Low Carb HASH BROWN SHOWDOWN! Cauliflower vs. Radish vs. Turnip vs Spaghetti Squash - Keto Hashbrown

  • Low Carb HASH BROWN SHOWDOWN!
Hash browns are one of the most popular ways to cook potatoes, especially for breakfast! Today, we investigate a few delicious, potato-like, low carb options for hashbrowns. No longer are low carb and keto eaters forced to use just cauliflower for hashbrowning. We test turnips, radishes, spaghetti squash and taste them against the ol’ cauliflower hash brown stand-by.

Me brain started smoking when I decided to try the radish/cauliflower hashbrown mix in my newly acquired mini waffle/chaffle maker, which I have been using to make awesome lo/no-carb buns for burgers, breakfast muffins, etc. GAME CHANGER!! I swear I heard angels singing when I opened the machine, and they were so good I wanted to slap my grandma (essential Southernism 💜), but she was too fast for me.......😷🇺🇸

Jicama makes great low-carb hash browns. Don't need any binders or anything; just have to make sure you squeeze out as much liquid as possible. It's slightly sweet, but other than that you can't really tell it's not potato once you got a fried egg and some hot sauce on there. First time I made it was a spiritual experience.

If you use small turnips, I find them at a local grocer, instead of the larger turnips that you had they tend to be way less pungent. I like the turnips that are nearer to the size of a new potato.

Cannot wait to try this one looks delicious. I am excited for new recipes hopefully from you with turnips and radishes in place of cauliflower. By the way, I make an excellent spaghetti squash dinner with meat sauce. The trick is to microwave your spaghetti squash before cutting it and then cook it long enough to where it will not be crunchy but more like al dente.

I have used radish in a lot of things, but never hash browns. I will try! I have not found anything I thought replicated this style of hash brown super well, so I was excited to see this video. The best combination for this shredded style of hash brown I have come up with is a combination of parsnip, carrot and zucchini. Which is actually very good. I want to try rutabaga and parsley root next.
I use old large carrots so I do not get a lot of sweetness and less moisture. The parsnips can vary in sweetness, but the less sweet for this, the better. They also add a bit of creaminess.
Zucchini is very wet, but your method will take care of that. What I do is grate then salt and let sit. Squeeze out the liquid, rinse in very cold water and squeeze well. I do not pre-cook. I have also done nothing but hand julienne, period, and to be honest, I could not tell any difference in cooking. I know using a grater (hand or electric) brings the water out of veggies.
It is the zucchini that gives the internal potato creaminess that everything else low-carb misses. What really makes the big difference in flavor in mine is the addition of minced onion. Do not grate it, it is too bitter and watery that way. Mince with a knife and add in. I also do not need to use egg or Parmesan, it all holds together nicely. Beef tallow is the best thing to use to fry these. Butter, coconut oil, bacon fat all keep the hash browns too soft for my liking. I want a little more crispness. Plus the beef tallow lends more flavor, as well, but they do not taste beefy.
For chunky hash browns, like you would add to a scramble, like in egg-chorizo-potato breakfast tacos (or egg-steak-potato), nothing beats chopped or diced parsnips, to me. Per medium parsnip chopped, I add 1 teaspoon water and microwave 1 minute, then add to onions caramelizing in the skillet to also brown, then continuing the recipe as you normally would. For a tortilla I make them using just my favorite gluten-free flour blend and sweet potato, 1 cup each. Yellow or white sweet potatoes are less sweet. Here is one, but like any cook, you will probably make some variations. For really low-carb your Carbquick would be a very good option here for flour. th-cam.com/video/WRj0tPEjcBY/w-d-xo.html
    OR th-cam.com/video/WP4-TxVvlKc/w-d-xo.html
I am sure you know about how to make a crispy taco shell using a very thin slice of skim provolone cheese in the oven (can do many at once). They are delicious and quick! Be sure to bend them into the U shape you want about 30 seconds out of the oven. Waiting past 1 minute is too long.
    Thank You for the videos!

I tried a Keto Cracker Barrel Hash brown casserole remake. It used the stems of the cauliflower it was much better then the flowerets. So might be a good combination the stems with radishes. It is neat when you use a cheese grater large side to grate the stems it looks like grated potatoes.

Long term keto fan here… I love radishes as a potato substitute. Wash them, cut off the ends, cut them in half, toss them in olive oil, salt, pepper, dried oregano and roast them. Add a bit more olive oil to the roasting dish…. They cook much quicker than a potato. Divine.

People don't realize this, but sesame tahini can be used as a binding agent. The end result is not eggy. Of course that will turn the entire dish vegan. But its a nice ''good boy'' option to have.

If you're not into friggin' around.
Riced cauliflower is cheap, readily available, and ready to use.
Dry-fry it, which kills the cauliflower taste, and mix with egg, maybe some minced or powdered onion.
Fry 'em up......Very quick, and with minimal cleanup.

Today I made what I call my Cheesy Chicken & Radish Hash. I simply sauteed a small bag of radishes that I quartered, in a little olive oil with salt & pepper, then added half of a diced onion. Once tender and caramelized I added some leftover diced rotisserie chicken, then topped it with freshly grated cheddar cheese. It was so delicious that even my husband loved it! 😊 I also love radishes in my pot roast.
