Great video, looks like it all turned out amazing. You cant beat cooking over a open fire there is just something about it that makes it a little better.
When I first started grilling and smoking no one wanted to share their recipes or cooking techniques. So, thank you for taking the time to share. We have benefited greatly! Also, your videos and camera work have improved greatly. Well done and thank you!
Born and raised in San Diego been smoking and asando...same as asado forever....meat of choice tri tip Santa Maria style....plenty of chorizo....baby backs briskit....my rub I use salt..pepper...granulated onion and garlic and California or guajillo pronounced waheeyo chili powder NO SUGAR!!!!...let meat sit in fridge 24 hrs....really....really good with a fresh salsa of fire roasted tomatos...serrano chilies onion and garlic....most excellent.
Happy to see you enjoying your new cooker. I use my Santa Maria grill probably 2-3 times a week. I LOVE the flavor of the meat grilled on the Santa Maria. Glad to see you have one to play with. Food looked excellent as always! Cheers to ya brother!!!
Cooking OVER the fire can’t be beat. Indirect obviously has its applications but my favorite is over the fire. Hearing the fat hit the coals is sweet music. Cheers!
Russ. You never fail to interest, educate and entertain. This is my first comment to your videos, but I've watched a good 90% of all your videos posted and frankly I'm in awe of the time and effort you've put into, what can only be called a library of culinary goodness. Thank you brother! Mac
I love watching your video. I wish I was standing near you tasting the food and having some of your wife's side dishes. It is beautiful to hear you mention your family and wife. God bless you and your family. Please keep making videos. They are addicting to watch.
Great cook Rus.i have always dug Latino and Asian flavors on the grill, ribs and chicken being prime examples of how easy it is to impart different flavors.Tri Tip is also great with any kind of flavor profile you can think of.The chicken looked great, and like you i also believe some cooks should have plenty of great sausages,so many quality kinds and great flavors to choose from.Look forward to more cooks on her.
Very appropriate that you posted this video today. It’s a coincidence. I’m planning to cook a brisket today the Argentine way. On my Gaucho grill over oak embers. I’ve never cooked a brisket with this method. Even tough you were cooking different meat cuts other than brisket and different brand and larger Argentinian grill than I have, I still found useful techniques and helpful information here. Thank you. It all looked good Russ. I enjoy Raichlen’s products a lot.
I actually posted this video last August Big Lew, but thanks for watching! These style of grills are so much fun to cook on and do a great job. Looking forward to seeing how the brisket cook goes.
Russ you sold me on that grill!!!! Amazing food my friend. Now to get my wife to watch so she will allow me to purchase another grill... Purchasing my 5th cooker will take some negotiation skills but hopefully your video and my charm will be able to convince her... Stay safe my friend.
Russ!!!! Wow man you have done it on this one!! Man I have watched you sence you stared loved eveything you have done.. Brother if you get any better?? That was a geat cook!!! Yea I know what you mean it's work but when you get it right like you do!!! It's fun love your stuff. Best video I ever seen!!! My man Steven Raichlen tought me how to cook. Years ago from his books read them cover to cover. They are falling apart now... Great job!!
WOW!! Russ you cooked up a feast brother, everything looked really delicious. I'm sure you enjoyed cooking on that Santa Maria grill, looking forward to see you doing more cooks my friend.
RUS !! Everything looked amazing ! Out here in California that Santa Maria style is quite popular brother ! I’ll NEVER forget my first Santa Maria style tri tip back in the 80’s. Amazing
Everybody is getting a Santa Maria but me.............I should try and build one, they sure look slick when it comes to controlling the heat. That sure looked like a good feed, looks like the barbecues we used to have down in Texas on an old barrel pit, the only thing missing was the chops and some roasting ears. Good video Rus!
Awesome first cook Rus. All that meat looked amazing. Being just up the road from me, I look at those Santa Maria Grills every time I visit Lone Star Grillz showroom. You are not helping me resist the temptation! 😉
Nice cook! Here in CA this style of cooking is everywhere (drove by a large Santa Maria doing a ton of chicken in a parking lot last week). A good meat hooker is (IMHO) essential when cooking this way, making the flipping and moving of various meats MUCH easier, ~ $20.
Rus, I dig your new grill! Looks like too much fun. And that idea with throwing the onions in there for moisture and flavor is awesome, you learn something new everyday. Take care brother. Cheers!
Good looking ribs and chicken, I like the idea and thought process of the bone side down on the ribs. Sausages sound good. Nicely Done. Thanks for sharing. 😎.
I've been to Montevideo, Uruguay about 9-10 yrs ago and it was the first time I experienced meat cooked on an Argentinean style grill. It's like a meat tsunami down there. Truly awesome experience!
Wow, that's a lot of food there Rus and it all looked super delicious. I do want to give your South American BBQ sauce recipes a try this weekend and see how they work out. I don't have a Santa Maria Grill but what I do have is a regular old school wood burning fire pit that I cook over at least three times a week during the Summer and Fall months. I can adjust the height of the grill grate accordingly but it's nowhere near as efficient as a real Santa Maria but it works. Thanks for sharing and Cheers to ya Rus!
Wow! We didn't need to wait until October when the weather cools down! I guess you couldn't wait to try out that new grill. Looks like you really knocked out of the park, Rus! What a great way to kick off your first cook on that LSG Santa Maria grill. 🔥👍🏻🔥👍🏻🔥
@Smoky Ribs BBQ Hey Rus! I guess I might have misunderstood you from your intro video. I thought you meant you wanted to wait until it cooled down a bit just to use it. I'm glad you didn't! You'll get a lot of mileage out of that Santa Maria. It's a fine addition. I look forward to seeing more cooks with it in the future.
All of that looks friggin awesome! I've found out recently that I love the South American flavors too. I like the more fruity flavors. It's a nice change from the standard American BBQ.
That is such a great Video, like it so much. That is real and true BBQ - excellent Job and what a Feast. I can feel the fun you have by grilling on this nice Santa Maria Grill 👍👍👍
One of your best cooks yet on video. My kinda cooking. Punch you out some holes in that shovel to get some of the ash out of it because ash will smother out the heat. Awesome job on the recipes
HEY RUS, man that was one awesome video my friend, that was some of the best looking ribs and chicken cooked on you tube to date, man the color on the ribs and chicken was amazing looking, and they were so juicy and supper tender. Rus you had my mouth watering the whole time you were cooking, and that grill is the state of the art, absolutely love it, and I could have watch another hour of you cooking ,it was that fun to watch. AWESOME JOB MY FRIEND. GOD BLESS YOU.!!!
Great video, looks like it all turned out amazing. You cant beat cooking over a open fire there is just something about it that makes it a little better.
I’m loving it! I’ve always loved to cook over fire like we did as kids camping out. A lot of fun with very tasty results

Love that Santa Maria!! Please do more videos using that setup, I’d love to get loaded up with ideas for when I order one!
Beef back ribs with an S&P rub cooked slow on a Santa Maria is amazing.
I love watching your video. I wish I was standing near you tasting the food and having some of your wife's side dishes. It is beautiful to hear you mention your family and wife. God bless you and your family. Please keep making videos. They are addicting to watch.
Thank you so much
Gotta love spatchcock chicken! I usually do mine in the smoker with charcoal and hickory chunks.
I really dig that Santa maria from Lone star grills and cant wait for some more cooks on that beast great job Russ everything turned out great
I always like to watch you do your thing. Yea, that is a lot of work but FUN! Cheers.
you've just added a whole new dimension to your cooking man, awesome stuff, looking forward to more cooks on the new grill

Wow what a killer grill Rus! Cheers man, very cool!
Great video, Rus! Will be firing up my smoker this weekend on a 13lb brisket!
Old school cooking, I like it, reminds me of the South Carolina hog cookers
That's some old school cooking right there. I think a windy location would wreak havoc on that grill.
Do you notice the banners I have in place? Wind breaks! No problems 👍
@@SmokyRibsBBQ Yes sir i sure do. Figured as much.
