    This looks like my type of dessert!! Sooo chocolatey and delicious. Perfect timing to make for holidays. Loved the tip to use back of knife to make pattern on cocoa powdered top. Thanks for sharing the two versions as I have that yule log mold. You are very generous in sharing your passion. I’ve lost count on how many of your recipes I’ve tried and all amazing. I will be serving your xmas ornament recipe for a dinner party this weekend but did a trial run this past weekend, some with white chocolate mousse insert and some with raspberry coulis insert. Both looked so beautiful and delicious. Will impress my guests thanks to you.

    I think that I am not mistaken if I say that the real name of the cake is the Landeau cake. The person who invented or braught the cake to Lisbon is called Sophie Landeau. She started selling the cake in the "LX factory" in Alcântara. Nowadays she has expanded and she sells her cake in El Corte Inglés in Lisbon and in the Chiado area. Her cake is wonderful.

    seeing, trying, making and tasting many of these pastry recipes youve uploaded I can already taste a sample of this tiny little cake with such a thick heavy chewy yet sweet and chocolatey browney with a bitter sweet , rich and deep ganash , the light foamy fatty milky mousse and the most astoundingly bitter cocoa powder touching my pallet and making cough till i cry through my imaginary taste - gastronomical algorithm simulator already. And by the end of the imaginary taste simulation I will be dead left my last words that the Lisbon Chocolate cake is the best chocolate cake in this mother fucking world.

      Milrok Seeks i tried it to, but mine turned out bad. The vegstables og top did just sank Down in the sauce. But i still love this man

      @@katman6973 your vegetables sunk down because they were cheap supermaket veggies that usually contain way more water, and maybe your sauce was too thin
      Try it again, and try to find a market with local high quality veggies

    OMG, I can't take it anymore! That chocolate so silky, smooth, creamy and luscious, yum. I love the gelatin in the filling, makes the texture so luscious. You make it look so easy.
    Love that Ankarscrum Stand Mixer, lovely. Cost is $750 by the way folks, but way above the Kitchenaid in power and functionality. I'd love to get one.

    @Bruno Albouze Made it for my gf's Birthday. Tried to modify it and failed but still it's an awesome recipe. Bottom cake is like biscuit and top mousse feels and tastes like a good quality ice cream. I tried white chocolate for the ganache for the color and taste contrast but it turned out "soupy". It was a good experience on my part :)

      Mert Atak Yildiz there is nothin to modify about. If u do so, you will fail. Dark chocolate is not white.. and white is not chocolate but rather sugar,milk and fat. 🙃

    Dear Bruno, please tell me what kind of mixer you usez? I'm transfixed by its functionality. I own a lovely Kitchenaid but noticed the higher end pastry chefs use this one. Respondevous, s'il vous plait.
    Btw, my hubby said he now wants to learn French because he is just as fascinated as I with French patisseries plus putting his own twist on things. Any suggestions for a good book or mentor for chocolatiering?

      it was discovered and rated the best chocolate cake in the world in a Landeau coffee shop in Lisbon by Dorie Greenspan which is the Editor of the New york Times magazine for food issues. Ever since its been considered the best Chocolate cake in the world.

    Strange i dont know this one. Theres a bakery in lisbon that called a cake "the best chocolate cake in the world" but its very different. It's a 3 discs of meringue/chocolate pavlova??/chocolate dacquoise with mousse inside and ganache top. Very good but yeah.. nothing extraordinary. Ofc yours looks ten times better

      if u use halal, agar-agar or smth, u need to boil that with milk a bit to activate or smth,

    4g Gelatin Sheets =
    One packet (1 tablespoon) of powdered gelatin is equivalent to four gelatin sheets
    1 sheet = 3grams?
    how did u get 4 grams out of gelatine sheet, brake it of course.
    therefor for 4 grams sheet I need little less then 1.5 tsp of granulated/powder
    scaling. 1 (0.25 oz.) envelope granulated gelatin = 1 tablespoon [(15 ml)] powdered gelatin = 3 sheets leaf gelatin. and so
    one sheet of leaf gelatin would correspond to ~1 teaspoon (5 ml) of powdered gelatin.
