I used 70% cacao for the chocolate mousse and it really stood out from the rest, really delicious mousse. The brownie is also amazing, but it had the same consistensy has the ganache when cold. Is it normal?

Yes, it is. If you want it more fluid, add the chocolate&butter at 50C 😊
Please , this beautiful cake should be eaten frozen as an ice cream , or cold from the refrigerator
