    There are 3 possible reasons why your pancakes are not fluffy or shrink.
    - Your meringue was not whipped enough.
    - You mixed the egg yolk mixture and meringue too much, so your meringue bubbles were broken and you lost some of the fluffiness.
    - Baking temperature was too high, or you cooked the pancakes too long and they were over-baked.
    I've also practiced many times. It's a bit difficult to bake a perfect one, but I hope you enjoy baking!:)

      I turn the bowl with the meringue upside down it was finished but when i added meringue it just got loser

      Made it today! I was absolutely wonderful!! You can also substitute out lemon juice with a scant ¼ teaspoon of baking powder! One final note: the pancakes will rise better and be fluffier if you use cake flour instead of bread/A.P. flour!

    I tried this out today and they came out literally AMAZING. I have been looking for soufflé pancake recipes for a while now and couldn’t seem to find any that worked because my pancakes would always be deflated. This is the first time that my pancakes have actually rised and they taste awesome too. This is definitely going to be my go to recipe for soufflés.

    I've just done this! it wasn't as big as yours, but the texture was definitely fluffy, it felt like eating a cloud, it was absolutely delicious. a great breakfast to start the day 😌

      @@INDYASSA I don’t have an electric cooker, would a cast iron pan be good for cooking the pancakes on? I believe they keep a constant temperature.

    Fantastic! I made this today for my son and he LOVED them!!! I had enough ingredients for one batch so as he finished his last bite…
    I watched him waiting for a reaction but before I could even ask,
    “What do you think?”
    His eyes met mine and with a very serious look he asked,
    “What do we need from the store!?!?”
    He turned on his heels and nearly ran out the door as he fished the car keys from his pocket and was out the door before I could tell him…”Get more eggs ands sugar!” 🤣
    Thank you! I’ve wanted to try these fluffy, creamy, delicious soufflé pancakes 🥞 for a very long time! The recipe instructions were so thorough and precise that my first batch was near perfect! My second batch rose significantly higher and I believe it was because I utilized a piping bag on the second bath.

    I think I must have watched half a dozen TH-cam videos with various recipes of souffle pancakes before settling on this one. Your video/tutorial is very well done and as a result, my pancakes actually turned out surprisingly well!     Q. Can I omit baking powder?
    A. Yes, but it will rise less so make sure to whip your meringue well.
    Q. Can I bake with gluten-free flour?
    A. Yes, but I haven't tried baking with all gluten-free flour so the result might be slightly different depending on the flour you use.
    Q. Can I omit milk?
    A. If you add flour directly to egg yolks, it might me lumpy so I recommend adding dairy-free milk.
    Q. How many pancakes for this recipe?
    A. For 2-3pancakes for one person.
    Q. Do I need to add lemon juice?
    A. This is optional but lemon juice helps meringue be stable so I recommend adding it if you have it.
    Q. Can I replace the white sugar with alternative sugars?
    A. You can, however the egg whites don’t whip as well, so I recommend the white sugar for best results.
    Q. Can I skip the sugar ?
    A. You can, however the sugar helps the meringue stable and fluffy, so your pancakes might be less fluffy or shrink quickly.
    Q. Do I need a hand mixer?
    A. You can whip with a whisk by hand, but make sure to whisk until a stiff meringue forms.
    Q. Cake flour or All purpose flour?
    A. Both works well:)

    I'm going to try these this weekend. Very clear instructions, good pacing, no distracting music. But, don't refrigerate your whites after separating the eggs. Egg whites achieve more volume in less time when *not* cold. But, if there was no planning ahead, one of the ways to warm the whites a little: Nest the bowl/container holding the whites into a larger bowl which has previously been filled with very hot water. Prep other things & come back to it. Volume 😃

    Fantastic video! I've been making my own variation of these for a few years, but I'm going to try your version tomorrow. I do like butter and really dislike vegetable oil from a health standpoint, so I may try fortified butter / ghee. I'm also curious to try these with a bit of ricotta cheese, but I'm definitely going to try your recipe first as these look truly delicious! Arigatōgozaimashita.

      How about use avocado oil on the griddle, then just before you pour the pancake mix, dab the area with a stick of butter? As long as you have a visible amount of avocado oil where you dab with butter, it should keep the butter from burning.

    I made these this morning and they were delicious. This is the most helpful video out of the couple I watched. It took me a minute to get the hang of it but once I did wonderful. I don’t think I’m gonna go back to regular pancakes again.

    Thank you, I made it and it was very good. 😊 I like to make it again. I made the syrup in a persian way though. Boiling some sugar with some water and when it became like a syrup I added one spoon of rosewater and one drop of cardamom extract, in Iran we usually add some saffron powder too. Instead of cardamom extract, some cardamom powder can be used too. It tastes so good as if it came from heaven. It went so well with these beautiful pancakes.

    I tried your recipe for first time and I did as you said exactly but I added more 1tbsb of milk and half tbsp of flour and I added a drop of vinegar on milk💗
    It turned out amazing like a cloud but
    on a plate I loved it so much❤

    Step 1: be positive and feel happy to cook
    Step 2 : prepare everything before cooking
    Step 3 : dont heat the flame of the gas too much, incase you don't have electric gas
    Step 4 : don't overcook the pancake so then you can have more fluffy ness

    Took me 4 tries but I finally got them right! For me the struggle was getting the temperature and timing just right. I made them on the stove top on setting number 6. 3.5 minutes one side then flip for 3 minutes. Perfection!

    Excellent recipe. Having the zojirushi cooker helps a lot..they turned out really well. It takes a lot of practice though to make them look as nice as yours. Flipping wasn't easy for me!

    We were a very large family and did not alway have syrup so Daddy sifted confectioners sugar on them and used fresh lemon juice !!!!!! Still a favorite today !!!! 😊❤️😊❤️😊

    Great Recipe
    Although mine wasn't as tall as yours, it was super fluffy and tasty.
    The only flaw i could see in mine is the fact maybe i didnt whip the merigue enough despite it not falling when flipping the bowl, and my pan being sticky.

    I just made this recipe. They were fluffy and sweet. I wanted to add less sugar, but then I wonder if the texture of the meringue would change so much that they wouldn't be fluffy enough. 🥰
