Carne Guisada is a favorite of mine. I love to see the traditional cooking methods and recipes kept alive. Thank you for sharing. I always cook using old school traditional recipes and methods I have learned along the way these past 60 years. I don't own a microwave, a teflon pan, or an oven. I always cook with live fire either grilled, smoked, or in cast iron except for the water I boil for coffee. Everything tastes so much better this way and nothing comes from a can.

I've been a chef for over ten years and our cuisine is very similar to South American and Midwestern cuisine!
This is a kind of carne guisada I'm unfamiliar with, usually my parents use a chuck roast or an large piece of pork or beef, and cook it with some onions and leaving to steam in a pot with tomato base or sauce to form a stew at the bottom and stirring it every so often so it wouldn't stick to the bottom, although this version looks amazing to try out one day, have a wonderful week Kent
yeah me too. I have been making carne guisada for about 45 years. I think it depends on which region you might been influenced by younger. I grew up in South Texas and love mainland style, tex mex, sonoran, all of it. Im sure your parents dish was amazing as i am sure Kent's is.
I can honestly say I've never heard of carne guisada, but if Kent Rollings is gonna make it it's gonna be gooo,ood ..... I also learned the primary function of a cowboy hat is for balance. No matter how far his body sways to the right or left, his head always stays level.

Dear Kent & Shannon, I don't know if you have time to sharpen your own knives but I gave up trying to sharpen with a stone or grinder. I bought a Lansky Diamond sharpening kit for $80 and have never had such sharp blades.From the paring knife to the chef's knife, incredible accuracy and edge! I keep them sharp via a wooden backed leather strop. Thanks for being you Kent!

I used to live in this small town in Texas growing up and there was little Mexican food stand owned by this nice lady. It wasnt much bigger than a tool shed . You walked up to the window got what you wanted then ate wherever you wanted. Let me tell you everyone in town loved to stop by there and grab food. Me and my buddy would just sit under a nearby tree and eat our fill.........anyway without a doubt my most favorite thing to get was her Carne Guisada , I got it at least 80 percent of the time. She would put it on flour tortilla like you did. I used to go out to Mexican restuarants but they only had the Asada version ( which I like too) but I crave for the Guisada. Im gonna have to make this and go down nostalgia lane.

The best carne asada burritos I have ever had come from the northwest corner of Mexico--Ensenada, Tijuana area--and into San Diego / Escondido in the US from families who have crossed the border. They are filled with carne asada, avocado, and pico de gallo filling only, and usually served with carrots and peppers escabeche on the side. Hard to find with exactly the same ingredients and flavors elsewhere, but my first choice for lunch or dinner when I'm in that region.
Reminds me of the carne guisada my wife and I enjoyed when I was stationed at Kelly AFB, San Antonio, Texas from 1980-1990. Little place called Gema's was the best!

This dish has so many versions as households are in Mexico. But here you pretty much nailed it. I can tell you, “bistec a la mexicana” is more accurate than “carne guisada”. Spread some refried beans and/or mexican red rice in your taco and you’re good. Just simple, hearty comfort mexican food. Happy new year everyone!

Salsa verde (green tomatillo sauce) works great with pork in green chili sauce but for the beef guisado, my Grandmother and Mother used to make it the same way and I make it just the way you do but I like lots of garlic...the poblanos give it that special unique Mex. braised flavor. It's wonderful how food can bring back such vivid memories of our departed loved ones.. not just visually but you can almost smell it. We all know that a lot of Mexicans criticize your videos because maybe it's not 100% authentic but then again even in Mexico every state/region has a slight variation of a dish and besides, in Texas Arizona and New Mexico, Mexican style food is different but this dish is like right on.
I've been wanting to try this out since you posted the video, finally got around to doing it tonight. We're sitting at about -26° round these parts, but I still went out and fired up the charcoal kettle for the sake of flame grilling the peppers and tomatoes. SO glad I did, that smokey flavour adds so much. Killer recipe all around Kent, as usual. This is definitely going to make it's way into our regular rotation. Thank you very much for all that you do and all the knowledge you pass on.
