Steven Raichlen Roasts a 22lb Prime Rib on the Kalamazoo Gaucho Grill

  • Barbecue and grilling expert Steven Raichlen featured the Kalamazoo Gaucho Grill on his latest television series Project Smoke. Watch as he rotisserie-roasts a beautiful 22lb prime rib over a wood fire on the Argentinian-style grill. After smoke-roasting the meat for several hours, Raichlen takes it off the spit and carves it into monster steaks. He then finishes the steak off by searing them directly on the grill grates over the wood fire.

    For those interested in this grill it's just under 30,000!!!! I was in disbelief so I searched the most expensive grill in the world. And yes you guessed right, this grill came up.

    Pretty complicated but the end result looks awesome. For those of you whom don't have a fancy spit roaster you can probably achieve 110 internal temp no problem in a parked car in Texas during the summer ;) lol.

    He said "This leaves me almost speechless." Yeah, I was thinking the same thing, but not for the same reasons. Why bother with the rotisserie if you are just going to cut steaks halfway through, then put them back on the grill only to burn them? Here he has the ultimate control in heat adjustment with a gaucho / Santa Maria grate hub, yet he doesn't seem to understand how to use it as he lets many cuts of meat catch on fire before he raises it. [face palm] This is NOT how to do prime rib. What Raichlen invented here is what I call "crime rib".

      This guy can’t cook, he clearly is an actor. Said I would never watch another video of this actor, n I did. However after seeing your post on the seasoning….. watching him season a “22 lb prime rib.” Ended it right there. No mass.
      This guy follows scripts n his script writers are not the best. Had no idea who he is as I have seen his TV shows, but this qualifies at reality TV. He ain’t for real folks. Just a spokes person.

    Great video. To me, this is like watching a guy drive a Lamborghini around a racetrack on the Isle of Man. Nobody's going to be able to do that, but surely it's entertaining. This even goes further by giving a little extra info on what you can do with a huge piece of meat.

    I'm at a loss to understand why there are any negative comments attached to this video. The final result looked amazing and scrumptious.
    He slow cooked it to perfection over a wood fire. Leaving the extra fat on is a good move too, in my view.
    He let the meat rest before cutting into it.
    He then proceeded to gave each piece of steak an excellent dual sided sear.
    He even made sure that the meat would not be overcooked at the searing stage by taking it off the spit when it was still below 110 degrees.
    The individual slices that he presented at the end of the video looked so delicious and tender. They were juicy and definitely not overcooked.

    If you think about it, when the prime rib was on the rotisserie , he was actually grilling the sides of the steaks and then grilling the steaks themselves . I think it was very clever if you have the money.

    I’m no grill master nor do I have a timeless hair style but I think that if you put some sort of binder (ie: olive oil) the seasoning wouldn’t fall off when you flip it over to season the other side.

      you don't need to be a grill master, just some common sense when cooking. the end result was extremely under-seasoned. honestly the end result looked worse than simply grilling ribeye steaks

      It is a version of a Santa Maria style grill. On the Central Coast (where this style of grill originated) we usually buy them from welders who make them from angle iron and plate.

      Yeah, Argentinian Gaucho Grills are way over priced. You can truly smoke meat with them as it’s an exposed burn. Get a Kamado for 1/10th the price and you’re good.

    This a great way to finish prime rib steaks but your fire was way to hot when you dropped in the grill, hense the blacked steaks in the top right corner of the grill. I have been doing asado in Canada and Uruguay for years and I have used this same technique many times and when done right it is exceptionally good!

    trick I use for asparagus wrap in paper towels that are wet microwave 3 to 5 minutes before you put on the grill. that way they're almost cooked and you can just finish with the smoky earthy fire

    I smoked a bone-in ribeye roast recently and the med-rare internal portions tasted a bit too much like ham. Carved some thick slices and threw them in a hot pan with some butter and addl steak rub and they came out tasting like steak but still juicy and tender. Not sure it was worth the effort, but I put the leftover roast in the fridge, then next day sliced and heat 'em up in the pan as mentioned above and the results were nearly as delicious as day 1.

      @ When I grill ribeye steak I use steak seasoning, my fav is Saltgrass steak seasoning, the results are fantastic but what do I know???

      @@srt8turboawdjeep146 I can see seasoning a lesser cut like a seven bone chuck steak. But a ribeye has such pure beef flavor, it seems sinful to use any additives. If seasoning is your thing, then more power to ya. Try melted marrow slathered on your steak next time, it ain't called god's butter for nothing!!

    Yeah, prime rib is expensive. But, have you bought a whole leg of lamb lately? Probably not. But let me tell you, the flavor is as rich as the price. Absolutely delicious. And, all natural. No feed lots, antibiotics, all grass fed. No matter how you cook it, it is tasty or more tasty than any prime rib roast you can buy. Try it with roast potatoes and asparagus. You'll love it
