Hope you and your family had a great Christmas. That rib roast looked amazing. I used to use the Complete seasoning until I found that it had MSG. It’s a shame because it is a really good rub. I first came across it about it about 10 years ago. In smoking a pork roast for some pulled pork as I watch this.
Love the grill and this page... Would have definitely pulled at 125 though... That way you can still sear and have a finished product of medium rare to medium...
I agree, I pull my rib roast at 125, cover and let sit for at least 30 minutes...it will come up to medium rare on the outsides and rare'ish on the inside slices. I like my prime rib rare... Searing it off after slicing it up just makes it into ribeye steaks. And while I love ribeye steaks, I like my prime rib better. Make some mashed potatoes to slop up all the blood from the rare prime rib...yeah baby! That's good eatin!

The style of cook was GREAT! I have 1 question I was always told it's a Very Bad Idea to use Cooking Wine! The staying if you can't enjoy yo drink it you should not use it!
Hey James..Never heard that one but I can see your point. I use to be that way with beer. I would see people pouring it over food and think “That’s a waste of a good beer” Over time I realized the additional flavor that wine and beer add to the given protein and have been onboard ever since. @@jamesmoore1743 Definitely a great “set it and forget it option.” The pellet grills are a great option for those who don’t have time or really don’t enjoy hanging out at the pit. My friend has a Yoder 640 and he loves it. Me myself, I don’t own one but can appreciate its ease of use. Have a good night James.
Corey Mogren I believe i used about 15 of the smaller logs. Once i used up those logs i went strictly with larger logs. Thanks for checking out the video.

Great cook. How did you attach the brackets for your rotisserie to the Santa Maria?
Aaron Terry Luckily it came predrilled with the necessary cut outs. I was pretty much able to bolt the brackets right on to the Santa Maria grill.
