I answered your question thinking this video was actually the video below where I took some picanha that was cooked to rare and added lime juice to the meat to keep it tender and gently cook the meat to a med-rare. To answer your question on marinating the carne-asada with lime and it “cooking” the answer is no. The way acid “cooks” proteins is different from how we use heat to cook. Heat will overcook protein in a way that will end up removing all its moisture and you end up with a dried up meat. Acid can break down enzymes that can tenderize proteins. A good example is when using heat to cook shrimp the temperature causes the shrimp to turn pink.
