I tried the recipe except I used olive oil instead of butter and half honey and half molasses instead of just honey. I also used a stand mixer rather than by hand. In 15 minutes on low/medium speed my dough easily had enough gluten development. I’m impressed with how it came out. It’s flavor and texture is wonderful and it’s actually 100% whole grain which is quite rare. I was tired of store bought breads saying whole grain but being half white flour

My bread turned out soft in the inside and toasty on the outside. My mom , who is usually sceptical of my attempts at baking, was delighted at my success. I have tried this recipe (using whole wheat flour) and was getting dense bread which was not rising. On 18th June, I tried again using the variation of 257g Whole Wheat Flour and 100g All Purpose Flour (maida), and this time it came out perfect. The loaf rose to form a proper dome, rose outside the pan (earlier, it did not clear the pan), got baked perfectly well, and after cooling, was very soft. Tried again on 19th June, with the same result. Thank you very much Bincy. Your recipes, if the quantities and ingredients are followed, come out as you have shown. Will try your other recipes too.
This is genuinely the best recipe I’ve found for whole wheat bread. I’ve made in 4 times and each loaf was a 10/10. I used cheap No Name flour and it was still awesome. I agree that a full 10 minutes of kneading followed by a window pane test is necessary.

I've been struggling with making a decent bread and this tutorial worked wonders. I added 100g all purpose flour since I wanted a softer bread. Controlling the temptation to add flour while kneading helped a lot in getting a good loaf! Thank you so much for this. This is a keeper recipe

Happy to see many tried out users :) . I wanted to reply back after trying. Took little longer. But tried yesterday (My Grade 1(First standard) kid wanted to make sandwich for her cookery session online class). She didnt want me to buy bread from outside :). So, I had backup plan as white bread (master of it now). I used 257gm wheat (Aashirwad atta - 1kg pack costed more but wanted to try out the best) +100 gm all purpose flour. Used the hand blender with knead attachment :) . Everything went perfectly. Only thing I felt (kid/wife didnt fee that though) is the height was little less compared to White bread (may be because maida makes more gluten than wheat). It was so soft and fluffy :) Thank You so much Bincy for the recipe & am glad that it was useful for many. I'll be trying with the whole wheat again and will update :) . Sorry for trying out late
Dear Bincy, I went through your blog and followed some instructions written der!! I tried this bread recipe with wheat flour aashirrwad atta (257gm) and (100gm) Maida!! The bread turned out to be really good!! I added a water little extra than what was specified in the recipe. I did knead the dough for a little longer and kept the bread in the microwave for 40 mins for my oven setting !! Overall happy with the outcome as the bread tasted super amazing!! I made this yesterday and for the first time, I can eat homemade whole-wheat bread. Great recipe! I used Gold Medal Whole wheat flour from Walmart and canola oil instead of butter, with no salt in place of the salt. we made sandwiches with it and they were perfectly soft and delicious. One thing I did after kneading 12 minutes, was I couldn't do a window pane test. The dough didn't seem to have any give to it at all. So what I did was I covered the dough on the countertop with a bowl for 10 minutes and came back and tried the window pane test again and the dough was nice and stretchy and flexible. I'm not sure if maybe I had old flour as I don't make many whole wheat breads. But I was very pleased with the results of the bread. it's almost all gone. I guess I will have to make more whole wheat Bread tomorrow (clapping hands)👏👏👏👏❤🧡💛💚💙💓💗 thank you Bincy for such a great recipe!!!!
Thank you for stating the flour brand that you used. Yes, the membrane/window pane test has not happened for me consistently. I have dough on its first proofing using King Arthur whole wheat flour only, NO all-purpose mixed in at all.

Oh hi bincy can we use wheat gluten in whole wheat flour to increase the gluten, if so wen shd I add the gluten. Secondly why does my dough not rise at the final proofing n also while baking the bread doesn't rise much. Thirdly how shd the wheat flour texture be soft or coarse for bread making. I hv gone thru ur blog thanks for the tips. Thanks in advance.

Perfection! I have been trying for the longest time to have a perfect loaf without success...with your recipe I was able to do the perfect loaf, fluffy, light and delicious! Thank you very, very much for this recipe! I added four different seeds and much less honey, still came out perfect! And by the way, I only used Atta Whole Wheat Flour to do it.

Look no further guys, this is hands down the best whole-wheat bread I’ve ever had and I didn’t like wheat bread at all. I tried her white bread recipe just as she posted and for the first time in my life I have made the perfect bread. This recipe is amazing. I made this today and one third of the loaf is already gone😅 It's very soft, moist and fluffy. I used olive oil instead of butter in the dough and it gave a nice subtle flavor which both me and my husband liked. I'll be definitely trying more of your recipes. The first time I made this bread I used active dry yeast instead of instant dry yeast and the bread did nor rise as much as it should have. The security time I used instant yeast and I use my bread maker’s dough cycle and I got a fantastic result 🥰👍🏼
Here in Mumbai, we do not get the wholewheat that u use. We get aashirwad or such other flours. Or I grind the wheat at local flour mill. Can that aata be used? Will it give the same results as yours?
So I just made this, and it was perfect. My bread tin was wider and flatter (not sure where the heck it came from) so the shape a bit different. I added 1 tbsp of sugar not 2, and half almond milk and half water, and 2 cups whole wheat bread flour and 3/4 AP flour. I also placed a cup of water in the oven. These were the only changes made 🙏🏻 10/10

Made this and made 2 batches, one is plain and I added chocolate chips on the second one. Very yummy and soft ❤ I changed water to milk too 😊

I made this yesterday and for the first time, I can eat homemade whole-wheat bread. Great recipe! I used Gold Medal Whole wheat flour from Walmart and canola oil instead of butter, with no salt in place of the salt. we made sandwiches with it and they were perfectly soft and delicious. One thing I did after kneading 12 minutes, was I couldn't do a window pane test. The dough didn't seem to have any give to it at all. So what I did was I covered the dough on the countertop with a bowl for 10 minutes and came back and tried the window pane test again and the dough was nice and stretchy and flexible. I'm not sure if maybe I had old flour as I don't make many whole wheat breads. But I was very pleased with the results of the bread. it's almost all gone. I guess I will have to make more whole wheat Bread tomorrow (clapping hands)👏👏👏👏❤🧡💛💚💙💓💗 thank you Bincy for such a great recipe!!!!
Thank you for stating the flour brand that you used. Yes, the membrane/window pane test has not happened for me consistently. I have dough on its first proofing using King Arthur whole wheat flour only, NO all-purpose mixed in at all.

Made this beautiful bread today! Best recipe ever! I use high protein bread flour and replace 20gm with wheat bran. Soft ,fluffy and delicious on its own.

I have made this today and truly it is the best whole wheat bread recipe I've ever made. I needed to add some more water but all the other measurements were just right and for the first time my loaf didn't have a hollow inside it. Thank you

Oh hi bincy can we use wheat gluten in whole wheat flour to increase the gluten, if so wen shd I add the gluten. Secondly why does my dough not rise at the final proofing n also while baking the bread doesn't rise much. Thirdly how shd the wheat flour texture be soft or coarse for bread making. I hv gone thru ur blog thanks for the tips. Thanks in advance.

I'm so impressed that you used 100% whole wheat, didn't know that was possible. I will have to experiment with that. Currently i make your white bread recipe but substitute some flour (about half a cup or a cup) for wheat and it comes out good. Thanks

Perfection! I have been trying for the longest time to have a perfect loaf without success...with your recipe I was able to do the perfect loaf, fluffy, light and delicious! Thank you very, very much for this recipe! I added four different seeds and much less honey, still came out perfect! And by the way, I only used Atta Whole Wheat Flour to do it.

Look no further guys, this is hands down the best whole-wheat bread I’ve ever had and I didn’t like wheat bread at all. I tried her white bread recipe just as she posted and for the first time in my life I have made the perfect bread. Out of curiosity I decided to try the whole wheat and I can’t believe my taste buds the whole wheat is the best tasting bread have ever had. Totally worth it. This recipe is amazing. I made this today and one third of the loaf is already gone😅 It's very soft, moist and fluffy. I used olive oil instead of butter in the dough and it gave a nice subtle flavor which both me and my husband liked. I'll be definitely trying more of your recipes. All the best

The first time I made this bread I used active dry yeast instead of instant dry yeast and the bread did nor rise as much as it should have. The security time I used instant yeast and I use my bread maker’s dough cycle and I got a fantastic result 🥰👍🏼
Here in Mumbai, we do not get the wholewheat that u use. We get aashirwad or such other flours. Or I grind the wheat at local flour mill. Can that aata be used? Will it give the same results as yours?
So I just made this, and it was perfect. My bread tin was wider and flatter (not sure where the heck it came from) so the shape a bit different. I added 1 tbsp of sugar not 2, and half almond milk and half water, and 2 cups whole wheat bread flour and 3/4 AP flour. I also placed a cup of water in the oven. These were the only changes made 🙏🏻
