CARNE GUISADA / TEX-MEX STYLE / How to make Mexican beef stew

    CARNE GUISADA (cooked beef stew ) TEX- MEX STYLE is a dish I grew up with, It's chunky pieces of beef simmered in a delicious brown gravy loaded with flavor until falling apart tender. The spices of cumin, garlic, peppercorns and onions are a few of the must have ingredients. It is a simple dish to prepare. This dish brings back many memories of my childhood, we looked forward to the day my mom served it, I love siding it with refried beans, mexican rice or mashed potatoes and flour tortillas on the side, I smear some refried beans in the tortilla then fill it with CARNE GUISADA giving me the most amazing delicious messy taco. For an added kick I love a couple of spoonfuls of molcajete salsa to top it. CARNE GUISADA is a dish that will always satisfy.
    INGREDIENTS
    3 LB. Chuck pot roast (not shoulder roast) chuck roast is the only one I like)
    2-3 Tbsp vegetable oil divided (extra if needed)
    1 medium onion (chopped)
    2 green onions (white and green)
    3/4 med/lrg green Bell pepper (diced)
    1/4 yellow Bell pepper (diced)
    1 & 1/4 tsp whole cumin (molcajete crushed)
    3/4 - tsp peppercorns
    3 Lrg Garlic cloves
    2 Tbsp All purpose flour
    2 Lrg Roma tomatoes
    1 & 1/2 tsp Chili powder (I used Gebhardts)
    1 Tbsp tomato paste
    2 & 1/2 tsp Chicken bouillon
    Salt to your liking (I used 1 tsp)
    2 &1/2 C. water (you decide
    ● searing will caramelize your meat
    ● sear quickly until golden brown and set aside
    ● cook for 1 and 1/2 - 2 hours for falling apart tender

      Being From San Antonio I prefer Tex-Mex over Mexican Food..

      @@larrysolis6952 being a Mexican from California, Tex-mex is not my fave. But I’m sure you’re aware of this friendly debate (rivalry😆).
      Actually I’m very fascinated by Tex-mex. By it’s history. One can learn a lot about world history just learning about all the various cuisines. Tell me, how authentic is this as far as Tex-mex goes? One thing I like about Tex-mex, which is really a fusion type of cuisine, is the wiggle room. There is a lot of room for growth and evolution.

    Sometimes I think, I'm so glad I'm Hispanic (Tex-Mex) I have the best of both worlds. I love my burgers, chicken fried steaks etc, but my heart always belongs to tortillas, rice and beans, etc!

      Anyone using a molcajete could keep some chicken broth frozen in the freezer instead of using bullion. Now I'm not trying to trash anyone if that sounds to harsh. Just a simple statement. I save lots of pint size jars from different items mayo, mustard, pickles, etc... So anytime I boil chicken I always save as much broth as i can. It will last for months and months in the freezer.

      I was given one back in the 70's and never used it until the 90's...now I use it for everything. I'm Anglo, and no one in my family knew what it was.😂😂❤❤

      My loves my guisados, chile colorado, chile verde, chicharron con chile, mole & etc. He loves how I do my rice and frijoles refritos. Las tortillas de harina and salsa de molcajete. 😋
      I just made myself hungry. 😅😂

      I would respectfully disagree with you Amigo, if you're ever in San Antonio go to Nichas on the Southside on roosevelt street, their carne guisada is delicioso, served with beans and potatoes real Tex-Mex style...mmmm

    I made this recipe last night for my son and my husband. I made this your salsa and tortillas, too! They loved it so much! I grew up in San Antonio and have lived in the Boston area for over 20 years. I've never seen carne guisada on a menu in all the Mexican restaurants we've been to. I'm so happy I found your channel. I think this recipe is better than the Blanco Cafe's carne guisada!

    I’ve not perfected it to her and my beautiful Mama’s standards.
    As a misplaced Texan (We moved to Tennessee when I turned 13), this is what I call the best of home cooking. No restaurant here, at least none I’ve found) have this on the menu.

    Making carne guisada now. It smells so good. My husband is from Morelia Michoacan. He loves my cooking. I've learned a lot of dishes from Mexico in the 38 years we've been together. I'm making 5 and half pounds of meat today. Smells fabulous in here.

    From Rio Grande Valley, TX. Perfect. Made it the same way many times. Love , love them. Make it for breakfast with flour tortillas when camping with extended family. We love the hill country, tubing down the river. So glad you make them Tex Mex and not Californian.

    As you made this dish amiga I was smelling it in my mind as we know the smell of carne guisada so very well. Beautiful version of making it and you can tell how authentic it tastes. I know you're like me especially when it comes to these dishes as we try to replicate our favorite meals growing up made by our mamas. Believe or not this is one of Johnny's favorite meals so when I make carne guisada, I actually have to increase liquid and adjust amounts of spices so that I can take out gravy for his soy carne. Another homeroom my dear Rachel and thank you for always making my day with your recipes and always making my heart smile. You and Ron have a fantastic rest of your week.

    I just found your videos and I am SOOOO HAPPY! I have spent the last 4 hours with my face in my computer watching a few of your videos. These recipes are exactly how my Grandmother would cook. I've done pretty good being able to come close to her foods but after watching your videos I've noticed little things that I didn't know about that I'm willing to bet will make all the difference.     Ohhhhh looks so good, can’t wait to make it… Today I made Rachael’s beef enchiladas, and never ever will I use the canned sauce, her directions were so easily understand and that sauce is wonderfullllllllll, yumm yumm. I made 10 enchiladas 5 for me and 5 for my Mexican friend on the block, she told me mine were even better than her mothers. I’m anxious to try this recipe and others, sure wish my deceased hubby was here to enjoy them with me. Rachel you need to publish a cook book. What a teacher you are my dear.

    Oh my, that looks delicious. Carne guisada, one of my favorite dishes to cook and eat, sometimes, I add potatoes to mine, just because all that goodness of spices makes the papaitas taste so good.

      @@bonniemcgraw4596 Add potatoes 🥔 when your adding the chicken bouillon and water. Towards the last 20 minutes of cooking time. Basically, when the gravy is still watery. 👌

    Cooked this about 4 times now. Everytime it comes out better! Love love love how you teach. I make my flour water in a jar with a lid. Never lumpy, very smooth and shaking in is easier for me...

      I don’t use beef bouillon because even though the flavor is delicious and I use it in other dishes, I think it changes the flavor more than I want it to. ❤️

    That looks so good, adding water to the molcajete after grinding the garlic is a great idea. It will distribute the garlic flavor better thx for showing me that

    When i lived in San Antonio my sister in law made this and i loved it .. I moved up to Illinois years later and asked alot of mexican restaurants if they had this and they acted like they didnt know what it was .. asking me if i meant Carne Asada ...glad to see this recipe and video thanks alot

    Nothing better than a homemade flour tortilla with Carne Guisada. I lived in Corpus Christi for almost 30 years. All the little mom and pop places sold Carne Guisada tacos for breakfast. I never noticed any bell pepper or tomato in any of them. The meat was falling apart tender so maybe the veggies had broken down in the gravy. I will try your recipe.

    So I recently retired and over the past 2 years I've slowed it down alot . I decided I wanted to try my hand at cooking . Mostly mexican food stuff . So I started watching some of these ladies and I have 3 favorites . Rachel of course has become my go to lady . The way she can keep clean is just amazing , I look like a bulldozer came thru our kitchen when I'm done . But have really turned out some tastey stuff.     Looks delicious! Will give this recipe a try. I made something similar once, spiced up a Mississippi pot roast recipe with cumin and coriander, came out good, used banana peppers but suppose you could use a combination of bell and hot peppers. Yes, chuck roast is the best for stews!
