinegar. DELICIOUS! Also, a small amount of Grey Poupon instead of the yellow mustard is a must! adds a much nicer depth of flavor!

I used your idea here to substitute cauliflower for my mom's family PS recipe..it was a big hit..no carbs...no leftovers...also I make my own mayonnaise now too. Everyone should try 1 cup MCT OIL, one egg, dry mustard and salt, either lemon juice or vinegar. Waaaay healthier than store bought

I choose NOT to cut up cauliflower so small. Prior to streaming it, HOT BOILING IT. Takes about 10 to 12 minutes to stream. When steaming you do not have to drain the cauliflower. Then place it in a large plastic bowl, use a pasty cutter to break it up to the size you would like. I steam the whole cauliflower, stems & leaves, and the hard part. I break them off cut them in chunks. The hard part is known as the stem or heart of the cauliflower. For flowerets to grow on & blum. Cauliflower is great to eat raw, cooked. My favorite way is cooked with melted butter & lemon.
I just made this recipe today. It's AMAZING! Even without the eggs it still tastes extremely close to potato salad. I topped with cayenne. PERFECTION! ❤
I add zest of a lemon and a good squeeze of lemon juice, chopped garlic chives and fresh mint as well because it gives it a nice little kick. Also freshly cooked crispy bacon. So good!!!
I’ve made my take on this! I add more Mayo, no sour cream, more onion & in place of pickles I use Manzanilla olives which are the green olives stuffed with pimentos & of course the boiled eggs! I make sure to salt my water well so the cauliflower has flavor & I chunk it up, cutting it a little larger than bite size because when you cook it, it gets soft. I make sure to drain the cauliflower on a clean kitchen towel or cheesecloth in a bowl & cool in the fridge, which helps keep it firm. Once cool, like you I add all my ingredients & mix well. It comes out delish & my finicky son, loved it! Like you said, it’s pretty close to the real thing & makes a perfect side to fried chicken or any other protein! Love your channel & your energy! I heartily agree with you. Nothing like a fresh head of cauliflower, lock, stock and barrel. I also believe in including the whole of the stems of spinage (not in this recipe, I know) after removing any overbent/cracked parts of the main stems and the leaf stems.
7/7/22 - I made it for our 4th of July picnic. It was a hit! I used frozen cauliflower which I dry-roasted in the oven and allowed to cool completely before adding it to the salad. I think this helped to keep moisture levels low in the cauliflower.
@@HappySunshineDay Hi there! Your version of "dry roasting" frozen cauliflower to reduce the moisture content sounds interesting. How did you do it exactly. Did you just take a bag of frozen cauliflower florets and put them in the oven, and once cooled, cut them up into bite sized pieces and then add them to the faux potato salad? If so, how long did you put the florets in the oven for and at what temperature?

Summer's around the corner! Can't wait to try this!!! Just an FYI: Adding around 3-4 tablespoons of pickle juice and some salt and pepper to the boiled cauliflower while it cools makes it pop. Let it cool to room temp and dress it. It adds so much flavor to the cauliflower. Separating the hardboiled egg yolks from the whites and blending the yolks it into the dressing makes it taste beyond amazing.
For safety you should always turn the handles of your pots and pans away from the front of the stove. Turn them out toward your counter top to prevent accidentally tipping the pots or pans over. Nobody wants to be scalded by hot water, milk or broth, likewise no one wants to get burned by tipping over hot oil on themselves either. Be safe and enjoy happy cooking!

I am so happy to be able to share a tip with you: to remove the "leaf" part, I hold the cauliflower with green on bottom and then bang it quite hard on the counter. It loosens and comes off easily. You might not want that noise on camera🤣, but, when not on camera, you can try.
Thanks for the "potato" salad recipe. I added a can of tuna to boost the protein. I serve it over a few leaves of lettuce and of course 2 slices of pickles. Yum!
I'm from the Netherlands and enjoy you're video's! If you like a suggestion: Mayonaise is super easy to make from scratch. I never thought it would be that easy, but it takes me not more than 5 minutes to make the most delish mayo. 250 ml mild olive oil, 1 egg, a drop of mustard, salt, keto-sugar, apple vinegar or other vinegar or lemon juice, cumin, tumeric, sweet curry (all spices at tast, a matter of trying). Put it in a higher and narrow bowl, put you hand blender on top of the egg yolk that is should still be in one piece and mix on the highest level, you see the oil substance change in mayo. Don't move your mixer in the beginning, and than start moving it really slow to mix the oil into the mayo. When done you have a perfect light yellow thick mayo that is really healthy but above all SO good and tastfull! you can keep it in the fridge for at least a week. Enjoy!
This is a nice basic recipe. Just add what you are accustomed to making potatoe salad with. We prefer a sweet potatoe salad. So I use low carb sweet relish. I add a small bit finely chopped bell pepper. Also I grate the onions. This helps it integrate the onion flavor. Of course I dont use sugar, but a couple of drops of lowcarb sweetener just adds a tad bit more to balance out the background twang to the mustard. I'm liking the suggestion of adding bacon from the other comments.
In my opinion this beats regular potato salad hands down! The texture of the cauliflower is much more palpable to me than potatoes. For someone who rarely eats potato salad, I have made this cauliflower version about 6 times in 2 months. It's that good! Thank you for sharing!

I don't throw the core away. That's the exact part I am using for this salad plus other cut off smaller stems. The florets are then pulsed in the blender for cauliflower rice.

Weight Watchers used to make mock potato salad too, just like you are doing, except they promote all low fat mayo and no sour cream. See I like your recipe I do Atkin's so they are a lot the same, except they don't allow as many carbs as Keto does.
@@cjcj6945 Make ranch potato salad by making the dressing with sour cream and mayo in equal parts with Hidden Valley Ranch Dressing and Dip Seasoning mix, drop the eggs and add grape tomatoes, onion, celery or celery seed,even little matchsticks of carrot if you want . Put the unused dressing in the frig because you have to use l cup of sour cream and 1 cup of mayo or it will be to salty from the ranch seasoning pack.
Thank you for the ideas. I steamed my cauliflower as I used the salad for more meals, this way it does not let any water. Also, I am not a fan of processed foods so I did my own tasty mayo with one boiled egg yolk, one raw egg yolk, very bit of lemon juice and a bit of mustard. Everything mixed without seasoning and adding oil bit by bit so that the mayo is growing.

Greek yogurt & mustard tastes just like mayo & mustard....I love it. Tastes awesome. I didn't think I could give up mayo.... And I use Greek yogurt in my canned tuna fish...YUM!!
Great recipe! Thanks for sharing. Important to note that washing the cauliflower to eliminate pesticides is really important. Cutting it up and then rinsing it really well works better than just rinsing the outside of the whole veg. If this was done - we just didn't see it, but would be a great reminder to wash all veggies thoroughly. Also rewashing cutting board if cutting unwashed veggies on it between each veg is important. I started making this foux potato salad during the summer. Your exactly right as far as once you make it, taste it, you will always want to eat it. One thing I did was blot the cooked cauliflower after it cooled with a paper towel. It made it have a richer taste. I love pickles too. I have a big head of cauliflower in my fridge, guess what I’ll be making tomorrow! You are the best and I’m always looking to your channel for your next recipe.
I used to make this all the time until I tried making faux potato salad using radishes. It's even better than using the cauliflower because the texture is a lot closer to a potato. You just have to cook the radishes for a few min in boiling water, cool down and then make the salad just like you'd make it if it as potato salad.
I made it again. This time, instead of cauliflower, I cut up a rutabaga and cooked it in the pressure cooker for 8 minutes, then drained, rinsed and mashed it. Otherwise followed the recipe. The mashed rutabaga is also great as a mashed potato substitute. A little cream, butter, salt and pepper, maybe garlic powder, yum. But if you have some meat and gravy.....excellent.
I make my own avocado oil mayo now... That's what I use always. And black olive slices and sliced radishes are great in the faux-tato salad -- and SO KETO!!
What might be another way of doing it would be to premix all the wet ingredients with the pickles and onions Etc and once that's all Mixed then add it to the cauliflower otherwise it breaks down the cauliflower too much...just a suggestion 😊
I made this. I added a dash of dill, fresh parsley and 1 tablespoon of apple cider vinegar . Love the paprika and cayenne pepper added to it also. It came out delicious
I come accros your channel and saw this recipi. Started my diet april just eating less fat and oily food and cut off alcohol. From size 14-16 i am now size 8. I am happy with my weight now but continue to control what i ate. Just made this cauliflower salad since iv got eveything in my fridge apart fron celery, instaed i put celery salt just to have a hint of celery. Turns out really tasty and yummy. I substitute the sour cream with low fat yogurt and low fat mayo. Wow.... defientely my new favirite meal thank you❤

Try radishes, either daikon or regular red salad radishes. Keto Twins have videos where they use them. Apparently, if you cook them long enough they lose the peppery bite. *(I haven't actually tried them yet, but I did buy them to try....)

I'd skip the cayenne pepper and paprika and I do not like paprika on anything , I'm the same way about nutmeg and ginger , I will add like 1/4 tsp to recipes that call for a whole teaspoon.
I recently found a recipe for Keto Cream of Potato Soup. The substitution was turnips for the potatoes. If I didn't already know that there was no potatoes in the soup, I wouldn't have known. Maybe that could work with your recipe for the potato salad ... or at least a partial substitution. I am going to try it.
It just depends on the season but sometimes I like to add a little sour cream or a little greek yogurt plain with the mixture, and I also like a little teaspoon of vinegar and sometimes a tablespoon of honey mustard or Horseradish. Not too much of any of those can crank it up a notch or two. One time when I got done eating half of the batch, I've thought about putting it in the cusinart And making a mashed potato style out of the above contents and it was excellent also. So the above potato salad can turn out to be a great mashed potato, without the potatoes.

@@Ena48145 No! They couldn't tell! There was so much other flavor going on and honestly the cooked jicama has a very similar "mouth feel" to white potato. The flavor is super bland so it takes on whatever you mix with it pretty much making it perfect. Worth a try! 🤫😝
@@amarievargas80 Hi! Depending on the size of your jicama chunks it could take 20-30 minutes to boil in rapidly boiling water. I'd set the timer for 30 minutes and kind of poke them with a fork at 20 minutes to see how you like it. Girrrrrrl! IJS. 🤤🤤🤤
Oh my! I just made this and I can’t tell it’s not potato salad! A couple changes: I have a large steamer so I steamed the cauli instead of boiling so there wasn’t alot of water in it. I used sugar free pickle relish instead of dill as I like sweet pickles. Also I used celery seed in addition to celery! I also added about a tsp of monk sweet sweetener to it. Love this! A new side dish!!! I believe the center is called the core. Thank you . Love ya friend!!! ❤️

I'm going to try this*but I made a Potato Salad out of Jicama🤔yes and it was good*but I had to boil the Jicama for 2 hours and then I pulled the Jicama in my food processor it came out great and my Husband was eating it thinking it was regular potatoe salad try it you will love it

Mix some of the vinegar from the pickle jar with the Mayo and mustard before folding into the other ingredients. Magic

Only changes I made were to use more mayo and more mustard (I like yellow potato salad), no sour cream and I substituted the pickles with sweet relish. It was soooo delicious! yes, a cap of vinegar is a must. sometimes I use red wine vinegar. DELICIOUS! Also, a small amount of Grey Poupon instead of the yellow mustard is a must! adds a much nicer depth of flavor!

I used your idea here to substitute cauliflower for my mom's family PS recipe..it was a big hit..no carbs...no leftovers...also I make my own mayonnaise now too. Everyone should try 1 cup MCT OIL, one egg, dry mustard and salt, either lemon juice or vinegar. Waaaay healthier than store bought

I put the core and leaves in my blender along with spinach, and celery for a veggie smoothy! Delish!
I choose NOT to cut up cauliflower so small. Prior to streaming it, HOT BOILING IT.
Takes about 10 to 12 minutes to stream. When steaming you do not have to drain the cauliflower. Then place it in a large plastic bowl, use a pasty cutter to break it up to the size you would like.
I steam the whole cauliflower, stems & leaves, and the hard part. I break them off cut them in chunks. The hard part is known as the stem or heart of the cauliflower. For flowerets to grow on & blum. Cauliflower is great to eat raw, cooked. My favorite way is cooked with melted butter & lemon.

I just made this recipe today. It's AMAZING! Even without the eggs it still tastes extremely close to potato salad. I topped with cayenne. PERFECTION! ❤
I add zest of a lemon and a good squeeze of lemon juice, chopped garlic chives and fresh mint as well because it gives it a nice little kick. Also freshly cooked crispy bacon. So good!!!

I’ve made my take on this! I add more Mayo, no sour cream, more onion & in place of pickles I use Manzanilla olives which are the green olives stuffed with pimentos & of course the boiled eggs! I make sure to salt my water well so the cauliflower has flavor & I chunk it up, cutting it a little larger than bite size because when you cook it, it gets soft. I make sure to drain the cauliflower on a clean kitchen towel or cheesecloth in a bowl & cool in the fridge, which helps keep it firm. Once cool, like you I add all my ingredients & mix well. It comes out delish & my finicky son, loved it! Like you said, it’s pretty close to the real thing & makes a perfect side to fried chicken or any other protein! Love your channel & your energy! Keep sharing!
If you boil the cauliflower whole, you can better control the cut sizes, and you fon't get all those "crumbs".

I heartily agree with you. Nothing like a fresh head of cauliflower, lock, stock and barrel. I also believe in including the whole of the stems of spinage (not in this recipe, I know) after removing any overbent/cracked parts of the main stems and the leaf stems.

This was so good and it tastes like the real thing. I steamed my cauliflower instead for about 10 minutes
7/7/22 - I made it for our 4th of July picnic. It was a hit! I used frozen cauliflower which I dry-roasted in the oven and allowed to cool completely before adding it to the salad. I think this helped to keep moisture levels low in the cauliflower.

Did you just take a bag of frozen cauliflower florets and put them in the oven, and once cooled, cut them up into bite sized pieces and then add them to the faux potato salad? If so, how long did you put the florets in the oven for and at what temperature?

Just an FYI: Adding around 3-4 tablespoons of pickle juice and some salt and pepper to the boiled cauliflower while it cools makes it pop. Let it cool to room temp and dress it. It adds so much flavor to the cauliflower. Separating the hardboiled egg yolks from the whites and blending the yolks it into the dressing makes it taste beyond amazing.
The bottom I believe is the stem and the center is called the core.
For safety you should always turn the handles of your pots and pans away from the front of the stove. Turn them out toward your counter top to prevent accidentally tipping the pots or pans over. Nobody wants to be scalded by hot water, milk or broth, likewise no one wants to get burned by tipping over hot oil on themselves either.

I am so happy to be able to share a tip with you: to remove the "leaf" part, I hold the cauliflower with green on bottom and then bang it quite hard on the counter. It loosens and comes off easily. You might not want that noise on camera🤣, but, when not on camera, you can try.

Thanks for the "potato" salad recipe. I added a can of tuna to boost the protein. I serve it over a few leaves of lettuce and of course 2 slices of pickles. Yum!

I'm from the Netherlands and enjoy you're video's! If you like a suggestion: Mayonaise is super easy to make from scratch. I never thought it would be that easy, but it takes me not more than 5 minutes to make the most delish mayo. 250 ml mild olive oil, 1 egg, a drop of mustard, salt, keto-sugar, apple vinegar or other vinegar or lemon juice, cumin, tumeric, sweet curry (all spices at tast, a matter of trying). Put it in a higher and narrow bowl, put you hand blender on top of the egg yolk that is should still be in one piece and mix on the highest level, you see the oil substance change in mayo. Don't move your mixer in the beginning, and than start moving it really slow to mix the oil into the mayo. When done you have a perfect light yellow thick mayo that is really healthy but above all SO good and tastfull! you can keep it in the fridge for at least a week. Enjoy!

This is a nice basic recipe. Just add what you are accustomed to making potatoe salad with. We prefer a sweet potatoe salad. So I use low carb sweet relish. I add a small bit finely chopped bell pepper. Also I grate the onions. This helps it integrate the onion flavor. Of course I dont use sugar, but a couple of drops of lowcarb sweetener just adds a tad bit more to balance out the background twang to the mustard. I'm liking the suggestion of adding bacon from the other comments.
In my opinion this beats regular potato salad hands down! The texture of the cauliflower is much more palpable to me than potatoes. For someone who rarely eats potato salad, I have made this cauliflower version about 6 times in 2 months. It's that good! Thank you for sharing!

I don't throw the core away. That's the exact part I am using for this salad plus other cut off smaller stems. The florets are then pulsed in the blender for cauliflower rice.

Weight Watchers used to make mock potato salad too, just like you are doing, except they promote all low fat mayo and no sour cream. See I like your recipe I do Atkin's so they are a lot the same, except they don't allow as many carbs as Keto does.

@@cjcj6945 Make ranch potato salad by making the dressing with sour cream and mayo in equal parts with Hidden Valley Ranch Dressing and Dip Seasoning mix, drop the eggs and add grape tomatoes, onion, celery or celery seed,even little matchsticks of carrot if you want . Put the unused dressing in the frig because you have to use l cup of sour cream and 1 cup of mayo or it will be to salty from the ranch seasoning pack.

Thank you for the ideas. I steamed my cauliflower as I used the salad for more meals, this way it does not let any water. Also, I am not a fan of processed foods so I did my own tasty mayo with one boiled egg yolk, one raw egg yolk, very bit of lemon juice and a bit of mustard. Everything mixed without seasoning and adding oil bit by bit so that the mayo is growing.

Great recipe! Thanks for sharing. Important to note that washing the cauliflower to eliminate pesticides is really important. Cutting it up and then rinsing it really well works better than just rinsing the outside of the whole veg. If this was done - we just didn't see it, but would be a great reminder to wash all veggies thoroughly. Also rewashing cutting board if cutting unwashed veggies on it between each veg is important. I started making this foux potato salad during the summer. Your exactly right as far as once you make it, taste it, you will always want to eat it. One thing I did was blot the cooked cauliflower after it cooled with a paper towel. It made it have a richer taste. I love pickles too. I have a big head of cauliflower in my fridge, guess what I’ll be making tomorrow! You are the best and I’m always looking to your channel for your next recipe.
Just roast your cauliflower instead of boiling it. Less moisture, nothing leaches into water and roasting always brings out more flavor in veggies.

I used to make this all the time until I tried making faux potato salad using radishes. It's even better than using the cauliflower because the texture is a lot closer to a potato. You just have to cook the radishes for a few min in boiling water, cool down and then make the salad just like you'd make it if it as potato salad.

I always add pickle juice to "thin" the mayo and give extra flavor.

I made it again.
This time, instead of cauliflower, I cut up a rutabaga and cooked it in the pressure cooker for 8 minutes, then drained, rinsed and mashed it. Otherwise followed the recipe. The mashed rutabaga is also great as a mashed potato substitute. A little cream, butter, salt and pepper, maybe garlic powder, yum. But if you have some meat and gravy.....excellent.
I make my own avocado oil mayo now... That's what I use always. And black olive slices and sliced radishes are great in the faux-tato salad -- and SO KETO!!

What might be another way of doing it would be to premix all the wet ingredients with the pickles and onions Etc and once that's all Mixed then add it to the cauliflower otherwise it breaks down the cauliflower too much...just a suggestion 😊

I made this. I added a dash of dill, fresh parsley and 1 tablespoon of apple cider vinegar . Love the paprika and cayenne pepper added to it also. It came out delicious

I come accros your channel and saw this recipi. Started my diet april just eating less fat and oily food and cut off alcohol. From size 14-16 i am now size 8. I am happy with my weight now but continue to control what i ate. Just made this cauliflower salad since iv got eveything in my fridge apart fron celery, instaed i put celery salt just to have a hint of celery. Turns out really tasty and yummy.

Try radishes, either daikon or regular red salad radishes. Keto Twins have videos where they use them. Apparently, if you cook them long enough they lose the peppery bite.

I'd skip the cayenne pepper and paprika and I do not like paprika on anything , I'm the same way about nutmeg and ginger , I will add like 1/4 tsp to recipes that call for a whole teaspoon.

I recently found a recipe for Keto Cream of Potato Soup. The substitution was turnips for the potatoes. If I didn't already know that there was no potatoes in the soup, I wouldn't have known. Maybe that could work with your recipe for the potato salad ... or at least a partial substitution. I am going to try it.

It just depends on the season but sometimes I like to add a little sour cream or a little greek yogurt plain with the mixture, and I also like a little teaspoon of vinegar and sometimes a tablespoon of honey mustard or Horseradish. Not too much of any of those can crank it up a notch or two. One time when I got done eating half of the batch, I've thought about putting it in the cusinart And making a mashed potato style out of the above contents and it was excellent also. So the above potato salad can turn out to be a great mashed potato, without the potatoes.
Cauliflower anatomy: Roots below ground. Leaves and stem (core) above ground and most people throw away but all are edible. Florets are what you used (so messy to chop LOL).

@@Ena48145 No! They couldn't tell! There was so much other flavor going on and honestly the cooked jicama has a very similar "mouth feel" to white potato. The flavor is super bland so it takes on whatever you mix with it pretty much making it perfect. Worth a try! 🤫😝

@@amarievargas80 Hi! Depending on the size of your jicama chunks it could take 20-30 minutes to boil in rapidly boiling water. I'd set the timer for 30 minutes and kind of poke them with a fork at 20 minutes to see how you like it. Girrrrrrl! IJS. 🤤🤤🤤

I love “potato” salad made with cauliflower. I make it like I make my regular potato salad and it’s fantastic.
Oh my! I just made this and I can’t tell it’s not potato salad! A couple changes: I have a large steamer so I steamed the cauli instead of boiling so there wasn’t alot of water in it. I used sugar free pickle relish instead of dill as I like sweet pickles. Also I used celery seed in addition to celery!
I also added about a tsp of monk sweet sweetener to it. Love this! A new side dish!!!

I'm going to try this*but I made a Potato Salad out of Jicama🤔yes and it was good*but I had to boil the Jicama for 2 hours and then I pulled the Jicama in my food processor it came out great and my Husband was eating it thinking it was regular potatoe salad try it you will love it
