The Best Vietnamese Soup - The Kings Soup / BBH Recipe

- Bun Bo Hue is a truly special dish. This was the first thing I ate when I moved to Vietnam. Not only do I think Bun Bo is the best Vietnamese soup, I think it is one of the best soups in the world. Filled with deep and bright flavors and so many contrasting textures, there is nothing like it. Although not the easiest thing to make, you can absolutely make an authentic bowl at home.
This broth recipe starts with the finished beef and pork broth. This recipe is based off of a 5qt batch but can easily adjusted to whatever size you make. Although this is probably the smallest batch size i would make as it last in the fridge for 5 days and freezes very well.
Beef Broth 5 qts (4.7 liters)
Mam Ruoc 50 g (6 tbsp)
Pinepple 0.5 pcs
Lemongrass 6 pcs
Sate 70 g (1/4 cup)
Fish sauce 115 g (1/2 cup)
Sugar 35 g (2.5 tbsp)
Salt 30 g (1.5 Tbsp)
MSG 12 g (1.5 tsp)
This is just a guideline, as always taste it often and trust your palate. If you want more sugar add it, less salt reduce it. If the pineapple flavor is good remove it from the broth. Trust your tongue.
Mam Ruoc is sometimes a very thick paste and sometimes pourable. This recipe is based off the thicker variety so if yours is softer you will need more.
Make sure you use Mắm Ruốc not Mắm Tôm. Mắm Tôm is bright purple

You sir are a king. Watched a ton of foreign TH-camrs who live in VN. Most of them are just trying too hard to fit into VN culture including the big names, but you sir, you dive into the culture, at least in food culture. Not so many foreigners can enjoy Bun bo Hue or even cook it (most of the VNese can't cook the dish). You're one of the best out there. Keep doing what you're doing, don't chase for the views, be yourself and you will blow up, Mark my words

I agree! Most foreign chefs who try to recreate our Vietnamese authentic soup recipes tend to intentionally or unintentionally "westerinize" it in some ways. And whilst there's nothing wrong with that since culinary is a fluid art, but the food would not be 'authentic' anymore.
But this channel shows Chad's comprehensive understanding of Vietnamese cuisine and his genuine appreciation for the food as it is, which is so heartwarming to watch as a local.
I especially love how Chad even washes his vegetable squatting down on the ground, on a concrete slab with a (probably) wonky faucet 😂😂 Can't get anymore 'local' than that!

Saw your TikTok asking about Bun Bo places in Saigon. Couldn’t really think of any that stood out; however if you want some excellent coffee, there was a cafe around the corner from my old place in Phu Nhuan (might be a bit of a travel for you - though PN does have quite a few good food shops. Cafe was always packed day and night. Name is Cafe Vợt Đình Phùng.

Right now, it's like 3 AM where I'm at. In like 5 hrs I'm gonna go get me 2 portions of this soup, & 1 portion of Bun rieu to go. Talking about BBH, I remember one time my mom made this soup and I used Japanese noodles instead....and it turned out good. I put a ton of white onion, shrimp paste, and bean sprout

I like your channel, positive. Also you're right, many people know about pho but many foreigners don't know about bun bo hue, which is also one of my favorite soup. It's really rich and beefy. Most of the time the soup is red. Delicious, but you have to have the vietnamese shrimp paste. I'm vietnamese who live in Canada, you can make it cuz you can buy all ingredients in asian market except the 2 veggies he mentionned, I recommend substitute them with other stuff if you don't want a headache.

Bun bo hue taste so much better than pho, it is not as known since there are so many pho places in the US and also because people aren't used to eating blood cake and pig hocks well at least in Texas, but in California they sell it with everything.😂

Not Every Vietnamese can eat blood cake in Bun Bo Hue, it's an optional, not a must-have. Many vietnamese vendors and restaurants sell Bun Bo Hue without blood cake.

I have some trauma with Bun Bo Hue as a kid, too long to remember the detail, but enough for me to not try Bun Bo Hue for decades. But now thinking back, I start to think myself to be unreasonable, and willing to try it again. Your video really help to reignite my interest for Bun Bo Hue again.

For the beef shank, once you cut them, just but them in a bowl with a spoon of fish sauce and a spoon of satay and mix them up. This will bring out more flavor.
Phở and Bún bò Huế are kings of noodle soup in Vietnam, you can try "Bún giả cầy" and "Bún mắm" also the best
