    Interesting question at the end. I'll take a crack at it. Perhaps it depends on where in the "log" you are as the tip will be grabbing different grain orientations as it passes through the log? On a cross cut for example, near the top of the log you are essentially cutting face grain and as you approach the middle of the log you are cutting side grain (basically a flat sawn vs. quarter sawn situation). As such, perhaps on the top of the log the side is cutting and near the middle the top is cutting. During angled cuts, such as the top cut of a conventional notch, perhaps both are cutting.
